BROWNIE CHEESECAKE SWIRL BITES

For the Cheesecake Layer:
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/3 cup plus 2 Tbsp. granulated sugar
1 Tbsp. BREAKSTONE'S or KNUDSEN Sour Cream, at room temperature
1 Tbsp. heavy whipping cream, at room termpature
1 egg, at room temperature
For the Brownie Layer:
1 cup semi-sweet chocolate chips
1/2 cup (1 stick) butter
1-1/4 cups sugar
1 tsp. vanilla
3 eggs, at room temperature
1 cup all-purpose flour
3 Tbsp. BAKER'S 100% Pure Cocoa Powder
1/2 tsp. salt

Steps:

  • Preheat the oven to 350°F.
  • Line 36 mini muffin pan cups with mini cupcake liners and set aside.
  • Cheesecake Batter
  • With a standing or hand-held mixer, whip the cream cheese for about 1 minute until light and fluffy. Add the sugar and whip for another minute.
  • Mix in the sour cream and heavy cream until well incorporated. Add the egg and mix until just combined. Set aside.
  • Brownie Batter
  • Place the chocolate chips and butter in a microwave-safe bowl. Melt on HIGH power in the microwave for 30-second intervals until the chips are fully melted, stirring every 30 seconds.
  • Mix the sugar and vanilla into the butter/chocolate mixture, and then add eggs, one at a time, beating after each addition.
  • Fold in the flour, cocoa powder and salt until everything is well incorporated.
  • To assemble the brownie cheesecake bites, pour the brownie batter into the mini muffin cups, filling each cup about 2/3 full.
  • Then, top each cup with the cheesecake batter, filling each muffin pan cup almost to the top. Swirl the brownie and cheesecake batters together with a toothpick or wooden skewer.
  • Bake for about 15 minutes, or until tops of the cheesecakes are set.
  • Cool the cheesecakes in the muffin pan cups for 5 minutes before removing them from the pan to wire racks to cool.
  • Serve warm or chilled.

1/2 cup chopped lightly salted dry roasted peanuts, divided
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
3/4 cup creamy peanut butter, divided
2 Tbsp. sugar
2 Tbsp. milk
1 egg yolk
1 container (16 oz.) ready-to-spread chocolate frosting

Steps:

  • Heat oven to 350°F.
  • Prepare brownie batter as directed on package; stir in 1/4 cup nuts. Pour into 13x9-inch pan sprayed with cooking spray. Beat cream cheese, 1/4 cup peanut butter, sugar, milk and egg yolk in bowl with mixer until blended. Spoon mixture evenly over brownie batter.
  • Bake 25 to 30 min. or until toothpick inserted in center comes out with fudgy crumbs. Cool completely in pan.
  • Blend frosting and remaining peanut butter in bowl. Spread over cooled brownies; sprinkle with remaining nuts.

½ cup brown sugar
½ cup butter
⅔ cup dark chocolate, chopped
2 eggs
2 tablespoons plain flour
¾ cup McVitie's Milk Chocolate Nibble, 1 bag
2 ⅔ cups cream cheese
⅔ cup sugar
2 eggs
1 tablespoon vanilla extract
¾ cup McVitie's Milk Chocolate Nibble, 1 bag

Steps:

  • Preheat the oven to 160°C (325°F).
  • Melt the sugar and butter together in a pan on a low-medium heat.
  • Turn off the heat and stir in the chocolate until melted.
  • Stir in the eggs and then the flour.
  • Stir in a bag of McVitie's Nibbles.
  • Pour the mixture into a 20 cm (8-inch) square brownie tray and bake for 10-15 minutes until the top is just beginning to set.
  • While these are cooking, make the cheesecake topping. Whisk together the cream cheese and sugar.
  • Whisk in the eggs and vanilla extract.
  • Pour this mixture on top of the part-baked brownies.
  • Top with another bag of McVitie's Nibbles. Bake for another 30-35 minutes.
  • Allow to cool in the fridge for at least 2 hours, then chop into bites.

6 cups Cocoa Puffs™ brownie crunch cereal
1/2 cup butter, melted
2 packages (8 oz each) cream cheese, softened
2 eggs
1/2 cup sugar
1 teaspoon vanilla
Sliced fresh strawberries, if desired

Steps:

  • Heat oven to 350°F. Place cereal in resealable food-storage plastic bag; seal bag and finely crush with rolling pin or meat mallet (or finely crush in food processor). In large bowl, mix crushed cereal and melted butter. Press mixture in 13x9-inch pan.
  • In large bowl, beat cream cheese, eggs, sugar and vanilla with electric mixer on medium speed until smooth. Spread over crust.
  • Bake 20 to 25 minutes or just until set. Cool completely in pan on cooling rack, about 1 hour. Cut into 6 rows by 4 rows. Garnish bars with sliced strawberries. Store covered in refrigerator.

A from-scratch recipe containing the loved combination of brownies and cheesecake goodness. Mmm...mmmm...mmmm. Like my Dad would say... it'll knock yer lips right off! Original recipe was from the Eagle Brand Milk site, but I've converted this to use a scratch brownie recipe and a different cream cheese topping. Enjoy!!

BROWNIE LAYER
1 c butter, melted
2 c sugar
2 tsp vanilla
4 eggs
1 c flour
3/4 c cocoa
1/2 tsp baking powder
optional: may add 1 cup chopped nuts; may add 1/4 tsp salt
CREAM CHEESE LAYER
2 pkg cream cheese, softened (2-8oz pkgs)
3/4 c sugar
2 1/2 tsp vanilla
1 Tbsp flour
3 eggs

Steps:

  • 1. Preheat oven to 350. Line 9x13 inch baking pan with foil; spray foil with non-stick baking spray.
  • 2. Combine brownie ingredients by mixing the butter, sugar and vanilla well; add eggs and mix. Add flour, cocoa and baking powder, mixing until combined. If desired, you may add salt and/or nuts. Pour brownie mix into prepared pan.
  • 3. Combine cheesecake ingredients by mixing softened cream cheese, sugar and vanilla. Add in flour and eggs. Mix well and pour evenly over brownies.
  • 4. Bake for about 40-45 minutes until slightly browned and toothpick inserted comes out clean. Cool completely, about 1 hour, and then refrigerate for at least 2-3 hours until thoroughly chilled. You can remove from the pan by lifting the edges of the foil; cut into bars or triangles. May opt to drizzle with chocolate syrup as a pretty garnish. Keep refrigerated in a sealed container.
