1 bone-in turkey breast (6 to 7 pounds)
4 fresh rosemary sprigs
4 garlic cloves, peeled
1/2 cup water
1 tablespoon brown sugar
1/2 teaspoon coarsely ground pepper
1/4 teaspoon salt

Steps:

  • Place turkey breast, rosemary, garlic and water in a 6-qt. slow cooker. Mix brown sugar, pepper and salt; sprinkle over turkey. Cook, covered, on low 4-6 hours or until turkey is tender and a thermometer inserted in turkey reads at least 170°.

This BBQ Turkey Breast with a Brown Sugar Rub and BBQ Sauce is a perfect summer dish! Easy, healthy and so delicious!

1 turkey breast, approx 2 lbs (see notes)
your favourite BBQ sauce
1/4 tsp salt
3 tbsp brown sugar
2 - 3 tbsp chili powder
fresh ground pepper

Steps:

  • In a small bowl, combine the salt, brown sugar, chili powder and fresh ground pepper.
  • Separate the fillet from the turkey breast. It should remove easily. We do this for ease of BBQ'ing.
  • Generously rub the tops of both the turkey breast and the fillet with the rub. (as show in the photo above)
  • Preheat your barbecue to high, then, turn down the heat to low/medium.
  • Add your turkey and roast over the low/medium heat for approximately 20 minutes, (10 minutes on each side), or until the internal temperature measures 165 degrees. Note: The fillet will take less time to roast because it is smaller. It will likely be done in half the time. Just check it by temperature for doneness.
  • In the last few minutes, coat the top of the turkey with your favourite BBQ sauce. We like ours to be smothered!
  • When the turkey is done, remove from heat and let rest under tin foil for a couple of minutes.
  • When it is time to serve the turkey, cut the turkey into 3/4 inch slices, cut against the grain.
  • Serve with cobs of corn, bread and a green vegetable!
  • Enjoy!

1 (3 lb) turkey breast
2 tablespoons brown sugar
1 teaspoon parsley flakes
1 teaspoon sweet paprika
1/2 teaspoon dry mustard
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon pepper
1/4 teaspoon ginger

Steps:

  • Pat the turkey with paper towels to dry.
  • Mix the brown sugar, parsley flakes, paprika, dry mustard, garlic powder, onion powder, salt, cinnamon, pepper and ginger in a bowl.
  • Pat the brown sugar mixture evenly over the turkey.
  • Arrange the turkey on a rack in a baking pan.
  • Roast at 350 degrees until a meat thermometer registers 170 degrees.
  • Let rest before slicing.

BUTTERMILK-BRINED SPICE-RUBBED TURKEY

1 cup kosher salt, plus more for seasoning
3/4 cup packed light brown sugar
2 heads garlic, halved
20 sprigs fresh thyme
3 quarts buttermilk
3/4 cup hot sauce (such as Cholula)
1/4 cup spicy brown mustard
2 onions (1 sliced, 1 quartered)
1 12- to 14-pound turkey, thawed if frozen, neck and giblets removed
3 tablespoons paprika
1 tablespoon onion powder
1 tablespoon granulated garlic
1/4 teaspoon cayenne pepper
Freshly ground black pepper
4 tablespoons unsalted butter, melted

Steps:

  • Brine the turkey: Bring 2 cups water, the salt, brown sugar, 1 halved garlic head and 10 thyme sprigs to a boil in a medium saucepan over medium-high heat, stirring to dissolve the salt and sugar. Remove from the heat and add 6 cups cold water; let cool to room temperature. Whisk the buttermilk, hot sauce, mustard and sliced onion in a large bowl, then whisk in the salt-sugar mixture. Place the turkey in a brining bag or extra-large pot. Pour the brine over the turkey, seal or cover and refrigerate overnight.
  • Position a rack in the lowest part of the oven; remove the other racks and preheat to 350˚. Set a rack in a large roasting pan. Remove the turkey from the brine, letting the excess drip off as much as possible, and transfer, breast-side up, to the rack. Pat the turkey dry. Let sit at room temperature 30 minutes.
  • Combine the paprika, onion powder, granulated garlic, cayenne and 1 teaspoon black pepper in a small bowl. Stuff the turkey cavity with the remaining 1 halved garlic head and 10 thyme sprigs and the quartered onion; tie the legs together with kitchen twine. Tuck the wings under the body. Season the turkey all over with salt and brush with the melted butter. Coat the turkey with the spice mixture.
  • Roast the turkey 1 1/2 hours, then baste with the pan drippings. (Add 1/4 cup water to the roasting pan if it's too dry.) Continue to roast, basting every 30 minutes, until the skin is crisp and a thermometer inserted into the thigh registers 165˚, 45 minutes to 1 1/2 hours. Transfer the turkey to a cutting board and let rest 30 minutes before carving.

1 whole turkey (about 12 pounds), thawed if frozen, rinsed, and patted dry (neck and giblets chopped into 2-inch pieces; liver discarded)
2 medium carrots, roughly chopped
2 celery stalks, roughly chopped
1 large yellow onion, roughly chopped
Nonstick cooking spray
1/4 cup (1/2 stick) unsalted butter, room temperature
Coarse salt and ground pepper
2/3 cup cider vinegar
1/2 cup packed dark-brown sugar
1/2 teaspoon grated orange zest, plus 2 tablespoons orange juice

Steps:

  • Let turkey sit at room temperature 30 minutes. Preheat oven to 425 degrees, with racks in upper and lower thirds. Place neck, giblets, carrots, celery, and onion in a heavy-bottomed metal roasting pan. Set a roasting rack over vegetables and coat with cooking spray.
  • Tuck wing tips underneath body of turkey. Tie legs together with kitchen twine. Rub turkey all over with 2 tablespoons butter; season with salt and pepper. Place turkey on rack in pan; roast on bottom oven rack until golden brown, 30 minutes. Reduce heat to 350 degrees. Add 2 cups water to pan; roast until an instant-read thermometer inserted in thickest part of a thigh reads 125 degrees, about 1 hour.
  • Meanwhile, in a small saucepan, bring vinegar, brown sugar, and orange juice to a boil over high, stirring occasionally. Reduce heat and simmer, stirring occasionally, until mixture is syrupy, about 10 minutes. Remove from heat and whisk in 2 tablespoons butter and orange zest.
  • When thermometer reads 125 degrees, brush turkey with glaze. Rotate pan and roast, brushing turkey with remaining glaze every 15 minutes, until thermometer inserted in the thickest part of a thigh reads 165 degrees, 30 to 45 minutes (tent turkey with foil, if browning too quickly). Transfer turkey to a platter. Loosely tent with foil and let rest 30 minutes before carving. Reserve pan with drippings for Pan Gravy.
