- Mix together the crème fraîche, vanilla seeds, brandy and sugar. This can be chilled for up to 2 days - just give everything a good stir. sprinkle on a little extra sugar before serving.

MULLED APPLES & ORANGES IN BROWN SUGAR BRANDY CREAM SAUCE
Steps:
- 1) In a smallish, deep pot, heat apple juice to a boil. While waiting, slice apple and orange into approx. 12 pieces each and peel orange. 2) Add cinnamon sticks, vanilla, and brown sugar to apple juice. 3) Add apples and oranges to pot. Let simmer until apples are expanded and very soft. While fruits are simmering, prepare sauce in a small bowl. Add just enough very hot water to brown sugar for it to melt. Add vanilla, brandy, cinnamon, and crème légère. Mix well with a fork until smooth. 4) Strain fruits, saving the juice in a pot below. 5) Mix in sauce and garnish with cinnamon sticks.
