2 avocados, diced

Steps:

  • Combine red wine vinegar, water, vegetable oil, olive oil, lemon juice, Worcestershire sauce, garlic, salt, pepper, sugar, and mustard together in a bowl until dressing is smooth.
  • Place chopped lettuce and watercress in a large salad bowl. Arrange tomatoes, turkey, eggs, blue cheese, bacon, and avocados on top. Add desired amount of dressing before serving and toss.

I was served this salad on my honeymoon. The ingredients are all minced very fine, then they are tossed with the dressing at the last minute. I love it. It's perfect as a light lunch or dinner all by itself on a very hot summer day.

1/2 head iceberg lettuce
1/2 bunch watercress
1 bunch chicory lettuce
1/2 head romaine lettuce
2 medium tomatoes, skinned and seeded
1/2 lb smoked turkey breast
6 slices crisp bacon
1 avocado, sliced in half,seeded and peeled
3 hardboiled egg
2 tablespoons chives, chopped fine
1/2 cup blue cheese, crumbled
2 tablespoons water
1/8 teaspoon sugar
3/4 teaspoon kosher salt
1/2 teaspoon Worcestershire sauce
2 tablespoons balsamic vinegar (or red wine vinegar)
1 tablespoon fresh lemon juice
1/2 teaspoon fresh ground black pepper
1/8 teaspoon Dijon mustard
2 tablespoons olive oil
2 cloves garlic, minced very fine

Steps:

  • Chop all the greens very, very fine (almost minced).
  • Arrange in rows in a chilled salad bowl.
  • Cut the tomatoes in half, seed, and chop very fine.
  • Fine dice the turkey, avocado, eggs and bacon.
  • Arrange all the ingredients, including the blue cheese, in rows across the lettuces.
  • Sprinkle with the chives.
  • Present at the table in this fashion, then toss with the dressing at the very last minute and serve in chilled salad bowls.
  • Serve with fresh french bread.
  • FOR THE DRESSING: Combine all the ingredients except the olive oil in a blender and blend.
  • Slowly, with the machine running, add the oil and blend well.
  • Keep refrigerated.
  • *NOTE:This dish should be kept chilled, and served as chilled as possible.

One of my family's all-time favorites, we really love this simple old-time version of the Monte Cristo Sandwich! It's great for breakfast, brunch, lunch or dinner. Traditionally dusted with confectioner's sugar, and served with red currant jelly for dipping. You can add a dab of Dijon mustard, if desired. Although this sandwich can be quartered and deep-fried, many of the earliest recipes, like this one adapted from 'The Brown Derby Cookbook' (Doubleday, 1949), call for frying it in a skillet, like french toast.

2 eggs
1/4 cup milk
salt & freshly ground black pepper
5 tablespoons butter, softened
6 pieces thinly sliced white bread
4 thin slices cooked turkey
4 thin slices cooked ham
4 thin slices swiss cheese
confectioners' sugar, for dusting
red currant jelly, for dipping

Steps:

  • Lightly beat eggs and milk in a shallow bowl. Season with salt and pepper and set aside.
  • For each sandwich, lightly butter 3 slices of bread on both sides.
  • Place 2 slices of turkey and 2 of ham between 2 slices of bread.
  • Top with 2 slices of cheese and add last slice of bread.
  • Trim crusts, secure with toothpicks, and cut in half on the diagonal.
  • Melt 2 tablespoons of the butter in a large nonstick skillet over medium heat.
  • Dip sandwich halves, top and bottom, in batter.
  • When butter foams, place sandwiches in skillet and fry until golden brown, about 2 minutes.
  • Add remaining 2 tablespoons butter to skillet, turn sandwiches, and fry for 2 minutes more.
  • Transfer to plates, sprinkle with confectioners' sugar, and serve with jelly.

baker's spray (or any nonstick spray followed with a light dusting of flour)
GRAPEFRUIT CAKE
1 1/2 cups cake flour
3/4 cup white granulated sugar
1 1/2 tsp baking powder
1/2 tsp salt
1/4 cup water
1/4 cup vegetable oil
3 large eggs, separated
3 Tbsp grapefruit juice
1/2 tsp freshly grated lemon zest
1/4 tsp cream of tartar
GRAPEFRUIT-CREAM CHEESE FROSTING
2 (6-oz) pkg cream cheese, softened to room temperature
2 tsp lemon juice, freshly squeezed
1 tsp freshly grated lemon zest
3/4 cup confectioners' sugar, sifted
6-8 drops yellow food coloring
1 (1-lb) can(s) grapefruit sections, well drained
GRAPEFRUIT GLAZE
1 cup pink grapefruit juice, thoroughly chilled
2 Tbsp confectioners' sugar
1 tsp cornstarch

Steps:

  • 1. Grapefruit Glaze (prepared first, as it needs to chilll): Mix together the chilled grapefruit juice, confectioners' sugar and cornstarch until cornstarch is fully dissolved. Pour mixture into a small saucepan, and heat over medium heat, stirring constantly. When it begins to heat, it will become transparent and thicken to a syrupy glaze. Remove from heat source, cover and store in refrigerator until thoroughly cooled.
  • 2. Preheat oven to 350°F. Line bottom of a 9x2-inch round cake pan with parchment paper, then very lightly spray parchment with nonstick baking spray; set pan aside.
  • 3. In a mixing bowl, sift together the cake flour, sugar, baking powder and salt. Make a well in the center, and add water, oil, egg yolks, grapefruit juice and lemon zest. Beat until smooth.
  • 4. In a separate bowl, beat egg whites and cream of tartar until stiff but not dry. Gradually pour egg yolk mixture over the whites, gently folding with a rubber spatula just until blended. Don't stir the mixture, just fold gently.
  • 5. Pour batter into prepared cake pan. Bake for 25 to 30 minutes or until cake springs back when lightly pressed with a fingertip. Invert cake onto a cake rack to cool completely. Run a butter knife around edge of cake, and carefully remove cake to a platter to cool completely. With a serrated knife, gently slice cake in half to yield two layers.
  • 6. FROSTING: Beat softened cream cheese until fluffy. Add lemon juice and lemon zest. Gently stir in sugar, then beat until well blended. Stir in food coloring. Crush several grapefruit sections to measure 2 teaspoons, and blend the crushed grapefruit into the frosting mixture.
  • 7. Spread the frosting over the surface of the bottom cake layer. Top with several grapefruit sections. Place the other cake layer on top of the frosted bottom layer. Using the remaining frosting to frost the top and sides of the cake.
  • 8. To serve - Remove Grapefruit Glaze from refrigerator, and stir it several times for ease in pour. Pour the glaze over the frosted cake. Garnish with remaining grapefruit sections, if desired, and then cut the cake into 8 to 10 slices.
  • 9. NOTE: Disney chefs garnish individual slices of Grapefruit Cake with an ultra-thin slice of grapefruit that has been heated in a moderate oven until hydrated and lightly scorched. It's a nice modern touch, but it wasn't an original garnish when this dessert was originally created and served at the Hollywood Brown Derby.

FRENCH DRESSING:

1 ts Worcestershire sauce
1 ts English mustard
1 Clove garlic; chopped
1 c Olive oil
3 c Salad; (vegetable) oil

Steps:

  • BROWN DERBY OLD-FASHIONED Cut finely lettuce, watercress, chicory and romaine and arrange in salad bowl. Cut tomatoes in half, remove seeds, dice finely, and arrange over top of chopped greens. Dice breasts of chicken nd arrange over top of chopped greens. Chop bacon finely and sprinkle over the salad. Cut avocado in small pieces and arrange around the edge of the salad. Decorate the salad by prinkling over the top the chopped eggs, chopped chives, and grated cheese. Just before serving mix the salad thoroughly with French Dressing. Yield: Serves 4 to 6 Brown Derby Old-Fashioned French Dressing Blend together all ingredients except oils. Then add olive and salad oils and mix well again. Chill. Shake before serving. Makes about 1 1/2 quarts. This dressing keeps well in the refrigerator. Can be made and stored in a 2-quart Mason jar.

Maybe one of the more experienced Chef's here can explain to me why a mixture of oils instead of just one oil is beneficial. I was looking for a Cobb Salad Dressing recipe when I found this one. The paper said Brown Derby used this dressing on their Cobb Salad. I'm interested to try it because I'm always looking for good homemade salad dressings. 1/2 teaspoon liquid smoke

1 quart chicken stock (broth)
1 1/2 cups ketchup
3/4 cup chili sauce

1/2 cup margarine
8 tablespoons flour
1/2 cup sweet pickle relish or 1/2 cup to taste chopped parsley

Steps:

  • For the Diablo sauce:.
  • In large sauce pan mix first 7 ingredients.
  • Bring to a boil.
  • In a small pan, melt margarine and gradually add flour, stirring until smooth.
  • Add gradually to sauce mixture until desired thickness is reached.
  • It is best to taste the seasonings as you mix the ingredients so that the sauce is to your desired taste.
  • You may find that you want to increase or decrease certain ingredients to suit your taste.
  • For the Brown Derby:.
  • Lightly mix all ingredients and shape into 8 patties.
  • Broil on a grill to your liking.
  • Place on plates and cover with Diablo sauce.
  • This can be served with practically anything on the side.
  • French fries, fried potatoes etc.
  • NOTE: You may lose some of the flavor but the patties are still tasty if cooked inside in a skillet over medium heat.

INGREDIENTS FOR CAKE
1 1/3 c all purpose flour
1/2 c cocoa, unsweetened
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 1/4 stick unsalted butter, room temp
1/2 c packed light brown sugar
1/2 c granulated sugar
3 large eggs, room temp
1 tsp vanilla extract
2 oz bittersweet chocolate, melted and cooled
1/2 c whole milk, room temp
1/2 c boiling water
4 oz semi-sweet or milk chocolate finely chopped
FOR FILLING
1 pkg gelatin, unflavored
1/2 c milk
2 large egg whites
1/4 c granular sugar, sifted
2 tsp vanilla extract
1 c heavy whipping cream
12 oz fresh strawberries, sliced thinly
(1) 15 oz can sliced peaches, drained
2 medium bananas, sliced thinly
1 hand full fresh blueberries
FOR TOPPING
1 1/2 c heavy whipping cream
1/4 c confectioners' sugar,sifted (plus more to taste)

Steps:

  • 1. Instructions For cake: Preheat oven to 350F and prepare 1 round cake pan and 1 medium-sized mixing bowl (oven-safe!) with butter and a healthy dusting of flour or confectioner's sugar. Line the round cake pan with parchment paper as well. Sift together flour, cocoa, baking soda, baking powder, and salt. Set aside. Using a stand or hand mixer, cream butter on medium speed until soft. Add both sugars and continue beating for 3 minutes. Add eggs one at a time, beating for 1 minute after each addition. Add vanilla. At this point things may look curdled but keep on beating. On low speed, add melted chocolate. Then add dry ingredients in 3 additions alternating with the milk in 2 additions. Mix just until incorporated. Add in the boiling water which will thin down the luscious batter. Finally, stir in the chopped chocolate with a rubber spatula. Divide the cake evenly between the prepared pan and prepared bowl. Bake separately in the preheated oven. The round cake will take about 25-30 minutes. The bowl took me closer to an hour to set properly. When you insert a knife into the center of the cake, it should come out clean. Allow cake to cool for several minutes before running a knife/spatula around the sides, unmolding, and allowing to cool completely to room temperature.
  • 2. For filling: (Again, as above, you can simply mix the fruit with whipped cream sweetened slightly with confectioner's sugar if desired. This recipe gives a bit more solid filling with the addition of gelatin.) Stir gelatin in milk to soften. Meanwhile, beat the egg whites until stiff and add the sugar in slowly, mixing to combine. Heat the gelatin and milk mixture over very low heat for several minutes until the gelatin is completely dissolved. With the mixer on, pour the warmed mixture over the egg whites and mix well. Add in vanilla. Cool to warm before folding in prepared fruits. In a separate bowl, beat heavy cream until stiff peaks (you can use your dirty beaters). Fold in to fruit mixture.
  • 3. For topping: Beat heavy cream in a clean bowl until stiff peaks. Add sugar to taste. For assembly: Once cakes are cooled, level both cakes, reserving scraps (take a bit off even if your cakes came our perfectly which mine never ever do). Take round cake and place on stand. Top with as much filling as desired. (I only did one big fat layer of filling and used about 3/4 of it. In hindsight, you can cut the cake baked in the bowl into two layers and then have two layers of filling with three layers of cake. Just saying.) Top with cake baked in the bowl. Using a spatula, spread sweetened whipped topping all over cake. Finally, crumble scraps and press into whipped topping. If your scraps a little too moist, you can spread them over a baking sheet and dry them out a bit in a warmed oven.

3/4 c sugar
1/8 tsp salt
1 egg yolk
3/4 c regular white milk
1 9 in., pie shell, baked

1 can(s) carnation evaporated milk

  • 1. Put 1 cup evaporated milk in bowl, set in freezer until ice crystals form/ appear on sides of bowl,beat until whipped and almost doubles in size in the bowl beat in 1 tsp. vanilla extract, then place back in freezer to keep chilled until later.
  • 2. In a double boiler pot, combine 1 package of unflavored gelatin, the 3/4 c. sugar, salt(1/8tsp.), egg yolk,and regular white milk,simmer in this double boiler while stirring in and melting 3squares(reserve 1 square for later) bakers unsweetened chocolate, stirring occasionally. After this is all melted and stirred together, let cool.After this chocolate mixture cools, mix with an electric mixer until well beaten and smooth,chill, add evaporated milk mixture (previously set in freezer to chill) mix thoroughly. Poor into the 9 in. baked pie shell, chill,

1/4 cup Oil
3 x Eggs, separated
3 tbl Grapefruit juice
1/2 tsp Grated lemon peel
1/4 tsp Cream of tartar
1 x Grapefruit, peeled and sectioned
CREAM CHEESE FROSTING:
2 pkt (3-oz) cream cheese, softened
2 tsp Lemon juice
1 tsp Grated lemon peel
3/4 cup Sifted powdered sugar

8 dsh Yellow food color, optional
Reserved grapefruit sections

Steps:

  • Sift together flour, sugar, baking powder, and salt into bowl. Make well in center and add water, oil, egg yolks, grapefruit juice and lemon peel. Beat until very smooth. Beat egg whites with cream of tartar until stiff but not dry. Gradually pour egg yolk mixture over egg whites and fold in gently until just blended. Do not stir. Turn batter into ungreased 9 inch spring form pan and bake at 350 degrees 30 minutes, or until top springs back when touched lightly with finger. Invert onto cake rack and cool thoroughly. Loosen edges of cake carefully and remove from pan. With serrated knife, cut cake crosswise to make two layers. Reserve a few fruit sections for frosting. Fill with part of the Cream Cheese Frosting and grapefruit sections. Spread top and sides of cake with frosting and decorate with additional fruit sections. Cream Cheese Frosting: Beat softened cream cheese until fluffy. Add lemon juice and peel. Gradually blend in sugar and beat until well blended. Stir in food color. Crush enough grapefruit sections to measure 2 teaspoons and blend into frosting.

I have never had an authentic Hot Brown before so I was working from just a basic understanding of the dish when I came up with this version. We enjoyed this while watching the Kentucky Derby and, it was such a hit, that I decided to share it with my friends on Zaar! While there are a few different steps to putting this together, it really is easy and not time-consuming. This actually makes more than enough cheese sauce, so you can be as liberal with it as you want. I saved the remaining sauce to be used over asparagus, broccoli, or a baked potato.

8 slices smoked bacon
fresh coarse ground black pepper
light brown sugar
cayenne pepper
1 small onion, chopped
8 ounces white mushrooms, chopped
8 tablespoons butter (1 stick)
6 tablespoons flour
4 cups milk
1/2 teaspoon white pepper
1/2 cup shredded white cheddar cheese
1/2 cup shredded sharp cheddar cheese
1/2 cup grated parmesan cheese
1 teaspoon salt
8 slices hearty white bread (I used Pepperidge Farm Farmhouse Soft Hearty White)
1 lb sliced deli turkey
1 large beefsteak tomato

Steps:

  • Prepare bacon: Preheat oven to 400 degrees. Line jelly-roll pan with parchment paper. Lay out slices of bacon (do not overlap). Sprinkle with black pepper, brown sugar and cayenne (as your taste dictates - I only used a touch of cayenne for a hint of heat). Bake for 10-12 minutes until nice and crispy. Remove from pan and drain on paper towel-lined plate. Set aside.
  • Meanwhile, while bacon is cooking, make cheese sauce. Melt butter in a large saucepan over medium heat and add onion and mushrooms. Saute until onions are translucent and mushrooms are soft. Stir in flour, 1 T. at a time, and cook for about 1 minute. Season with salt and white pepper. Slowly stir in milk (about 1 cup at a time) until it is fully incorporated and flour is well-blended. Cook, stirring frequently, until mixture has thickened. Add cheeses, 1/2 cup at a time, stirring to blend well. Remove from heat and set aside.
  • To assemble sandwiches, Preheat broiler. Toast bread slices to a medium-golden color and lay out on shallow-rimmed baking pans. (You will probably need 2 to fit all the bread slices.) Divide sliced turkey breast evenly among the bread slices, folding to fit on the bread. Ladle reserved cheese sauce over turkey and toast. (I used a ladleful for each sandwich.) Slice tomato in 8 slices and place on top of sandwiches. Slice bacon slices in half and set aside. Place each baking pan under broiler, one at a time, and broil until browned and bubbly. After removing from broiler, put bacon slices on top (arranged in an X) and serve.
  • Note: Any leftovers reheat very well. You can just run them under the broiler again or bake in a 400-degree oven for a few minutes.

Fast and easy to make from ingredients you already have in the house. Many dinner guests ask me for this recipe. The fresh garlic really makes this. Add less or more to your taste. I use a garlic press so it's fairly effortless. Please note that this is a more traditional French dressing and not the American French dressing. I have also used this to marinate chicken with great results.

1/4 ounce agave syrup (nectar)

  • Combine whiskey, grapefruit juice, lime juice, agave, and bitters in a cocktail shaker. Fill shaker with ice and shake until outside is frosty, about 30 seconds; strain into a coupe glass. Slap sage leaf between your palms until fragrant; float on top of cocktail.

4 -6 leaves boston bibb lettuce
2 -4 leaves radicchio
4 leaves Belgian endive
3 plum tomatoes, cut in half
8 slices English cucumbers (thin slices)
4 -6 kalamata olives
red onion, thin shaved, to suit taste
baby carrots, thin julienned, to suit taste
1/2 lemon, juice of
1/2 orange, juice of
1/4 lime, juice of
1 tablespoon balsamic vinegar
7 tablespoons apple cider vinegar
1/2 tablespoon Dijon mustard
1/2 cup extra virgin olive oil
1/2 cup salad oil
lemon zest
orange zest
lime zest
salt or pepper

Steps:

  • To make salad, combine all ingredients in bowl.
  • Toss with citrus vinaigrette before serving.
  • To make dressing, in measuring cup, combine all juices and balsamic vinegar.
  • Add enough apple cider vinegar to make 1/2 cup, which should be about 7 Tablespoons.
  • Pour into mixing bowl or blender, with mustard.
  • Slowly incorporate oils while mixing.
  • Add the zests, and season with salt and pepper.
