This has been a favorite apple bar recipe of mine for many years. I've made these apple crisp bars for parties and for family, and they're always a hit. -Barbara Pickard, Union Lake, Michigan

Number Of Ingredients 10

3 cups all-purpose flour
1-1/2 cups old-fashioned oats
1-1/2 cups packed brown sugar
3/4 teaspoon baking soda
1-1/4 cups cold butter, divided
5 to 6 cups thinly sliced peeled apples
1 cup sugar
3 tablespoons cornstarch
1 cup cold water
1 teaspoon vanilla extract

Steps:

  • In a large bowl, combine the flour, oats, brown sugar and baking soda; cut in 1 cup plus 2 tablespoons butter until mixture resembles coarse crumbs. Set aside 2 cups for topping. Press remaining crumbs into a greased 13x9-in. baking dish. Arrange apples over top; set aside. , In a saucepan, combine the sugar, cornstarch, water, vanilla and remaining butter. Bring to a boil. Cook and stir for 2 minutes or until thick and bubbly; spread over apples. Sprinkle with reserved crumbs. , Bake at 350° for 35-45 minutes or until top is lightly browned.

Apple crisp meets browned butter dough in these delicious bar cookies that are perfect for fall.

0.75 cup unsalted butter
1.5 cups flour
1 cup rolled oats
0.667 cup packed brown sugar
0.75 teaspoon baking powder
0.25 teaspoon cinnamon
0.25 teaspoon salt
1 large egg yolk
1 teaspoon vanilla extract
2 tablespoons unsalted butter
6 cups chopped apples
tablespoon packed brown sugar, divided
1 teaspoon ground cinnamon
1 teaspoon freshly squeezed lemon juice
0.25 teaspoon ground nutmeg
1 pinch salt

Steps:

  • Cook 3/4 cup butter in a large skillet over medium-low heat until melted and light brown, 12 to 15 minutes. Keep an eye on it; it can burn. Pour into a bowl. Freeze until solid, about 30 minutes.
  • Meanwhile, for the filling melt 2 tablespoons butter in the same skillet. Add apples, 2 tablespoons brown sugar, 1 teaspoon cinnamon, lemon juice, nutmeg, and pinch of salt. Cook, stirring occasionally, until apples are golden brown and caramelized, about 15 minutes. Remove from heat. Add 3 tablespoons brown sugar; toss to coat.
  • Preheat the oven to 375 degrees F (190 degrees C). Line a 9-inch square baking pan with enough parchment paper to create an overhang on all sides.
  • Stir together flour, oats, 2/3 cup brown sugar, baking powder, 1/4 teaspoon cinnamon, and 1/4 teaspoon salt in a bowl. Coarsely shred frozen browned butter or chop into small pieces. Cut butter into flour mixture until mixture resembles coarse meal. Add egg yolk and vanilla; stir with a fork just until a crumbly dough comes together. Press about two-thirds of the dough (2 2/3 cups) in an even layer in the prepared baking pan.
  • Bake until lightly browned, about 10 minutes.
  • Spread apple mixture over the crust. Crumble remaining dough over top. Bake until golden brown, about 25 minutes. Let cool completely on a wire rack. Using parchment sides to lift bars, transfer to a cutting board and cut into squares.

1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch pieces, plus more for the baking dish
2 1/2 pounds apples, peeled, cored and sliced 1/4-inch thick
2 tablespoons fresh lemon juice
2 teaspoons pure vanilla extract
1/3 cup granulated sugar
1 cup plus 1 1/2 tablespoons all-purpose flour
Pinch of ground nutmeg
1/2 cup pecans, walnuts or almonds, finely chopped
1/4 cup dark brown sugar, packed
1/2 teaspoon ground cinnamon
Pinch of fine sea salt
Vanilla ice cream, for serving

Steps:

  • Heat the oven to 375 degrees F. Butter a large baking dish and set aside. Place the apples, lemon juice and vanilla in a large bowl and toss to coat. Add the granulated sugar, 1 1/2 tablespoons flour and nutmeg, stirring to combine.
  • Place remaining 1 cup flour, nuts, brown sugar, cinnamon and salt in a medium bowl. Using a pastry cutter or 2 knives, cut the butter into the flour mixture until it resembles coarse crumbs. Sprinkle the mixture over the apples. Bake until golden brown, about 40 minutes. Serve warm with ice cream.

We've upped the ante on apple crisp with a Betty Crocker™ oatmeal cookie mix base, a hearty layer of fresh apples and crunchy streusel topping. It all comes together for a treat that's a step beyond the usual crisp.

1 pouch (17.5 oz each) Betty Crocker™ oatmeal cookie mix
Butter, water and egg called for on cookie mix pouch
5 cups coarsely chopped, peeled Granny Smith apples (5 medium)
1/2 cup sugar
3 tablespoons Gold Medal™ all-purpose flour
1 pouch (17.5 oz each) Betty Crocker™ oatmeal cookie mix
1/2 cup cold butter
4 oz (from 8-oz package) cold cream cheese

Steps:

  • Heat oven to 375°F. Spray bottom and sides of 13x9-inch pan with cooking spray.
  • In large bowl, mix Crust ingredients with spoon until soft dough forms. Pat in bottom of pan. Bake 12 to 15 minutes or until golden brown. In medium bowl, toss Filling ingredients. Spread on baked crust.
  • In medium bowl, place remaining cookie mix pouch. Cut in cold butter and cream cheese, using pastry blender or fork, until mixture is crumbly (do not overmix). Sprinkle over apples. Bake 32 to 37 minutes or until topping is golden brown and apples are tender when poked with tip of sharp knife. Remove from oven to cooling rack. Cool completely, about 2 hours. Cut into 4 rows by 3 rows.
