GRILLED RIB-EYE STEAK SANDWICH

2 tablespoons smoked paprika
2 to 3 tablespoons olive oil, plus more for drizzling
6 (6-ounce) rib-eye steaks
2 tablespoons sea salt
2 tablespoons cracked black pepper
1/4 cup hot banana peppers
6 slices provolone cheese
6 steak rolls, split in 1/2
Herb Salad, recipe follows
1/4 cup roughly chopped parsley leaves
1/4 cup torn basil leaves
1/4 cup minced prosciutto
3 shallots, sliced into thin rings
1/2 cup sliced sun-dried tomatoes
1 lemon, juiced
1/4 cup olive oil
1 tablespoon salt, or to taste
1 tablespoon cracked black pepper, or to taste

Steps:

  • Preheat the grill to 375 degrees F.
  • In a small bowl, mix together the smoked paprika and 2 to 3 tablespoons olive oil. Set aside.
  • Season the steaks with salt and pepper on both sides and drizzle with olive oil. Put the steaks on hot grill and sear on each side until desired doneness, about 4 minutes. Top with the peppers and provolone and cook until the cheese is melted. Brush the steak rolls with the smoked paprika oil and grill until slightly charred. Cut the steaks in half, lengthwise and put them on top of each other on the bottom half of the roll. Top with the herb salad and cover with the top half of the roll. Serve.
  • Add all the ingredients to a small bowl and toss to combine.

2 boneless beef top loin steaks (1 inch thick and 8 ounces each)
1/4 teaspoon salt
1/8 teaspoon pepper
1 large sweet onion, thinly sliced
1 cup sliced fresh mushrooms
1 poblano pepper, thinly sliced
2 tablespoons plus 2 teaspoons butter, divided
2 tablespoons chopped onion
1 garlic clove, minced
1/2 cup heavy whipping cream
1 chipotle pepper in adobo sauce, minced
1/2 teaspoon ground cumin
1/4 teaspoon chicken bouillon granules
1 loaf (14 ounces) ciabatta bread
4 slices pepper jack cheese

Steps:

  • Sprinkle steaks with salt and pepper. Grill, covered, over medium heat or broil 3-4 in. from the heat for 7-9 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 5 minutes before slicing., Meanwhile, in a large skillet, saute sliced onion, mushrooms and poblano pepper in 2 tablespoons butter until tender. Remove from the heat; stir in sliced steak., In a small saucepan, saute chopped onion in remaining butter until tender. Add garlic; cook 1 minute longer. Stir in the cream, chipotle, cumin and bouillon; cook and stir until thickened., Cut ciabatta in half horizontally, then cut into four equal portions. Place cheese on bottom bread slices; top with steak mixture, chipotle cream sauce and remaining bread. 3 tablespoons olive oil
1 lb top sirloin steak, cut into bite size strips
1 medium onion, slivered
1 green pepper, cut into strips
1 garlic clove, crushed
6 hoagie rolls
1/4-1/2 cup olive oil
1 cup ripe tomatoes, chopped small

Steps:

  • Preheat the broiler or toaster oven.
  • Heat the 3 tablespoons olive oil in a large skillet over medium-high heat. Add beef strips to brown.
  • Add onion and pepper to beef. Saute until softened and brown around the edges, about 10 minutes.
  • Add garlic. Cook for one minute more.
  • Meanwhile, brush hoagie rolls with remaining olive oil and toast under the broiler.
  • Pile meat mixture on rolls, and top with chopped tomatoes. Yum!

Number Of Ingredients 6

1 boneless beef sirloin steak (2 lb.)
1/4 cup KRAFT Zesty Italian Dressing, divided
1 large onion, sliced (about 2 cups)
2 Tbsp. brown sugar
6 large banana peppers (about 1 lb.), roasted, peeled and sliced
1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Place steak in large resealable plastic bag. Add 2 Tbsp. of dressing; seal bag. Turn bag over several times to evenly coat steak with dressing. Refrigerate 30 min. to marinate.
  • Preheat broiler. Remove steak from marinade; discard bag and marinade. Place steak on rack of broiler pan. Broil, 6 inches from heat, 20 to 22 min. or until medium doneness (160ºF), turning after 12 min. Meanwhile, add remaining 2 Tbsp. dressing to large skillet along with the onions and brown sugar; stir. Cook on medium heat 18 to 20 min. or until onions are caramelized, stirring occasionally.
  • Let steak stand 5 min. before cutting half of the steak into thin slices. Meanwhile, stir peppers into caramelized onions; cook 8 min. or until heated through, stirring occasionally. Place sliced steak on serving platter. Spoon vegetable mixture over sliced steak; top with the sour cream.

2 tablespoons extra virgin olive oil
1 tablespoon Dijon mustard
1 large garlic clove, minced
1/2 teaspoon crushed red pepper flakes
salt & freshly ground black pepper
1 1/4 lbs skirt steaks
1 large ripe tomatoes, thinly sliced
1 tablespoon balsamic vinegar
1/3 cup gorgonzola, crumbled (dolce cheese)
3 tablespoons mayonnaise (the real kind)
1 baguette, cut into four 6-inch lengths and split
1 bunch watercress, tough stems trimmed

Steps:

  • Light a grill or preheat a broiler.
  • In a small bowl, combine 1 tablespoon of the olive oil with the mustard, garlic and crushed red pepper.
  • Season with salt and black pepper.
  • Put the steak in a shallow baking dish and spread the mustard mixture all over it.
  • Grill the steak over high heat, turning once, until charred and medium rare, about 4 minutes per side.
  • Transfer the meat to a cutting board and let it rest.
  • Meanwhile, spread the tomato slices on a large platter, drizzle with the balsamic vinegar and the remaining 1 tablespoon of olive oil and season with salt and black pepper.
  • In a small bowl, mash the Gorgonzola with the mayonnaise.
  • Spread the Gorgonzola mixture on the cut sides of the baguette lengths and grill, cheese side up, until the baguette is toasted and the Gorgonzola is melted, about 1 minute, being careful not to burn the bread.
  • Cut the steak into 4-inch lengths, then thinly slice it across the grain.
  • Pile the meat on the baguettes and spoon the accumulated meat juices over the top.
  • Top with the tomato slices and watercress, close the sandwiches and serve.

1/4 cup mayonnaise
2 tablespoons prepared horseradish
1 tablespoon grainy mustard
Coarse salt and freshly ground black pepper
1 1/2 pounds flank steak
3 tablespoons extra-virgin olive oil
1 bunch watercress, tough stems trimmed
1 tablespoon freshly squeezed lemon juice
4 thick slices rustic bread, toasted
Roasted Peppers with Garlic and Basil, or store-bought roasted bell peppers, if you prefer

Steps:

  • Make horseradish sauce: In a small bowl, whisk together sour cream, mayonnaise, horseradish, and mustard. Season with salt and pepper. Cover with plastic wrap; refrigerate while preparing steak.
  • Heat broiler, with rack 6 inches from heat. Season steak well on both sides with salt and pepper; rub with 2 tablespoons oil. Place on a roasting pan fitted with a rack. Broil 6 minutes on each side for medium-rare. Let rest 5 minutes before slicing 1/4 inch thick.
  • Place watercress in a bowl; toss with remaining tablespoon oil and the lemon juice. Season with salt and pepper. Serve on toasted bread, topped with steak, horseradish sauce, and roasted peppers.
