I can remember eating these as a kid with Mom and Dad forty years ago. They are high up on the list of my favorite summertime comfort foods.

¼ cup spicy brown mustard
8 slices whole wheat bread
1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), cut into 1/4 inch slices
8 slices Cheddar cheese
2 large tomatoes, cut into 1/2-inch slices
1 sweet onion, thinly sliced
¼ cup softened butter

Steps:

  • Spread the mustard onto one side of each of the bread slices. Place the luncheon meat onto half of the bread slices, then top each with 2 slices of Cheddar cheese, sliced tomato, and onion. Place the remaining bread slices, mustard-side-down onto the onions. Spread butter evenly onto the outside of each sandwich.
  • Heat a large skillet over medium-low heat. Place the sandwiches into the skillet, and cook until they are golden brown, then flip the sandwiches over, and continue cooking until golden brown and crispy on the other side, about 6 minutes per side. Allow the sandwiches to cool slightly before serving.

Here's a unique recipe that has been in my spouse's family for 3 generations. It was probably created during World War II as a new way to prepare SPAM®, which was widely used in that time of shortages and rationing. These open-faced sandwiches are delicious and economical and are loved by his entire family. They are great for breakfast, lunch, or dinner!

1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), finely chopped
4 hard-cooked eggs, peeled and chopped
1 (8 ounce) package shredded Cheddar cheese
½ cup finely chopped onion
½ cup mayonnaise
¼ cup chili sauce
½ teaspoon salt
¼ teaspoon hot sauce
12 hamburger buns, split

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Combine luncheon meat, eggs, Cheddar cheese, and onion in a bowl. Add mayonnaise, chili sauce, salt, and hot sauce. Mix well.
  • Spread meat mixture over hamburger bun halves. Place on a baking sheet.
  • Broil in the preheated oven until brown and bubbly, 5 to 10 minutes.

¾ (1 pound) loaf processed cheese food (such as Velveeta®), cubed
2 tablespoons sweet pickle relish
½ cup creamy salad dressing (such as Miracle Whip®)
8 hamburger buns, split

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Stir together the luncheon meat, processed cheese, relish, and salad dressing in a bowl. Spoon the filling into the sandwich buns, and wrap each sandwich individually in aluminum foil. Place the sandwiches onto a baking sheet.

1 (12 oz.) can Armour Treet or Spam, cubed
1 c. (4 oz.) shredded Cheddar cheese
1/2 c. chopped celery
1/4 c. chopped onion
1/4 c. chopped green pepper
1/2 c. mayonnaise

Steps:

  • 6 hamburger buns, split, or hot dog buns, not split Combine meat, cheese and vegetables; stir in mayonnaise. Place 1/4 cup mixture on each bun half. Broil 8 to 10 inches from heat until mixture is hot and bubbly, about 5 minutes. Makes 12 sandwiches.

This is an easy-to-fix sandwich spread using Spam and Velveeta Cheese. My recipe does not call for onions, but some people do like to add chopped onion. I like to use bread instead of buns, because I prefer equal amounts of bread/spread. Use the buns for a bigger sandwich.

  • Spread the mixture onto 6 slices of bread or 4 bottom portions of the buns. Place under a broiler until the cheese melts. Set aside.
