3 pound side of fresh salmon
juice of 1 lemon
3 finely minced cloves of garlic
3 tablespoons olive oil
1 cup red wine
1 cup red wine vinegar
1 cup soy sauce
1 stick unsalted butter
¼ cups sliced green onions
sea salt and fresh cracked pepper to taste

Steps:

  • Preheat the broiler to 500° or medium.
  • Place the salmon skin-side down on a sheet tray lined with parchment paper or foil.
  • Evenly squeeze on the lemon juice all over the salmon. Rub the finely minced garlic all over the top of the salmon.
  • Drizzle the olive oil covering the salmon then season with salt and pepper.
  • Place on a rack that is about 8-10 inches from the top heating element and broil it for 8-10 minutes or until browned and cooked. Set aside and rest for 3-4 minutes before serving.
  • In a medium-size bowl add in the red wine, red wine vinegar, and soy sauce and mix until combined. Save about 1/3 of the mixture for later use.
  • Add the remaining 2/3 to a large saute pan and heat over medium heat until hot, about 1 to 2 minutes. Turn the heat to low and whisk in the butter until melted in.
  • Add in green onions to the sauce and serve the salmon with the sauce.

2 teaspoons olive oil
1/4 teaspoon dill weed
1/4 teaspoon pepper
2 medium tomatoes, thinly sliced
1 medium onion, thinly sliced

1/2 cup reduced-sodium chicken broth
1 tablespoon lemon juice
2 tablespoons minced fresh parsley

Steps:

  • Place salmon in a 13-in. x 9-in. baking dish coated with cooking spray. Drizzle with oil; sprinkle with dill and pepper. ¼ cup salted butter, melted
2 tablespoons grated yellow onion
1 tablespoon honey
1 teaspoon minced fresh dill

4 (5 ounce) salmon fillets
1 tablespoon canola oil
4 slices lemon, or to taste

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Whisk lemon juice, melted butter, onion, honey, dill, garlic powder, and 1/2 teaspoon pepper together in a medium bowl.

1/4 cup (1/2 stick) unsalted butter
2 tablespoons minced fresh parsley
2 large garlic cloves, minced

1 16-ounce salmon fillet with skin
4 thin onion slices
4 thin tomato slices

4 (8-ounce) salmon fillets
Olive oil

Steps:

  • Coat each salmon fillet with the olive oil (just enough to make it shine, not drip) and salt and pepper.
  • Preheat grill to medium-high heat and place the salmon skin side up, (even if the skin has been removed) this is VERY important. Then close the lid and allow to cook about 5 to 7 minutes. Check the grill to make sure there are no flame flare-ups and the salmon is cooking evenly, and let cook another 3 to 4 minutes. You are going to let the fish cook about 90 percent on this side. After about 8 to 9 minutes the salmon should turn over easily and allow to finish another 3 to 4 minutes. Remove from grill and serve with your favorite side dishes. The entire cooking time should be about 10 to 12 minutes.

2 pounds salmon, skinned and deboned
2 tablespoons olive oil
1 lemon
½ tablespoon chopped fresh dill, or more to taste
½ tablespoon garlic powder, or more to taste
½ teaspoon salt

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Rub salmon down in olive oil. Cut your lemon in half and set 1 half off to the side. Cut the other half into 1/4-inch thick slices. Lay them on a broiler pan and lay the salmon on top of them. You just need enough to cover the bottom of the salmon so it's not touching the pan. Sprinkle with dill, garlic powder, salt, and pepper. Lightly squeeze the remainder of the lemon over the whole salmon; not too much, you don't want your seasoning to run off.
  • Cook in the center of the preheated oven on a low broil until easily flaked with a fork but still juicy, 15 to 20 minutes.

Here is a simple recipe for salmon prepared en papillote (a fancy name for "in paper," though like most everyone else these days, you will use aluminum foil). Layer salmon, tomato and basil on lightly oiled foil and wrap it all up - you can even do it a night before cooking. When the time for dinner comes, you can steam, grill, roast or pan-grill the packages - though our testing shows roasting is easiest. You can substitute almost anything comparable for each of the ingredients: salmon can be replaced by any fish steak or fillet, or by boneless, skinless chicken breast. The herb and vegetable can also be varied at will, as long as the vegetable will finish cooking at the same time as the protein: if you were cooking broccoli, for example, you would have to cut it into small pieces; if carrots, you'd have to parboil them.

1 1/2 to 2 pounds salmon fillet, cut crosswise (4 pieces)
12 cherry tomatoes, sliced in half

  • For each of 4 packages, place one 12-inch-long sheet of aluminum foil on top of another.   • Let packages rest a minute, and cut a slit along the top with a knife. Use a knife and fork to open the package. Spoon the salmon, garnish and juices onto a plate, and serve.
