Broiled feta with burst cherry tomatoes and capers makes a surprisingly addictive and flavorful spread. Perfect for summer!

1 (8 ounce) block feta cheese
2 tablespoons extra virgin olive oil
2 cloves garlic, roughly chopped
10.5 ounces cherry tomatoes, preferably different colors, halved
Scant ¼ teaspoon salt
⅛ teaspoon pepper
Pinch sugar
1½ tablespoons capers, drained

Steps:

  • Preheat the broiler and set the oven rack in the top position. Place the feta in a small (1-quart) baking dish and set aside.
  • Heat the oil in medium saucepan over medium heat. Add the garlic and cook, stirring constantly, until lightly golden, 1 to 2 minutes. Add the tomatoes, salt, pepper and sugar; cook, stirring frequently, until the tomatoes are softened and starting to burst, 2 to 3 minutes. Remove from the heat and stir in the capers.
  • Scatter the tomatoes around the feta and broil until the feta is softened and browned on top, 3 to 4 minutes (but keep an eye on it as broilers vary greatly.) Serve warm with bread.

8-ounce slab of feta, blotted dry, at room temperature for 30 minutes
2 tablespoons extra-virgin olive oil, plus more for bread
1 tablespoon honey, plus more for drizzling
2 clementines or small blood oranges, peel and pith removed, segmented or cut into rounds
1 tablespoon fresh oregano leaves
Freshly ground black pepper
Toasted rustic bread, for serving

Steps:

  • Heat broiler. In a small baking dish, drizzle feta with oil and brush with honey. Broil, turning once, until bubbly and caramelized, 4 to 6 minutes.
  • Top with oranges and oregano. Season with pepper and drizzle with honey. Serve with oil-brushed bread.

For a broccoli side dish that's all grown up, embrace this brassica's best qualities, like its grassy, earthy sweetness, via the flavor-concentrating powers of a hot oven. Place a crown on the finished florets in the form of briny chunks of feta cheese and a bold blend of sesame, poppy, and sunflower seeds along with cumin.

1 tablespoon sesame seeds
1/2 teaspoon cumin seeds
1 teaspoon poppy seeds
2 tablespoons sunflower seeds
Kosher salt and freshly ground pepper
2 1/2 teaspoons ground coriander
1 head broccoli (about 1 1/2 pounds), head cut into long florets, stems peeled and cut into 1/4-inch slices
1/4 cup extra-virgin olive oil, plus more for drizzling
4 ounces feta, plus 1 tablespoon brine (or white wine)
1/4 teaspoon ground turmeric

Steps:

  • Preheat oven to 425°. Toast sesame seeds in a small dry skillet over medium heat, swirling occasionally, until beginning to brown, about 2 minutes. Transfer to a bowl. Add cumin, poppy, and sunflower seeds to skillet and cook, swirling occasionally, until cumin seeds are fragrant, about 2 minutes. Transfer to bowl with sesame seeds; season with salt and 1/2 teaspoon coriander.
  • Toss broccoli with oil and remaining 2 teaspoons coriander; season with salt and pepper. Spread in a single layer on a baking sheet and roast, flipping once, until charred in spots and tender but not mushy, about 20 minutes. Let cool 15 minutes. Toss with feta brine.
  • Arrange broccoli and feta on a platter. Sprinkle evenly with turmeric and drizzle generously with oil. Top with toasted seeds and serve warm or at room temperature.

GRILLED FETA WITH NUTS



Grilled Feta With Nuts image

This skillet of warmed feta and nuts can tide guests over before dinner or embellish a meal of grilled lamb kebabs, mixed vegetables, pork or chicken. Inspired by saganaki, a fried-cheese appetizer from Greece, the feta here is surrounded by nuts, olive oil, honey and herbs. Thyme, oregano or za'atar adds earthiness to the salty feta and sweet honey, but you could incorporate orange or lemon peel, fresh or dried chile, or any other aromatics you like on spiced nuts. You could also trade the nuts for tomatoes, dates, salami or olives. Whatever you do, be sure to drizzle the herbed honey and oil over each spoonful of feta. 1/3 cup raw almonds, walnut pieces or hazelnuts
1 tablespoon honey
1/2 teaspoon fresh thyme or oregano leaves or za'atar
Black pepper
Grilled bread (or pita) or stone fruit, or both, for serving

Steps:

  • Heat the grill to medium-high. Lightly grease the bottom of a small or medium cast-iron skillet with extra-virgin olive oil.
  • Place the block of feta in the center of the skillet, then scatter the nuts around the feta. Drizzle the feta and nuts with the 2 tablespoons olive oil, plus the honey and thyme. Season generously with black pepper.
  • Place the skillet on the grates, cover the grill, and cook until the feta is soft to the touch and nuts are warm, 8 to 10 minutes. Serve right away with bread or stone fruit, or both.
