  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Spread onion slices in a single layer on the bottom of a baking dish. Season chicken with salt. Place chicken halves, skin-side down, over onion rings.

1 tub (8-oz.) PHILADELPHIA Cream Cheese Spread
2 Tbsp. milk
1 Tbsp. dried Italian seasoning
1 can (14.5 oz.) fat-free reduced-sodium chicken broth, divided
4 small boneless skinless chicken breasts (1 lb.)
1/2 cup each chopped onions and red peppers
1 cup frozen broccoli cuts, thawed, drained
1-1/2 cups instant brown rice, uncooked

Steps:

  • Mix first 3 ingredients until blended; combine 1/2 cup cream cheese mixture and 2 Tbsp. broth until blended. Pour over chicken in shallow dish; turn to evenly coat both sides of each breast. Refrigerate 30 min. to marinate.
  • Heat grill to medium heat. Remove chicken from marinade; discard marinade. Grill chicken 6 to 8 min. on each side or until done (165ºF).

3 cloves garlic, smashed and chopped
1/2 fresh habanero chile, seeded and coarsely chopped
1/2 medium onion, cut into a small dice
1 tablespoon Chinese five-spice powder
1 teaspoon celery salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon dried thyme
Freshly grated nutmeg (about 1/4 teaspoon)
Freshly ground black pepper
1/2 cup soy sauce
2 tablespoons canola oil
2 tablespoons malt vinegar
3 scallions, whites thinly sliced, greens cut on the bias and reserved for garnish
1/2 chicken, cut into breast and leg quarters
Canola oil, for cooking
1/2 medium onion, sliced
Kosher salt
1 cup long-grain white rice
1 cup chicken stock
1 cup coconut milk
2 to 3 sprigs fresh thyme, tied with twine
2 bay leaves
Half a 15-ounce can pigeon peas, drained
1/2 cup fresh cilantro leaves, roughly chopped

Steps:

  • For the chicken: Preheat the oven to 400 degrees F.
  • Add the garlic, habanero, onion, five-spice, celery salt, cinnamon, ginger, thyme, nutmeg and 1 tablespoon black pepper to a food processor and pulse until combined and paste-like. Add the soy sauce, oil, vinegar and scallion whites and puree until well-mixed and smooth. Set aside.
  • Arrange the chicken parts in a baking dish and pour half of the marinade over the top, brushing so that all pieces are coated. Set the remaining marinade aside. Marinate the chicken at room temperature for 15 minutes or refrigerate for up to 4 hours.
  • Heat a cast-iron grill pan over medium-high heat. Place the chicken parts in the pan skin-side down and cook for 7 minutes per side. Place the chicken back in the baking dish and baste with the reserved marinade. Place in the oven and roast until the internal temperature reaches 165 degrees F, 15 to 20 minutes. Note that the baking time for the breast may be shorter than the leg. Remove from the baking dish as finished and let rest for a couple of minutes.
  • For the rice: Coat the bottom of a small pot with the oil and sweat the sliced onions with a pinch of salt over high heat until browned. Add the rice and stir to coat. Add the chicken stock, coconut milk, thyme bundle and bay leaves. Stir and season to taste with salt. Bring to a boil then reduce to a simmer and stir in the peas. Cover and cook for 17 minutes. Turn off the heat then remove the bay leaves and thyme bundle. Fluff the rice and mix in the cilantro and scallion greens.
  • Place a large scoop of rice in the center of each plate and arrange the chicken pieces on top.

AFGHAN RICE PILAF WITH CHICKEN AND YOGURT - BOR PILAU

This recipe comes from Helen Saberi's book - The Afghan Food & Cookery. Pilaf or pilau is a classic Afghan dish. The use of yogurt is also classic and it makes a delicious sauce. Ground red pepper is commonly found in North African & some Asian dishes, if you cannot find it use hot paprika or a mix of regular paprika with a little cayenne added.

1 large onion, finely sliced
6 tablespoons vegetable oil
1 1/2 lbs boneless chicken or 1 1/2 lbs lamb, cut into small chunks
1 -2 garlic clove, peeled and crushed
8 ounces yogurt
salt
1/4-1/2 teaspoon ground red pepper
1 teaspoon coriander powder
1 lb basmati rice
1/4 teaspoon saffron, soaked in about 1 tablespoon warm water
1 teaspoon ground cardamom

Steps:

  • Fry the sliced onion in the oil until soft and golden brown. Add the chicken or lamb pieces and fry until golden brown. Add the garlic and fry for a minute or two. Now add the yogurt, salt, red pepper and ground cilantro. Simmer over a medium heat until the meat is tender (about 40 minutes).
  • Meanwhile wash and soak the rice in plenty of water for about 30 minutes.
  • Bring 5 cups water to a boil in a large pan and add the rice. Bring back to a boil and cook for 2 to 3 minutes, then strain in a colander.
  • Take one half of the rice and put in a large pan. Add the chicken and its juices. Add the remaining half of the rice and s sprinkle the saffron and cardamom and a little more red pepper over it.
  • Cover the pan with a tightly fitting lid and increase the heat for a minute or so to bring back the juices to a boil, then place the pan in a preheated oven at 300°F for about 45 minutes.

Extra-virgin olive oil, for rubbing
2 tablespoons unsalted butter
1 1/2 ounces vermicelli, angel hair, or spaghetti, broken into 2-inch pieces (a scant 1/2 cup)
1 cup long-grain white rice
1 small onion, finely chopped (1 cup)
Kosher salt and freshly ground pepper
2 cups low-sodium chicken or vegetable broth, or water
2 tablespoons pomegranate molasses
1/2 teaspoon ground cinnamon
Chopped pistachios and parsley, for serving
Za'atar, for serving
1 teaspoon minced garlic (from 1 clove)

2 tablespoons fresh lemon juice

Steps:

  • For Eggplant and Rice Pilaf: Prepare grill for direct- and indirect-heat cooking. Rub eggplants with oil to lightly coat. Grill over direct heat, turning a few times, until charred all over, 12 to 15 minutes. Transfer to indirect heat and continue cooking, maintaining a temperature of 400°F, until collapsed and very soft, 18 to 22 minutes more.
  • Meanwhile, melt butter in a medium saucepan over medium-high heat. Add pasta and cook, stirring frequently, until golden brown, 2 to 3 minutes. Add rice and onion; cook, stirring frequently, until they start to turn translucent, 3 to 4 minutes more. Add 1 teaspoon salt, 1/4 teaspoon pepper, and broth. Bring to a boil, then cover, reduce heat to low, and cook until rice is tender and liquid is absorbed, 15 to 18 minutes. Let stand, covered, 10 minutes. Uncover; fluff with a fork.
  • For Tahini Sauce: While rice is cooking, sprinkle garlic with a pinch of salt; mash into a paste with the side of a knife. Transfer to a bowl; add tahini, lemon juice, and 1/4 cup water. Whisk until smooth; season with salt. Stir in more water if needed, a little at a time, until mixture is thin enough to drizzle. (Sauce can be refrigerated in an airtight container up to 3 days; bring to room temperature before serving.)
  • Stir together pomegranate molasses and cinnamon. Slash open eggplants; drizzle with molasses mixture and a few tablespoons tahini sauce. Top pilaf with pistachios, parsley, and za'atar. Scoop flesh from eggplants, spoon over pilaf, and serve with more tahini sauce.

1/2 cup carrot, diced (about 1 small)
1/2 cup onion, diced (about 1 small)
1/2 cup red pepper, diced (about 1/2 a medium)
1/4-1/2 teaspoon salt
2 3/4 cups chicken broth
1/4 cup brown lentils or 1/4 cup green lentil
1/4 cup orzo pasta
fresh ground black pepper
1 cup quick-cooking brown rice

Steps:

  • Heat oil in a heavy-bottomed pot over medium heat. Add carrots, onions, red pepper and 1/4 teaspoon salt. Saute, stirring occasionally until vegetables have softened, about 8 minutes. Lower heat, if necessary, to prevent onions from browning.
  • Add chicken broth and increase heat until boiling. Add lentils and cook 10 minutes, stirring occasionally. Add orzo and pepper to taste. Add another 1/4 teaspoon salt if necessary.
  • Stir in brown rice, reduce heat to medium low and cook, covered, 10 more minutes until all the liquid is absorbed and rice is tender.
  • Fluff with fork and serve.
