This fried basa fish fillet recipe is a great meal to make and serve with a side of rice and some veggies.

2 tablespoons butter, divided
½ cup chicken stock
½ cup heavy cream
juice from ½ lemon
½ teaspoon lemon zest
1 tablespoon mustard
salt, to taste
pepper, to taste
2 basa fish fillets
1 tablespoon olive oil

Steps:

  • Add the butter, chicken stock, heavy cream, lemon juice, lemon zest, mustard, salt, and pepper to a saucepan, and allow everything to simmer at a low heat for a few minutes. Make sure to keep it low - if the sauce begins to boil, it will split. Take the pan off the heat, and allow it to sit and cool slightly.
  • Season the basa fish fillets with salt and pepper.
  • Heat a frying pan to a medium-high heat, then add the olive oil once it becomes hot.
  • Place the basa fillets into the hot pan, and fry for roughly 3 minutes on one side.
  • After 3 minutes and when the fish are coloring slightly underneath, flip both the fish fillets over, and add the butter to the pan. Tilt the pan, and use the melted butter and juices to baste the fish. Fry for another 2 to 3 minutes until the fish is no longer translucent.
  • Take the fish out of the pan, and allow it to rest for a few minutes before serving with the lemon cream sauce.

4 orange roughy, red snapper, catfish or trout fillets (6 ounces each)
6 tablespoons butter, melted, divided
1 tablespoon all-purpose flour
Paprika
Juice of 1 lemon
1 tablespoon minced fresh parsley
2 teaspoons Worcestershire sauce

Steps:

  • Place fish on a broiler rack that has been coated with cooking spray. Drizzle 3 tablespoons butter over fillets; dust with flour and sprinkle with paprika. , Broil 5-6 in. from the heat for 5 minutes or until fish just begins to brown. Combine lemon juice, parsley, Worcestershire sauce and remaining butter; pour over fish. Broil 5 minutes longer or until fish flakes easily with a fork.

2 (4 ounce) white sea bass fillets
1 tablespoon lemon juice
1 teaspoon garlic, minced
1/4 teaspoon salt-free garlic and herb seasoning, minus the garlic
ground black pepper, to taste

Steps:

  • Preheat the broiler (grill).
  • Position the rack 4 inches from the heat source.
  • Lightly spray a baking pan with cooking spray.
  • Place the fillets in the pan.
  • Sprinkle the lemon juice, garlic, herbed seasoning and pepper over the fillets.
  • Broil (grill) until the fish is opaque throughout when tested with a tip of a knife, about 8 to 10 minutes.

8 tablespoons softened butter
3 -5 drops lemon juice
1/8 teaspoon cayenne pepper
1 teaspoon finely chopped dill
1 1/2 lbs firm white fish fillets (haddock, halibut, cod, etc.)
lemon juice
salt and pepper

Steps:

  • Prepare at least several hours before broiling fish (can be made ahead and frozen).
  • Make dill butter by combining first four ingredients and rolling up in plastic wrap or foil.
  • When ready to cook, preheat broiler and spray broiler pan with vegetable oil, or coat with butter.
  • Rinse fish and dry thoroughly.
  • Season with salt and pepper.
  • Place on broiler pan.
  • Sprinkle fish with lemon juice.
  • Place several generous pats of dill butter on fish.
  • Broil on both sides several minutes until fish is opaque and flakes easily with a fork.
  • Don't overcook.

2 tablespoons olive oil
2 tablespoons fresh lime juice
2 teaspoons hot pepper sauce
2 garlic cloves, minced

lime wedge

Steps:

  • Place fish in a shallow dish.
  • Combine cilantro, oil lime juice, pepper sauce and garlic in a small bowl and pour over fish. Cover, marinade in refrigerator 30 minutes or up to 2 hours.
  • Prepare black bean and rice mix according to package directions,
  • Keep warm.
  • Preheat broiler.
  • Remove fish from marinade.
  • Place fish on rack of broiler pan, drizzle with any remaining marinade in dish.
  • Broil 4 - 5 inches from heat 8 to 10 minutes until fish is opaque.
