2 ripe but not overly ripe bananas
2 tablespoons brown sugar
1 tablespoon or so of fresh lime or lemon juice
Sour cream, optional
Chopped nuts, optional

Steps:

  • Preheat broiler. Peel bananas and slice them crosswise into 3/4-inch thick slices. Mix the brown sugar and lime juice and toss this with bananas. Spread the sliced bananas in a shallow baking pan and broil, as close to the heat source as possible, until the sugar has melted into a glaze - 2 to 3 minutes. Transfer to a pretty serving bowl and serve immediately - topped with sour cream and nuts if you wish.

6 ripe bananas (2 1/4 pounds, about 6 ounces each)
1/4 cup fresh lemon juice
1/3 cup dark brown sugar (see note)
1 to 2 tablespoons dark rum (optional)

Steps:

  • Preheat broiler. Peel the bananas and arrange them in one layer in a gratin dish. Pour the lemon juice over them, then roll them in the juice to prevent them from discoloring. Sprinkle them with brown sugar.
  • Place the bananas under the broiler, about 4 inches from the heat, and broil them until they are brown on top, about 4 minutes. Turn the bananas over and place them again under the broiler for 3 to 4 minutes, until brown on top. They should be soft at this point when pierced with a fork.
  • Cool the bananas until they are lukewarm, sprinkle them with the rum, if desired, and serve immediately.

1 cup part-skim ricotta
1/2 teaspoon freshly grated nutmeg
1/4 cup light-brown sugar
1/4 cup granulated sugar
1/8 teaspoon coarse salt
1 1/2 teaspoons pure vanilla extract
4 ripe, firm bananas, peeled

Steps:

  • Preheat broiler, with rack 6 inches from heat source. Mix ricotta and nutmeg in a small bowl. Mix sugars, salt, and vanilla in a small bowl. Cut bananas diagonally 1/4 inch thick, keeping slices in order as you cut. Discard tips.
  • Spread 1/4 cup ricotta mixture in each of four 5-inch-wide by 1-inch-deep baking dishes. Fan 1 banana around edge of each dish, creating a circle. Gently press bananas into ricotta mixture. Using a pastry brush, lightly brush bananas with water, then sprinkle each with 2 tablespoons sugar mixture. Pat sugar into an even layer on top of bananas to prevent the sugar from clumping and burning.
  • Broil until sugar has caramelized and bananas have softened, 3 to 4 minutes. Serve immediately.

4 ripe bananas
1 ½ cups milk chocolate chunks
1 cup creme fraiche
¼ cup grated milk chocolate

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Place bananas on a baking sheet.
  • Broil bananas until skins are black all over, about 8 minutes. Remove from oven. Split skins lengthwise and place chocolate chunks inside the open skins. Broil until chocolate is melted, 2 to 3 minutes.
  • Serve creme fraiche alongside bananas. Sprinkle grated chocolate over the creme fraiche.

2 jars (12 ounces each) apricot preserves
1 cup orange juice
1/2 teaspoon rum extract
12 medium firm bananas, peeled
1 cup sweetened shredded coconut
1 quart peach, vanilla or strawberry ice cream

Steps:

  • In a small saucepan, heat preserves over medium heat until warmed. Remove from the heat; stir in orange juice and extract. Halve bananas lengthwise; cut widthwise into thirds. , Arrange cut side down in an ungreased 15x10x1-in. pan. Drizzle with apricot sauce; sprinkle with coconut. Broil 4 in. from the heat for 4-6 minutes or until coconut is lightly toasted. Serve with ice cream.
