Broccoli Peanut Salad image

There are lots of variations of this Broccoli Salad. I have had similar salads with sunflower seeds or toasted pecans instead of the peanuts.

1/2 cup mayonnaise
3/4 cup sugar
2 tablespoons cider vinegar
1 tablespoon lemon juice
5 cups broccoli florets
1/2 cup raisins
1/2 cup chopped peanuts
1/2 cup chopped red onion
1 -2 slice bacon, cooked crisp and crumbled

Steps:

  • In a small bowl, combine mayonnaise, sugar, vinegar and lemon juice.
  • Chill for an hour or two.
  • In a large bowl, combine broccoli, raisins, peanuts, onions and bacon.
  • Add the dressing mixture; toss to coat.

This is a no-cook, fast and delicious salad that can be made ahead. What a wonderful lunch this makes!! Modified from a recipe that I found in Prevention magazine. Next time I am going to throw in some chopped dried apricots too!

1 lb broccoli floret
3 tablespoons white wine vinegar
3 tablespoons canola oil
1/4 cup peanut butter
1 tablespoon low sodium soy sauce
1 teaspoon splenda artificial sweetener
1/4 teaspoon ginger (I used powdered)
1/4 cup chopped dried cherries (may use cranberries)
1/4 cup chopped dry roasted salted peanut

Steps:

  • In a large bowl, whisk together the vinegar, oil, peanut butter, soy sauce, Splenda and ginger.
  • Cut the broccoli into bite sized pieces and place in the bowl with the dressing.
  • Throw the dried fruit and peanuts into the bowl as well and toss everything together.
  • Cover and refrigerate - can be made up to 2 days in advance.

PEANUT SAUCE:
1 large head broccoli, cut into small florets
1 cup shelled cooked edamame
1/2 cup green onions, thinly-sliced
1/2 cup peanuts
1 batch peanut sauce (recipe below)
Sesame or hemp seeds, for garnish
1/4 cup organic peanut butter
1 tablespoon rice wine vinegar
1 tablespoon soy sauce (if you are gluten-free, use GF soy sauce or tamari)
1 tablespoon honey or agave nectar
1/8 teaspoon sesame oil
1 to 2 tablespoons hot water, as needed to thin the sauce

Steps:

  • Broccoli salad: Heat a large pot of water until it is boiling. Add in the broccoli florets and boil for 30 seconds. Use a strainer to transfer them into a bowl of ice water, which will immediately halt the cooking process. Drain. Then add the remaining ingredients and toss until combined. Serve immediately, garnished with sesame seeds if desired. Peanut sauce: Whisk all ingredients together until combined. If the dressing is too thick, whisk in hot water a tablespoon at a time until it reaches the consistency you desire.

2 heads broccoli, broken into florets
6 tablespoons apple cider vinegar
½ cup smooth natural peanut butter
¼ cup prepared yellow mustard
¼ cup white miso
2 tablespoons sesame oil
2 tablespoons water
3 cloves garlic, minced
1 (1 inch) piece fresh ginger, minced
½ teaspoon Korean red chili pepper flakes (gochugaru)
4 green onions, chopped
3 carrots, minced
1 bunch fresh cilantro, leaves chopped

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add broccoli, cover, and steam until tender, about 10 minutes.
  • Whisk vinegar, peanut butter, mustard, miso, sesame oil, water, garlic, ginger, and red pepper flakes together in a large bowl until dressing is smooth; stir in green onions.
  • Mix steamed broccoli, carrots, and cilantro into dressing until evenly coated.

1 tablespoon honey or 1 tablespoon agave nectar
3/4 cup pineapple juice (6 ounce can)
1/2 cup raisins
1/2 cup raw sunflower seeds
1/4 cup onion, chopped fine
2 large head of broccoli, stems chopped and florets cut to bite size

Steps:

  • Whisk peanut butter, honey and pineapple juice in a large bowl until smooth.

1/2 cup roasted, unsalted peanuts
1/2 cup olive oil
1/4 cup red wine vinegar
1/2 cup water
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper

Steps:

  • Bring a medium saucepan of salted water to a boil. Blanch broccoli florets about 3 minutes. Immediately refresh in a bowl of iced water and drain.
  • Grind nuts in a blender or food processor until fine, being careful not to over process. Whisk nuts with remaining ingredients in a bowl until a vinaigrette is formed. Add broccoli, toss, and serve. The tossed salad may be stored in refrigerator for 6 to 8 hours.

6 cups Broccoli florets
1/2 cup Sour Cream
1 tablespoon White Wine Vinegar
2 tablespoons Fresh OJ
1/4 teaspoon Black Pepper
1/4 cup Dired Cherries (chopped)
1/3 cup Roasted Peanuts (chopped)

Steps:

  • In a large pot, bring 4 qt. of water with salt to a boil. Add the broccoli, and cook until just tender (3 minutes). In a large bowl, fill with water and ice cubes. Add broccoli to ice bath; then drain. In another bowl, whisk sour cream, vinegar and oj. Season with pepper and 1/4t salt. Toss broccoli, cherries and 1/4C peanuts with dressing. Garnish with remaining peanuts.

1/2 C chopped fresh red onion
1/2 C dark raisins
1/2 C chopped roasted salted peanuts

1/2 C nonfat or light mayo

1 T honey
pinch ground ginger
pinch ground white pepper

  • 1. Peel the tough outer skin from the broccoli stalk and discard. Chop the stalks into 1/2" pieces and cut the tops into small florets. (there should be about 6 C of broccoli florets and stems) 2. Combine broccoli, onions, raisins, and peanuts in a L bowl and toss to mix well. 3. Combine the dressing ingredients in a small bowl and stir to mix well. Add the dressing to the broccoli mixture and toss to mix well. 4. Cover the salad and refrigerate for several hours or overnight

12 oz pkg. broccoli slaw, chopped to bite size pieces
1 bunch green onions, cleaned and sliced some tops too
1/3 c canola oil
1 tsp sesame seeds
3 oz pkg. ramen noodles, crushed,( save seasoning pkg. for another time)
1/4 c granulated sugar
1/4 c seasoned rice vinegar or white vinegar
1 Tbsp lite soy sauce
1 tsp dark sesame oil
1/2 c honey roasted peanuts
1/2 c honey roasted cashews, chopped slightly
1/2 tsp crushed red pepper flakes, optional

Steps:

  • 1. Combine onions and chopped broccoli slaw in a large bowl. Heat 2 Tablespoons of the oil in a medium skillet over medium-low heat. Add sesame seeds and crushed noodles. Cook and stir until noodles begin to turn golden brown. Add to broccoli mixture.
  • 2. Whisk together sugar, vinegar, soy sauce,sesame oil and remaining canola oil in a small bowl. Pour dressing over broccoli mixture. Add all the nuts and red pepper,if desired. Toss until coated evenly.
