4 to 5 pounds broccoli
4 garlic cloves, peeled and thinly sliced
Good olive oil
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 teaspoons grated lemon zest
2 tablespoons freshly squeezed lemon juice
3 tablespoons pine nuts, toasted
1/3 cup freshly grated Parmesan cheese
2 tablespoons julienned fresh basil leaves (about 12 leaves)

Steps:

  • Preheat the oven to 425 degrees F.
  • Cut the broccoli florets from the thick stalks, leaving an inch or two of stalk attached to the florets, discarding the rest of the stalks. Cut the larger pieces through the base of the head with a small knife, pulling the florets apart. You should have about 8 cups of florets. Place the broccoli florets on a sheet pan large enough to hold them in a single layer. Toss the garlic on the broccoli and drizzle with 5 tablespoons olive oil. Sprinkle with the salt and pepper. Roast for 20 to 25 minutes, until crisp-tender and the tips of some of the florets are browned.
  • Remove the broccoli from the oven and immediately toss with 1 1/2 tablespoons olive oil, the lemon zest, lemon juice, pine nuts, Parmesan, and basil. Serve hot.

This easy broccoli and cheese recipe is made with frozen broccoli spears and a simple sauce made with American cheese.

1 pound frozen broccoli spears or florets (or fresh broccoli florets)
12 ounces shredded or cubed American cheese
2/3 cup milk
1/2 teaspoon onion powder
Kosher salt, to taste
Freshly ground black pepper, to taste
Dash ground cayenne or hot sauce, optional

Steps:

  • Gather the ingredients.
  • Steam or boil broccoli following package instructions.
  • If using fresh broccoli, steam in a covered saucepan over simmering water for 4 to 5 minutes, just until tender.
  • In a medium saucepan or saucier over medium heat, combine cheese, milk, and onion powder. Heat, stirring frequently, until cheese is melted, and mixture is smooth, about 7 minutes. Add salt and pepper to taste, plus ground cayenne or hot sauce if desired.
  • Pour sauce over broccoli arranged on a serving platter or in a bowl, or serve sauce separately.

This is an easy recipe for a delicious broccoli side that takes just a few minutes to make.

1 pound broccoli, separated into florets
2 teaspoons fresh lemon juice
2 tablespoons water
3 tablespoons butter
2 cloves garlic, minced
1 pinch salt
2 teaspoons lemon juice
1 teaspoon ground black pepper

Steps:

  • Place broccoli florets in a large skillet over medium heat. Stir 2 teaspoons lemon juice into water in a small bowl and pour the mixture into the skillet. Cover and steam until broccoli is bright green and tender, 10 to 15 minutes.
  • While broccoli is steaming, melt butter in a small saucepan over medium-low heat and stir in garlic and salt; turn heat to low and let the garlic gently fry until golden brown, about 8 minutes. Drain water from cooked broccoli and return to skillet; sprinkle with 2 more teaspoons lemon juice and the butter and garlic mixture. Sprinkle broccoli with black pepper, toss to combine, and season with a bit more pepper if desired.

Delicious fresh salad. I'm putting it here for safe-keeping and easy sharing. I usually use half the sugar in the recipe....just because we need to cut back on sugar....

1 1/2 lbs broccoli
1/2 cup bacon bits
1 cup cheddar cheese, shredded
1/2 cup raisins
1/2 cup purple onion, chopped
1 cup Hellmann's mayonnaise
1/2 cup sugar
3 teaspoons cider vinegar

Steps:

  • Cut the brocolli into small pieces, I use some of the tender stems also.
  • Combine the bacon bits, broccoli, cheese, rasins, and onion.
  • For the Dressing:.
  • Mix together in a small bowl the mayonaise, sugar and vinegar. Pour this mixture over the Brocolli mixture. Chill before serving.
