4 large egg whites
2 cups chopped fresh broccoli florets
1/4 cup water
2 tablespoons butter
3 tablespoons all-purpose flour
1/4 teaspoon cayenne pepper
3/4 cup fat-free milk
2 tablespoons grated Parmesan cheese
1 teaspoon ground mustard
1/2 teaspoon salt
1/4 teaspoon pepper
1 large egg yolk, beaten
1/4 teaspoon cream of tartar

Steps:

  • Let egg whites stand at room temperature 30 minutes. Grease a 1-1/2-qt. souffle dish; dust lightly with flour., Preheat oven to 350°. Microwave broccoli and water, covered, on high until broccoli is tender, 2-3 minutes. Let stand for 5 minutes; drain. Pulse broccoli in a food processor until blended., In a small saucepan, melt butter over medium heat. Stir in flour and cayenne pepper until smooth. Gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Transfer to a large bowl; stir in cheese, mustard, salt, pepper and broccoli. Whisk a small amount of hot mixture into egg yolk; return all to bowl, whisking constantly. Cool slightly., In another bowl, beat egg whites with cream of tartar until stiff but not dry. With a rubber spatula, gently stir a fourth of the egg whites into broccoli mixture until no white streaks remain. Fold in remaining egg whites. Transfer to prepared dish. Bake until top is puffed and center appears set, 30-35 minutes. Serve immediately.

3 large eggs
4 tablespoons butter, divided
2 bunches broccoli
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups 2% milk
2 cups shredded cheddar cheese, divided
1 teaspoon Dijon mustard
2 tablespoons dry bread crumbs

Steps:

  • Separate eggs; let stand at room temperature for 30 minutes. Grease a 2-1/2-qt. souffle dish with 1 tablespoon butter; set aside., Cut broccoli into florets; peel and chop stems. Place broccoli in a steamer basket; place in a Dutch oven over 1 in. of water. Bring to a boil; cover and steam for 4-6 minutes or until crisp-tender., In a large saucepan, melt remaining butter. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add 1-1/2 cups cheese and mustard; stir until cheese is melted., Remove from the heat. Stir a small amount of hot mixture into egg yolks; return all to the pan, stirring constantly. Stir in broccoli. Allow to cool slightly., In a large bowl, beat egg whites until stiff peaks form. With a spatula, stir a fourth of the egg whites into broccoli mixture until no white streaks remain. Fold in remaining egg whites until combined. Transfer to prepared dish. 1 (14 ounce) bag frozen chopped broccoli, thawed
¼ cup margarine
¼ cup all-purpose flour
1 cup milk
3 eggs, beaten
⅔ cup mayonnaise
3 tablespoons chopped onion
salt and ground black pepper to taste
½ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add broccoli, cover, and steam until tender, 2 to 4 minutes.
  • Melt margarine in a saucepan over medium heat. Add flour and stir until mixed. Slowly add the milk, stirring to prevent lumps. Cook until white sauce is thickened, about 10 minutes.
  • Combine broccoli, eggs, mayonnaise, and onion in a baking dish; cover with white sauce and stir to combine.
  • Bake in preheated oven for 30 minutes. Sprinkle Cheddar cheese on top and bake until set, about 15 minutes more.

Butter flavored cooking spray
Granulated sugar
1/3 cup lime curd (recommended: Dickenson's)
1 container (99g) fat-free vanilla pudding (recommended: Kraft Handi-Snacks)
4 egg whites
Powdered sugar
2 thinly cut lime slices, halved, coated in granulated sugar

Steps:

  • Preheat oven to 400 degrees F. Spray 4 (6-ounce) ramekins with butter flavored cooking spray. Lightly coat inside of ramekins with sugar; set aside.
  • In a small bowl, stir together lime curd and vanilla pudding. Set aside.
  • Place egg whites in a medium bowl. Use an electric mixer to beat egg whites to stiff, but not dry, peaks.
  • Stir 1/4 of egg whites into bowl with lime mixture. Spoon mixture over bowl with egg whites and gently fold together until just combined.
  • Divide among ramekins. Place on baking sheet and bake in preheated oven for 20 minutes or until risen and golden brown.
  • Serve immediately garnished with a dusting of powdered sugar and half of a sugared lime slice.

1 pound sierra fish, skinned, boned, scaled, cut into 1-inch cubes (can substitute pompano or snapper)
1 ounce 100 percent agave tequila
4 kaffir lime leaves, de-stemmed, chiffonaded into 1/16-inch ribbon
1 jalapeno, de-stemmed, minced with the seeds
1 onion, sliced
4 limes, juiced
1 tablespoon soy sauce
Salt and black pepper
Nopal Salad, recipe follows
Cilantro Agave Vinaigrette, recipe follows
1/2 cup corn tortillas, cut into 1/16-inch ribbon, fried crisp, for garnish
Grapeseed oil, to cook
1 tablespoon minced ginger
2 shallots, minced
2 cups 1/4-inch strips nopal
1/2 cup cilantro-agave vinaigrette, recipe follows
1/2 pound mixed field greens
Salt and freshly ground black pepper
2 cups washed, dried, and picked cilantro
2 cloves garlic
2 tablespoons agave syrup
1 tablespoon Dijon mustard
2 limes, juiced
2/3 cup grapeseed oil
Salt and black pepper

Steps:

  • In a bowl, mix everything together. Let sit, refrigerated or in another bowl of ice, for 10-15 minutes. Stir and check for seasoning.
  • Place the salad in the middle of 4 serving plates and drizzle the cilantro vinaigrette around. Top salad with a mound of fish and fried tortilla crisps.
  • In a saute pan coated lightly with oil, saute the ginger and shallots for 2 to 3 minutes until lightly brown. Add the nopal and heat thoroughly. Season and add the vinaigrette. Place the greens in a large bowl and toss with warm vinaigrette. Check for flavor.
  • In a blender, add cilantro, garlic, syrup, Dijon, and juice, and blend at high speed. Slowly add the oil to emulsify and season with salt and pepper.

4 lamb racks, loin taken off the bone, silver skin removed
1 cup canola oil
8 cloves garlic
4 slices ginger
4 Thai bird chiles
6 shallots
1/4 cup fresh lime juice
Salt and black pepper to taste
1 1/2 cups roasted peanuts
1/4 cup fried shallots
2 cloves garlic
5 Thai bird chiles
1 tablespoon minced galangal
1 tablespoon sugar
1 teaspoon kosher salt
2 limes, juiced
4 kaffir lime leaves
1/4 cup sweet soy sauce
2 cups water
1 cup blanched haricots verts
1 cup bean sprouts
1/2 cup shredded carrots
1/2 cup red bell pepper, julienned
1/2 cup Thai basil leaves
1/4 cup sliced scallions
1/3 cup kaffir lime-peanut sauce
Salt and black pepper to taste

Steps:

  • In a food processor, puree canola oil, garlic, ginger, chiles, shallots and lime juice and marinate lamb for at least 6 hours refrigerated, preferably overnight. Grill until done, medium rare, 140 degrees internal temperature.
  • KAFFIR LIME-PEANUT SAUCE: In a food processor, combine all. Add water. Check for seasoning. Cook slowly, about 30 minutes, until sauce consistency is achieved.
  • GADO-GADO SALAD: In a large bowl toss with sauce. Check for seasoning. Garnish with Thai basil leaves.

2 (10-ounce) packages frozen chopped broccoli
1/4 cup butter
1/4 cup flour
2 cups milk
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon grated nutmeg
6 egg yolks beaten
1/4 teaspoon cream of tartar
8 egg whites beaten stiff

Steps:

  • Preheat oven to 350 degrees. Cook chopped broccoli then set aside. Melt butter in saucepan, stir in flour and cook over high heat for 2 minutes. Remove from heat. Add milk, whisk vigorously. Return to heat, stirring until thick and smooth, continue to stir while adding cheese and spices. Remove from heat and add beaten egg yolks little by little -- do not boil or mixture will curdle. Add drained broccoli and set the mixture aside. Beat the cream of tartar with the egg whites with until they are stiff. Fold in 1/3 of the whites to the broccoli mixture. Fold in the remaining egg whites.
  • Pour mixture into an 8 cup buttered souffle dish and bake in the preheated 350-degree oven for 45 minutes.
