BROCCOLI IN GARLIC SAUCE

Chinese take-out style broccoli in garlic sauce. Delicious and quick and easy to make!

1/2 cup vegetable broth or water
2 tbsp Chinese rice wine or sake
2 tbsp soy sauce
1 tbsp dark soy sauce
1 tsp sesame oil
1 tbsp sugar
4 cloves garlic, minced
1 tbsp corn starch mixed in 2 tbsp water
1/4 tsp white pepper
optional: chili oil or fresh chiles to taste
1 tsp oil
1 lb broccoli, cut into florets and tender portion of stems chopped
3 scallions, sliced
1/4 cup thai basil or sweet basil

Steps:

  • Mix all the sauce ingredients together and set aside.
  • Heat a wok or large skillet over high heat until lightly smoking. Add the oil and then the scallions. Fry for 1 minute. Add the broccoli and fry for 2-3 minutes, or until the broccoli is a vibrant green color and charring in spots.
  • Add the sauce, and bring to a simmer. Let simmer until the sauce has thickened and the broccoli is as tender as you like. Turn off heat and add the Thai basil. Garnish with scallion greens and serve immediately!

13 cups fresh broccoli florets (about 2-1/2 pounds)
3 tablespoons olive oil
5 garlic cloves, minced
3/4 teaspoon Italian seasoning
1/4 teaspoon salt

Steps:

  • In a Dutch oven, bring 1/2 in. of water to a boil. Add broccoli; cover and cook for 3-5 minutes or until crisp-tender; drain. Mix remaining ingredients; toss with broccoli.

1 head garlic, peeled (about 16 cloves)
1 cup good olive oil
1 teaspoon crushed red pepper flakes
1 teaspoon kosher salt
4 stalks broccoli, cut into florets (8 cups of florets)
2 tablespoons soy sauce

Steps:

  • Put the garlic cloves and oil in a small heavy-bottomed saucepan. Bring to a boil and cook uncovered over low heat for 10 to 15 minutes, until the garlic is browned and tender. Turn off the heat and add the red pepper flakes and 1/2 teaspoon salt. Immediately pour into a heat-proof container to stop the cooking. Allow to cool to room temperature.
  • For the salad, blanch the broccoli florets in a large pot of boiling salted water for 2 to 3 minutes, until crisp-tender. Drain well and immerse immediately into a large bowl of ice water until the broccoli is cooled. This process stops the cooking and sets the bright green color. Drain well.
  • In a large bowl, toss the broccoli with 1/2 teaspoon salt, 1/4 cup of the oil used to cook the garlic, the soy sauce, and 8 or more cloves of cooked garlic. Taste for seasonings and serve cold or at room temperature.

1 bunch broccoli
1 tablespoon dark soy sauce
3 1/2 tablespoons Chinese oyster sauce
Pinch of sugar
2 tablespoons rice vinegar
1 tablespoon Oriental sesame oil
1 tablespoon vegetable oil or peanut oil
1 tablespoon finely minced garlic

Steps:

  • Cut small, uniform-size flowerets from the stalks of broccoli. Peel the stalks and slice them on an angle about half an inch thick.
  • Combine the soy sauce, oyster sauce, sugar, vinegar and sesame oil in a bowl and set aside.
  • Heat the vegetable oil in a wok or a skillet. Add the garlic, then the broccoli flowerets and stem pieces, and stir-fry until crisp-tender, three to five minutes. Pour in the reserved sauce mixture, stir-fry briefly, then serve.

One of my favorites from Weight Watchers. Also great if you add cooked chicken or tofu, bamboo shoots, and water chestnuts.

4 cups broccoli florets
3 garlic cloves, minced
1/2 cup low sodium chicken broth
3 tablespoons sake
2 tablespoons low sodium soy sauce
2 tablespoons oyster sauce
1 tablespoon cornstarch
2 teaspoons sugar or 2 teaspoons Splenda sugar substitute
1 tablespoon oil (for cooking)

Steps:

  • Combine broth, sake, soy sauce, oyster sauce, cornstarch and sugar in a bowl & set aside.
  • Heat a large nonstick wok or skillet over medium heat; add oil. Once the oil is warm, add garlic and stir-fry until fragrant. Add the broccoli (and any other vegetables if desired) and stir-fry for 3 minutes or so, until slightly tender. Add the sauce mixture and stir constantly until sauce boils and thickens. Serve once sauce and broccoli reach desired thickness and tenderness.
