GRAPEFRUIT VINAIGRETTE WITH GREENS OR BROCCOLI
I came across a grapefruit vinaigrette, served with stuffed beet greens, in Anya von Bremzen's "The New Spanish Table" and have adapted it. I loved the idea of this vinaigrette as an accompaniment to greens, such as chard or beet greens, but my favorite is broccoli.

Steps:
- Squeeze 1/2 of the grapefruit. Measure out 1/3 cup of juice and place it in a small saucepan. Add the honey or agave and bring to a boil over medium-high heat. Reduce to 1/4 cup and remove from the heat. Whisk in salt, vinegar, and the oils.
- Cut away the peel and pith from the remaining grapefruit half. Cut the sections away from the membranes that divide them and chop fine. Stir into the vinaigrette.
- Steam the broccoli for 4 minutes and transfer to a platter or to plates. Spoon the vinaigrette over the florets and serve.

LAVASH PIZZA WITH GREENS, BABY BROCCOLI AND MUSHROOMS
I used a mix of packaged sturdy greens and baby broccoli for this substantial pizza, but you could also use rapini.

- Bring a large pot of generously salted water to a boil. Add the greens and the broccoli tops. Blanch for three minutes, then transfer to a bowl of ice water and drain. Squeeze out excess water and chop. Set aside.
- Heat the oven to 375 degrees, preferably with a pizza stone in it. Heat 1 tablespoon of the olive oil over medium-high heat in a large, heavy nonstick pan. When the oil is hot, add the mushrooms. Cook, stirring or shaking often in the pan, for two minutes until they begin to soften. Add the garlic and rosemary, and salt and pepper to taste. Cook, stirring, for another 30 seconds to a minute until fragrant. Add the greens, stir together for a minute and remove from the heat. Season the mixture to taste with salt and pepper.
- Place the lavash on a baking sheet, and sprinkle on the cheese in an even layer. Top with the greens. Drizzle on the remaining olive oil, and place the pizza in the oven. Bake 10 to 15 minutes, or until the edges of the lavash are crisp and browned. Remove from the heat, cut in half or into squares and serve.

BROWN RICE FUSILLI WITH BROCCOLI RABE OR GREENS
This is based on a classic dish from Puglia, in Southern Italy. I love the bitter flavor of the broccoli raab (my 10-year old son and his friends did not). Broccoli raab is a member of the brassica family and brings to the dish the cancer fighting phytonutrients that this family of vegetables is famous for, plus a substantial wallop of calcium, potassium, folate, and vitamins C, K, and A.

Steps:
- Bring a large pot of water to a boil. Trim off the bottoms of the broccoli raab stems and slice the remaining part of the stems about 1/2 inch thick. When the water comes to a boil, season generously with salt and add the broccoli raab. Cook for 4 minutes, or until tender, and transfer using a spider or a slotted spoon to a bowl of ice cold water. Let sit for a few minutes and drain. Squeeze out water and chop fine. Set aside the water for the pasta.
- Heat the oil over medium heat in a large nonstick skillet and add the garlic and red pepper flakes. Cook until the garlic smells fragrant, 30 seconds to a minute, and add the broccoli raab. Toss together for a minute, season to taste with salt, and remove from the heat but keep warm.
- Bring the water back to a boil and add the fusilli. Cook al dente, about 9 minutes. Stir 1/2 cup of the pasta water into the greens. Drain and toss the pasta with the greens and cheese. Serve at once.

BROCCOLI GREENS
If you're fortunate enough to have broccoli in the garden, or know someone who does, this is a special treat. It's quite tasty and not bitter, unlike most greans.

- 1. In your cast iron skillet, caramelize the onion in the bacon grease. Meanwhile, stack and roll a handful of leaves, cut lengthwise once and then chop (1/2") crosswise.
- 2. Remove the onion to the side, dump all of your leaves into the skillet, stir until they begin to wilt, reduce heat, add 1/2-3/4 C of water and cover. Stir every two to three minutes. When they are tender enough for your liking, add the garlic, onion and steak seasoning (here in SET, we use TexJoy). Remove from heat.
BROCCOLI-POTATO SOUP WITH GREENS
Steps:
- 1. In large saucepan combine potatoes and broth. Bring to boiling; reduce heat. Simmer, covered, 8 minutes. Mash slightly. Add broccoli and milk; bring just to simmering. 2. In medium bowl toss flour with cheese; gradually add to soup, stirring cheese until melted. Season to taste with black pepper. Divide among shallow serving bowls. Top with greens and additonal cheese. Serves 4.
