1/2 cup chopped sweet onion
3 garlic cloves, minced
2 tablespoons all-purpose flour
1 can (14-1/2 ounces) reduced-sodium chicken broth or vegetable broth
4 cups fresh broccoli florets
1/4 to 1/2 teaspoon dried tarragon
1/4 teaspoon dried thyme
1/8 teaspoon pepper
1-1/2 cups 1% milk
1-1/4 cups shredded reduced-fat cheddar cheese, divided

Steps:

  • In a large nonstick saucepan coated with cooking spray, saute onion until tender. Add garlic; cook 1 minute longer. Stir in flour until blended. Gradually whisk in broth. Bring to a boil; cook and stir for 1-2 minutes or until slightly thickened. , Add the broccoli, tarragon, thyme and pepper; return to a boil. Reduce heat; cover and simmer for 10 minutes or until broccoli is tender. Add milk; cook, uncovered, 5 minutes longer. Remove from the heat; cool to room temperature., In a blender, process soup in batches until smooth. Return all to the pan; heat through. Reduce heat. Add 1 cup of cheese; stir just until melted. Serve immediately. Garnish with remaining cheese.

1/2 medium onion, chopped fine
6 tablespoons margarine
8 tablespoons flour
4 cups 2% low-fat milk (one quart)
1 bunch broccoli, stems and leaves removed
1 cup chicken broth or 1 cup water
8 slices American cheese
salt & pepper

Steps:

  • In a large pot over medium heat, cook the onions in the margarine until soft.
  • Stir in the flour and cook (but do not brown) for 1 minute, stirring frequently.
  • Whisk in the milk, reduce heat and stir occasionally.
  • Meanwhile, chop the broccoli florets into small pieces, place in a small saucepan with the broth (or water) and bring to boil over medium-high heat. Reduce heat to medium-low, cover and simmer until tender (about 6-8 minutes).
  • As the milk mixture thickens, stir in the slices of American cheese and season with salt and pepper to taste.
  • When the broccoli is tender, add it (including the cooking liquid) to the thickened cheese mixture. Stir well to combine and serve immediately.

⅔ cup chopped onion
1 tablespoon margarine
5 cups chicken broth
1 (8 ounce) package wide egg noodles
1 (10 ounce) package frozen chopped broccoli
1 clove garlic, minced
6 cups milk
12 ounces shredded American cheese

Steps:

  • In a large saucepan, saute onion and garlic in butter or margarine over medium heat till tender.
  • Add broth, and bring to a boil. Reduce heat, and add noodles. Cook for 3 to 4 minutes. Stir in broccoli. Cover, and cook for 5 minutes.
  • Stir in milk and cheese. Heat slowly, stirring, till cheese melts. DO NOT BOIL. Serve immediately.

1 large head of broccoli, chopped
1 onion, chopped
1 large leek, chopped white and light green parts
2 medium potatoes, peeled and diced
1 celery rib, chopped
1 cup chopped carrot
2 garlic cloves, minced
2 tablespoons chicken soup base
1/4 teaspoon pepper
3 tablespoons butter
1/4 cup flour
1 cup fat-free half-and-half, can use regular
2 cups shredded gouda cheese (any mild cheese is good too) or 2 cups cheddar cheese (any mild cheese is good too)
salt, to taste

Steps:

  • Place broccoli, onions, leeks, potatoes, celery, carrots, garlic, soup base and pepper in a large soup pot. Add enough water to just cover.
  • Bring to a boil; reduce heat and simmer for 20-25 minutes or until everything is tender.
  • Using an immersion blender (or use a food processor or blender) puree.
  • Retun to pot.
  • In a small saucepan, melt butter. Whisk in the flour and cook for about 2 minutes, stirring constantly.
  • Add the butter/flour roux to the soup pot.
  • Add half and half and cheese. Heat gently to melt cheese and thicken, stirring very often.
  • Add salt and/or more pepper to taste.

one potato masher
one 8 inch saute pan
one wooden spoon or large metal stirring spoon
one ladle for serving
Ingredients:
2 large heads of fresh Broccoli, cut up (discard woody stem)--or--three 12 oz. packages of fresh broccoli florettes
2 quarts water
1 teaspoon salt (I like either Kosher or Sea Salt-don't use iodized salt)
4 tablespoons butter
2 cloves garlic, minced
½ teaspoon salt
¼ teaspoon black pepper
½ celery stalk, finely diced (stem should only be about 3-4 inches long)
4 chicken boullion cubes
4 ounces fresh crimini mushrooms
2 tablespoons butter
1 clove garlic, minced
¼ teaspoon salt
¼ cup red wine (pick one you like to drink)
½- ¾ cup of cubed Velveeta cheddar cheese(or more if you want :-) )
¼ cup Sour cream
Heavy cream (add to taste and to adjust thickness)
1/4 to 1/2 cup of grated extra sharp cheddar cheese

Steps:

  • Boil broccoli in water in the stock pot, with 1 teaspoon of salt until just tender, but not mushy. Remove pot from heat, fish out and reserve about 3/4 cup of broccoli florettes to add to the finished soup. DO NOT DRAIN THE WATER OFF mash broccoli in the water with a potato masher. Return to burner, turn down to simmer. In a sauté pan, melt 4 tablespoons butter until it is fragrant and starting to bubble, then add 2 cloves minced garlic, celery, boullion cubes, ¼ teaspoon salt, and ¼ teaspoon pepper, sauté over medium heat until celery is starting to turn transparent, and the mixture becomes golden brown. Pour mixture into the broccoli and water. In the same sauté pan, melt 2 tablespoons butter over medium-high heat, add one clove minced garlic, salt and crimini mushrooms, sear them on both sides to the point that they are slightly carmelized. Add mushrooms to soup pot Add red wine, cubed Velveeta, sour cream and heavy cream to soup pot, stirring often until cheese melts completely. Salt and pepper to taste. Ladle into individual bowls, cups or ramekins, garnish the reserved broccoli florettes, and with shredded extra sharp cheddar cheese (yellow looks better than white), and serve.

1 (8 ounce) package processed cheese, cubed

  • In a large pot over medium heat, combine broth, broccoli, onion, carrots and bay leaf. Bring to a boil, then reduce heat and simmer until vegetables are tender. Remove bay leaf. (At this point, you may remove the broccoli stalks, carrots and onion and puree in a food processor, then return them to the pot, if desired.)

1 bunch broccoli or 2 (10 ounce) packages frozen broccoli
3 cups chicken stock
1/2 cup chopped onion
4 tablespoons butter
5 tablespoons flour
1 quart half-and-half
salt and pepper
1 cup grated cheese (optional)

Steps:

  • Cook broccoli in stock with onions until soft.
  • Place in blender and blend quickly.
  • Leave small pieces of broccoli.
  • Make a roux using butter and flour.
  • Cook 3 minutes, stirring constantly.
  • Add broccoli and stock to roux.
  • To avoid lumps, stir constantly until thickened.
  • Thin to preferred consistency with cream.
  • Add seasonings (and cheese) and serve.

A friend gave me this recipe 32 years ago. I don't know where she got the recipe. My version of it adds cheese. For best results use fresh broccoli, real butter, quality cheese.

4 cup(s) broccoli florets
2 cup(s) tap or filtered tap water
1 cup(s) half and half or milk
1 teaspoon(s) better than broth or chicken boullion for every cup of liquid
1 tablespoon(s) tarragon, dried
1 medium grated carrot
1 medium onion, diced
4 clove(s) garlic, minced
1/4 cup(s) parmesan cheese, grated
1/2 to 1 cup(s) cheddar cheese
1/4 cup(s) butter
1/4 cup(s) all purpose flour
1 - 2 tablespoon(s) olive oil, extra virgin

Steps:

  • 1. In two steps prep the broccoli, peel toughest part of stem then dice into cubes. Cut off then dice the stem off the broccoli florets. Trim the broccoli florets to small pieces, set aside in bowl.
  • 2. Boil the diced broccoli stems with a little salt, eiher use 2 cups of water or just add enough water to cover the stems and cook until semi tender then add the broccoli florets with 1 teapoon of Better Than Broth for each 1 cup (8 oz) of liquid added. When the broccoli florets are just tender, use a hand blender to blend out the broccoli. **Remove 1 or so cups of the florets, not the stem and add after blending if some whole florets are preferred in your soup.
  • 3.(2 options): Either boil the grated carrot and add or add after blending the soup if you prefer the texture of the grated carrot in the soup.
  • 4. Saute diced onion in olive oil until translucent, add the minced garlic, attentively saute' about 3 minutes stirring making sure the garlic does not burn. Add to the soup pot.
  • 5. Add 1 Tablespoon of dried Tarragon.
  • 6. The Roux: Melt butter in saute' pan with flour, making roux stirring a few minutes until golden brown, slowly add the half and half or milk until thickens adding additional half and half or milk as needed for consisitency, add 1/2 to 1 cup grated cheddar cheese stirring until cheese has melted. Then ladle some of the soup into the cheese sauce stirring, tempering adding several ladles of soup, each time stirring. Once tempered add the sauce to the soup pot and stir well. **If you prefer to stay with the classc roux of equal butter, flour and liquid that is an option. However, I use a cube or 1/2 cup of butter when I double the recipe.
  • 7. Add 1/4 cup grated parmesan cheese. I tend to take it easy on the salt when adding cheese, but I do add a little salt at each step. *Making adjustments: to thicknen: cut up more broccoli stems boiling until tender in salt water (in a separate pan), then hand blending and adding, stirring into the soup. This soup gets devoured in our home, so I double this recipe for my family.

8 ounces broccoli
2 tablespoons butter
1 onion, chopped
2 leeks, rinsed and chopped (whites only)
2 tablespoons oats (whizzed in blender to a fine powder)
20 ounces milk
20 ounces vegetable stock (cube or make your own using ingredients below)
salt and pepper, to taste
6 ounces cream cheese
1 stalk celery, trimmed, cut in half
2 carrots, trimmed, cut in half lengthwise
2 small onions, unpeeled, cut in half
1/2 cup fresh parsley (do not chop)
1/2 cup celery leaves (do not chop)
1/4 teaspoon black peppercorns
2 bay leaves
1 teaspoon salt
4 cups cold water

Steps:

  • MAKE VEGGIE STOCK FIRST (if you are using the homemade version). Simply place all the ingredients in a saucepan, cover with a lid and bring to a boil. Boil for 30 minutes. Strain and discard all the solids. The stock is now ready for use.
  • Trim the broccoli into tiny florets of 1/4 inch and rinse to remove any dust and dirt. Chop the stalk parts quite small also but keep separate from the florets.
  • In a large saucepan, melt butter. Add the onions, leeks and broccoli stalks (you'll be adding the florets later). Stir well then cover the pan and leave the veggies to sweat for 10 minutes.
  • Stir in the oats then add the milk, a little at a time, stirring well after each addition.
  • When all the milk is in, add the veggie stock. Stir well and season as necessary. Simmer gently for a further 10 minutes. Turn off the heat and allow the soup to cool for about 10 minutes.
  • In the meantime, steam the broccoli florets for exactly 4 minutes.
  • Pour the soup and the cream cheese into a food processor and blend until smooth.
  • Return the soup to the pan (which you have rinsed out), add the broccoli and reheat gently.
  • Check for seasoning.
  • Serve with toasted croutons or oatcakes.

4 heads broccoli, stems removed and discarded, and florets cut into bite-size pieces
Pinch of nutmeg
12 ounces mild cheddar cheese, shredded (about 3 cups)
Salt and pepper
2 cups vegetable broth

Steps:

  • 1. In a large pot or Dutch oven, melt butter over medium heat. Add the onions and cook for 3 to 4 minutes, until they begin to soften. Sprinkle the flour over the onions and stir to combine, cooking for about 1 minute. Slowly whisk in the milk and half-and-half. 2. Add the nutmeg, broccoli, a dash of salt, and lots of freshly ground black pepper. Cover and reduce the heat to low. Simmer for 20 to 30 minutes, or until the broccoli is tender. Add the cheese a handful at a time, stirring to melt the cheese after each addition. 3. At this point I did a quick pass with my immersion blender on low to blend up the broccoli a bit, but still leave a good amount of texture. You could also choose to mash it with a potato masher to break up the broccoli a bit, or transfer to a blender in two batches and puree completely. Finally, whisk in the vegetable broth, and re-warm over low heat if needed, and serve.
