This is a great casserole that I threw together one day when a friend requested Broccoli au Gratin for her birthday dinner. This is a great idea for those who aren't big fans of bread crumbs. Also, the eggs can be taken out for a great sauce and using skim milk and fat-free cheese works well, too. It's basically a great recipe that can be easily altered according to taste. Enjoy!

8 cups fresh broccoli
½ cup butter
2 tablespoons all-purpose flour
1 small onion, chopped
1 ¼ cups milk
salt and pepper to taste
4 cups shredded Swiss cheese
2 eggs, beaten

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain.
  • Melt butter in a medium saucepan over medium heat and add flour; cook until bubbly. Stir in onion and gradually add milk, stirring well. Bring to a boil and cook for 1 minute. Remove from heat and season with salt and pepper. Stir in cheese and eggs; mix well. Combine mixture with broccoli and transfer to a 9 x 13 inch casserole dish.
  • Bake in preheated oven for 30 minutes.

Steps:

  • Preheat the oven to 325°. In a Dutch oven, heat the butter over medium-high heat. Add onion; cook and stir until tender, 2-3 minutes. Stir in flour until blended; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Stir in cheese and salt until cheese is melted., Remove from heat. Gradually whisk in eggs. Stir in vegetable blend. My sister got this recipe from one of her in-laws after falling in love with it a few years ago and it's been our family favorite ever since! It's so good with practically any meal, whether a mundane weeknight dinner or a more elaborate thanksgiving feast. Also, although it truly does taste the best with the cream of mushroom soup it can be made with any cream soup (I usually use broccoli cheese or 1 cream of chicken and 1 cream of celery because of picky hubby!). Oh, and I like to add a sprinkle of onion powder to the mix too! Edited to Add: I've been mixing 1/2 cup breadcrumbs and 1/2 cup parmesan cheese for the topping instead of just breadcrumbs. It's really good that way too!

Steps:

  • Boil about 2 quarts of salted water in a pot, and cook the macaroni for 4 minutes. Add the frozen broccoli and cook for another 5 minutes.
  • If you're like me and get absentminded of what's in your freezer and how long it's been in there thus your broccoli is REALLY freezer-burnt, throw it in the pot when you put the macaroni inches Make sure it's a big enough pot.
  • When they're all done cooking, remove and drain the macaroni and broccoli. Put them into a 2.5-quart baking dish, mixing well.
  • Pour the milk into the pot and let it come to a low boil. Meanwhile, preheat the oven to 350°F.
  • While waiting for the milk to heat up, combine the sour cream, tablespoon of milk, flour, and spices in another bowl to make a paste.
  • Add this paste to the boiled milk, and stir thoroughly.
  • When the mixture becomes thick, add 3/4 cup of cheese and it should melt on impact. Stir again to fully incorporate the cheese.
  • Pour the cheese sauce over the macaroni and broccoli, blending well. Top evenly with the 1 1/4 cups cheese.
  • For the panko topping, melt the butter in a frying pan or saucepan and toss with the panko flakes until nice and toasty. Put over the cheese.

This recipe calls for an 11 x 7-inch pan, which will feed 3 people easily, I strongly suggest to double up the ingredients and bake it in a 13 x 9-inch baking pan if you are feeding more than 4 people, everyone will want seconds! I have also added in ground turkey that I cook with the garlic before I saute the broccoli, you might have to bake it in a larger baking dish if you are adding in ground turkey. to the mixture also.

3 cups broccoli florets

Ordinary but good casserole to pull out of the freezer for a home cooked side dish! I modified this recipe after the comments to add the oven temp. :)

4 -5 potatoes, sliced
1 head broccoli, florets, blanched
1 (10 1/2 ounce) can broccoli cheese soup
1 (10 1/2 ounce) can milk, approx, to cover
shredded cheese

Steps:

  • This easy recipe freezes well if prepared with cooked potatoes and reheated in the oven.
  • In a casserole, put a few (4-5) sliced potatoes, the florets from a head of broccoli (blanched), a can of cream of broccoli and cheese soup, and enough milk to make the soup cover the veggies.
  • Throw in a handful or two of shredded cheese.
  • Cover, label and freeze.
  • It tastes like a broccoli-n- cheese baked potato.
  • Bake this in the oven for about 40 minutes.
  • For crockpot: use raw potatoes and cook for 2-3 hours or till done on high.
  • Freeze after cooking.

1 can(s) french fried onions (2.8 oz)
2 bags (24oz. each) frozen broccili & cheese
1 pkg cream cheese (3 oz.)
1/4 red bell pepper, chopped

Steps:

  • 1. Preheat oven to 350*. Divide fried onions in half and reserve half for later.
  • 2. Mix remaining onions, broccoli, cream cheese, and bell pepper in large dutch oven. Cover and cook over medium-low heat for 20 minutes and until all cheese is melted through. Transfer to a 3 quart casserole.
  • 3. Bake uncovered for 20 minutes or until veggies are tender. Sprinkle remaining onions along sides of casserole and bake 5 minutes longer. 3 points per serving

2 (24 ounce) bags green giant frozen cut broccoli in cheese sauce
1 (3 ounce) package cream cheese, cut into cubes
1/4 cup chopped red bell pepper, if desired
1/2 teaspoon red pepper sauce

Steps:

  • Heat oven to 350°F Reserve 1 cup French-fried onions for topping.
  • In 5-quart Dutch oven, mix remaining onions, the broccoli, cream cheese, bell pepper and red pepper sauce. Cover; cook over medium-low heat about 20 minutes, stirring once halfway through cooking, until sauce chips are melted.
  • Transfer to ungreased 2- to 3-quart casserole.
  • Bake uncovered 20 to 25 minutes or until vegetables are tender. Sprinkle reserved onions around outer edge of casserole; bake 5 minutes longer.

1-1/2 pounds fresh broccoli spears, cut into 1/4-inch slices
1/4 teaspoon salt
2 cups 1% small-curd cottage cheese
2 large egg whites
1/4 cup grated Parmesan cheese
3 tablespoons all-purpose flour
1/2 teaspoon Italian seasoning
3/4 cup meatless spaghetti sauce
1 cup shredded part-skim mozzarella cheese

Steps:

  • In a large saucepan, bring 1-in. of water, broccoli and salt to a boil. Reduce heat; cover and simmer for 5-8 minutes or until crisp-tender. Drain and pat dry. , In a blender, combine the cottage cheese, egg whites, Parmesan cheese, flour and Italian seasoning; cover and process until blended., Place half of the broccoli in an 11x7-in. baking dish coated with cooking spray; top with half of the cottage cheese mixture.
