4 cups small cauliflower florets (1 medium head)
½ cup chopped onion
2 tablespoons olive oil
½ teaspoon crushed red pepper
¼ teaspoon salt
1 pound fresh or frozen (thawed) peeled and deveined medium shrimp
2 (14.5 ounce) cans no-salt-added diced tomatoes, drained
2 cloves garlic, minced
1 teaspoon lemon zest
½ cup crumbled reduced-fat feta cheese
1 tablespoon snipped fresh dill
4 Lemon wedges

Steps:

  • Preheat oven to 425 degrees F. In a large bowl toss together cauliflower, onion, oil, crushed red pepper and salt. Spread the mixture in a shallow metal roasting pan. Bake 25 minutes or just until the cauliflower is tender.
  • Meanwhile, rinse shrimp; pat dry. In a medium bowl combine shrimp, tomatoes, garlic and lemon zest. Pour shrimp mixture over cauliflower mixture. Bake 15 minutes more or until shrimp are opaque.
  • Combine cheese and dill; sprinkle over shrimp mixture. If desired, serve with lemon wedges.

1 (2 pound) head cauliflower, trimmed and cut into 1-inch florets
1 pound broccoli florets, cut into 1-inch pieces
¼ cup unsalted butter, divided
2 tablespoons all-purpose flour
2 cups whole milk
2 ounces reduced-fat cream cheese, at room temperature
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon ground pepper
¼ teaspoon salt
1 cup shredded sharp white Cheddar cheese
¾ cup panko breadcrumbs
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 375°F. Coat a 2-quart baking dish with cooking spray; set aside.
  • Add 1 inch of water to a large stockpot fitted with a steamer basket; cover and bring to boil. Add cauliflower florets first, then top with broccoli florets; steam, covered, until slightly tender, about 6 minutes. Remove the vegetables from the pot; set aside. Discard the water and clean the pot.
  • Heat 2 tablespoons butter in the pot over medium heat. Add flour and cook, stirring constantly, until nutty, about 1 minute. Gradually stir in milk, whisking constantly, until simmering. Whisk in cream cheese, garlic powder, onion powder, pepper and salt. Cook, whisking constantly, until thickened and smooth, about 2 minutes. Reduce heat to low and gradually add Cheddar, whisking until melted after each addition. Remove from heat. Add the broccoli and cauliflower to the sauce and stir to coat. Transfer to the prepared baking dish.
  • Microwave the remaining 2 tablespoons butter in a medium microwaveable bowl on High until melted, about 25 seconds. Stir in panko and Parmesan until fully coated; sprinkle evenly over the casserole. Bake until golden brown and bubbly, 25 to 30 minutes. Let stand for 5 minutes before serving.

2 cups broccoli
2 cups cauliflower
2 eggs
½ cup mayonnaise
½ cup chopped onion
1 cup shredded Cheddar cheese, divided
½ cup butter, melted
1 (15 ounce) package seasoned croutons, crushed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Put broccoli and cauliflower in separate saucepans and pour enough water into the saucepans to cover the vegetables completely; bring each to a boil and cook until tender, 3 to 4 minutes. Drain each and mix in a 11x7-inch baking dish.
  • Beat eggs in a bowl until creamy. Mix mayonnaise, onion, and 1/2 cup Cheddar cheese into the eggs; pour over the vegetables. Pour melted butter over the broccoli mixture and top with the remaining Cheddar cheese. Sprinkle croutons over the entire dish.
  • Bake in preheated oven until browned and bubbling, about 40 minutes.

I could smell the cream cheese cooking and it smelled great! Panko bread crumbs sprinkled on top would give this dish a nice crunchy texture. Absolutely lovely as a side dish with roasted or grilled chicken.

1 bunch cauliflower in bite size pieces
1 bunch broccoli in bite size pieces
1 stick margarine, melted
2 - 8 oz. cream cheese, soft
2 cans cream of celery soup

Steps:

  • 1. Cook the first 2 ingredients 5 mins and drain well, cool. Put them in a buttered 9x13' dish.
  • 2. Mix the next 5 ingredients and pour over, sprinkle with paprika.

1 large onion, chopped
1 large bell pepper, chopped
1 tablespoon minced garlic
1 (16 ounce) box Velveeta Mexican cheese
1 can cream of mushroom soup
2 bunches fresh broccoli
2 cups cooked rice
1/2 cup butter
1 lb peeled shrimp
salt
black pepper
red pepper (be careful with red pepper you are using jalapeno velveeta cheese)
seasoned bread crumbs
parmesan cheese, for topping

Steps:

  • Cook Broccoli in microwave until barely tender, drain and set aside.
  • In dutch oven saute onion, bell pepper and garlic in butter over medium heat until tender.
  • Add shrimp and cook for approximately 5 minutes or until pink.
  • Add cheese and soup and heat until melted.
  • Add cooked rice and seasonings and mix well.
  • Place cooked broccoli in 9x13 pan.
  • Spread shrimp mixture on top of broccoli.
  • Sprinkle with bread crumbs and parmesean cheese.
  • Bake covered at 350 degrees for 20 minutes then uncover and bake an additional 10 minutes or until slightly browned on top.

4 c fresh broccoli
1 can(s) Campbell's condensed broccoli cheddar soup (10.5 oz)
1/2` c milk
3 1/2 oz 350 count salad shrimp, tail off
18 110-160 count shrimp, deveined, tail off
2 slice bacon
dash(es) cayenne pepper, ground
1/2 c sharp cheddar cheese
1/3 c Parmesan cheese

Steps:

  • 1. Fry bacon to a light crisp. It will be baked later for 30 minutes later.
  • 2. Cut up broccoli into small pieces (if you didn't buy them that way from the store). I steam the broccoli for 3 minutes and drain.
  • 3. If your shrimp is frozen, place in a pan of hot water to thaw. Don't overcook, they will be baked for 1/2 hour later.
  • 4. Put the broccoli cheddar soup in a small bowl. Slowly stir in the milk into the steamed broccoli. Add and stir in the salad shrimp.
  • 5. Transfer the broccoli mixture to a sprayed 2 or 2.5-quart casserole dish. Put the larger shrimp over the casserole dish evenly. Cut the bacon into small pieces and spread over the casserole dish.
  • 6. Sprinkle on the cayenne pepper to your taste. Place in a preheated 350 F oven for 30 minutes. Remove from the oven and sprinkle on the cheese over the casserole.
