3/4 cup small broccoli florets
1/4 cup chopped onion
1/4 cup halved thinly sliced carrot

1-1/2 cups 2% milk, divided
1/2 teaspoon chicken bouillon granules
1/4 teaspoon salt
Dash pepper
2 tablespoons all-purpose flour
1/3 cup cubed Velveeta

Steps:

  • In a large saucepan, cook the cauliflower, broccoli, onion and carrot in butter until vegetables are crisp-tender, about 5 minutes. Stir in 1-1/4 cups milk, bouillon, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, until vegetables are tender, about 5 minutes, stirring occasionally., Combine the flour and remaining milk until smooth; add to saucepan. Bring to a boil; cook and stir until thickened, 1-2 minutes. Reduce heat; add cheese and stir until melted. Serve immediately.

Cauliflower cheese gets more colourful with the addition of broccoli in this super Sunday lunch side dish

1 small cauliflower, leaves removed and broken into small florets
1 small head broccoli, broken into small florets
50g butter
50g flour
1 tsp mustard powder
500ml milk
100g strong cheddar, or vegetarian alternative
2 tbsp snipped chives

Steps:

  • Heat oven to 200C/180C fan/gas 6. In a very large saucepan, cook the cauliflower in boiling salted water for 5 mins. Then add the broccoli and cook for 3 mins more. Drain well and transfer to a large ovenproof dish.
  • To make the cheese sauce, melt the butter in a small pan. When foaming, add flour and mustard powder, and cook for 1 min, stirring constantly. Take off the heat and add the milk, a little at a time, stirring constantly to get rid of any lumps. Once half the milk has been added, return to the heat and add the remaining milk. Keep stirring and bring to the boil, then turn down to a simmer and cook for 2 mins, until thickened and smooth. Add most of the cheese and some seasoning then take off the heat and add the chives.
  • Pour the sauce over the vegetables and sprinkle with the remaining cheese. This can be done the day before and kept covered in the fridge. Cook in the oven for 35-40 mins until bubbling, allowing an extra 5-10 mins cooking time if from the fridge.

2 tablespoons butter or 2 tablespoons margarine
2 tablespoons flour
2 cups half-and-half cream or 2 cups 18% table cream
3 cups cubed Velveeta cheese (cubed about 1 inch)
1/4 teaspoon salt (or to taste)
black pepper (or to taste) (optional)
1 teaspoon sugar
paprika, for topping

Steps:

  • Melt the butter in a small saucepan; remove from heat.
  • Blend in the flour until smooth using a wire whisk.
  • Return to heat; gradually whisk in the half and half cream; bring to a light boil, keep whisking until the mixture is smooth.
  • Add in the cubed Velveeta, and contine to mix with a spoon until cheese is melted.
  • Remove from heat.
  • Add in the sugar, salt and pepper; mix until combined.
  • Pour over the veggies JUST prior to serving.
  • Sprinkle with paprika.
  • Note: this recipe may be cut in half if desired.

1 small head cauliflower or half a large head, trimmed and cut into florets
1 pound whole-wheat macaroni or penne or other short cut pasta

1 tablespoon Dijon mustard
1/3 cup finely chopped chives
2 cloves garlic, peeled and grated or crushed into paste
A few drops hot sauce
Freshly ground black pepper
2 1/2 cups grated extra-sharp Cheddar

Steps:

  • Bring a large pot of water to a boil over medium heat. Salt the water and add the broccoli and cauliflower florets. Boil the vegetables for 5 minutes, then remove them with a spider or a strainer and drain. Add the pasta to the water and undercook by about 2 minutes, drain.
  • Meanwhile, combine the sour cream in a large bowl along with the mustard, chives, garlic, hot sauce and salt and pepper, to taste. Add the pasta and cauliflower and 2/3 of the cheese. I found this recipe on kraftfoods.com. It isn't too thick, but has really good flavor! This recipe is extremely quick and easy! You can also use the frozen broccoli and cauliflower blend that has carrots in it. Also, to make this recipe a little healthier, I use the Velveeta 2%.

1 cup(s) parsnips, diced

2 clove(s) garlic, large, chopped
64 ounce(s) chicken broth, low sodium
2 pound(s) velveeta sharp cheddar or original
8 ounce(s) philadelphia cream cheese
1/2 stick(s) butter
- salt and pepper, to taste
1 - bottle sweet chili sauce (i like frank's red hot)

Steps:

  • Heat oven to 350 degrees.
  • Toss cauliflower with oil, salt and pepper. Place on cookie sheet. Bake until brown. Cauliflower can also be tossed with softened cream cheese to make creamy.
  • In large skillet, heat oil on medium. Add parsnips, celery, leeks, garlic and butter. Saute until soft.
  • Add broccoli and approx 2 cups broth to skillet. Cover and cook until soft.
  • In a large sauce pan, add 2 cups broth, Velveeta and Philadelphia Cream Cheese. Heat on low, stirring.
  • Add contents of skillet to blender and puree, adding additional broth for easy pureeing.
  • Add broccoli to cheese sauce; whisk to prevent burning.
  • Add remaining broth to soup little at a time, to desired thickness. Season to taste.
  • Serve in individual bowls. Top with roasted cauliflower and drizzle with sweet chili sauce.

Try this galette tart which uses a hazelnut spelt pastry for a sweet, earthy flavour. It works so well with the broccoli and cauliflower cheese filling

80g hazelnuts , roughly chopped
120g spelt flour
130g plain white flour , plus extra for dusting
130g cold butter , cubed
1 egg , beaten
6 spears Tenderstem or purple sprouting broccoli , split lengthways if very thick
½ cauliflower , cut into 1cm steaks, then into chunks, plus a few of the leaves roughly chopped
1 tbsp olive oil or rapeseed oil
50g butter
50g flour (spelt or plain white is fine)
200g crème fraîche
150g extra mature cheddar , grated
1 ½ tsp Dijon mustard
1 egg , plus 1 yolk

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the hazelnuts in a small roasting tin and roast for a few mins until they start to deepen in colour and smell nutty. Tip into a bowl and leave to cool completely, then chill until needed. You could do this step the night before to ensure they're nice and cold.
  • Use the same roasting tin to roast the broccoli and cauliflower (without the leaves), tossed in a little oil for 10 mins until starting to soften and char in places. To make the sauce, melt the butter in a pan over a medium heat, then add the flour, crème fraîche, cheese, mustard and some black pepper. Set back over the heat, whisking continuously until the sauce is smooth and thick and the cheese has melted. Cover the surface with cling film (to prevent a skin from forming) and set aside to cool.
  • Tip most of the nuts into a food processor, reserving 8-10 for the top. Pulse briefly until finely chopped. Add the flours and ½ tsp salt, and whizz again until combined. Add the butter and continue pulsing until the mixture resembles breadcrumbs, then add the egg and 2-3 tbsp cold water and whizz until the mixture starts to form bigger clumps. Tip onto a work surface and knead briefly to bring the pastry together. Shape into a disc, wrap in cling film and chill for at least 20 mins. Heat oven to 200C/180C fan/gas 6 (if not already on) and line a large baking sheet with parchment.
  • When the cheese mixture has cooled, mix in the whole egg. On a lightly floured surface, roll out the pastry to a circle about the thickness of a £1 coin (don't worry if the edges look rustic, this is all a part of its charm). Transfer it to the baking sheet. Spread the cheese mixture over the pastry, leaving a border of about 2cm around the edge. Arrange the veg and leaves on top of the cheese sauce. Roughly chop and scatter over the remaining hazelnuts, then fold the sides of the pastry in to create a nice edge around the tart. Brush with the egg yolk and bake for 45 mins until the pastry is golden and crisp and the filling is bubbling. Eat warm.

2 (10 ounce) packages frozen broccoli or 2 (10 ounce) packages frozen cauliflower
1 (10 3/4 ounce) can cream of celery soup or 1 (10 3/4 ounce) can cream of mushroom soup
2 beaten eggs
1/2 cup Hellmann's mayonnaise
2 cups shredded cheddar cheese
48 Ritz crackers, crumbled in (1 sleeve, wrap)
1/2 cup melted butter

Steps:

  • Place broccoli or cauliflower in a baking dish 9x13.
  • Blend soup, mayonnaise, eggs and cheese together and pour over vegetables.
  • Top with buttered cracker crumbs.
  • Bake at 350°F for 20-40 minutes or until bubbling.

1 lb rotini pasta
8 tablespoons butter
6 tablespoons flour
1/4 cup minced shallot
4 cups milk
1/4 teaspoon salt
8 ounces grated sharp cheddar cheese
8 ounces grated swiss cheese
1 1/2 cups broccoli florets
1 1/2 cups cauliflower florets

Steps:

  • Steam broccoli and cauliflower until just tender.
  • Preheat oven to 375 degrees and grease a 3 quart baking dish.
  • Cook pasta 2 minutes less than package directions.
  • While pasta cooks, in a medium saucepan over medium heat, melt butter. Ass flour and shallot, and cook 2 minutes, stirring frequently. In a slow stream, add milk,whisking constantly. Increase heat to medium-high and bring to simmer. Cook for 2-4 minutes until thickened.
  • Off heat, add salt and cheeses, stirring until cheese is just melted. Combine pasta with cheese sauce, broccoli and cauliflower, and pour the mixture into a baking dish.
  • Bake until sizzling and lightly browned on top, about 20 minutes. Let stand at least 5 minutes before serving.
