This easy broccoli bake with cheddar cheese and breadcrumbs is a creamy broccoli casserole that can be a main dish or a side at Thanksgiving.

3 tablespoons unsalted butter (divided)
3/4 cup Panko breadcrumbs
1/4 cup freshly grated Parmesan cheese
5 cups coarsely chopped broccoli florets ((about 1 1/4 pounds))
1/4 cup white whole wheat flour
1 3/4 cups non-fat milk
1/2 teaspoon garlic powder
1/4 teaspoon kosher salt
1/4 teaspoon dry mustard
1/4 teaspoon freshly ground black pepper
1/8 teaspoon cayenne pepper (optional)
1/2 cup freshly grated extra sharp cheddar cheese

Steps:

  • Preheat your oven to 400 degrees F. Melt 1 tablespoon butter in a wide, deep cast iron (or other ovenproof) skillet. Once melted, pour the butter into a small mixing bowl, then combine with the Panko breadcrumbs and the Parmesan cheese. Set aside.
  • Meanwhile, bring a large pot of water to a boil. Add the broccoli and cook until crisp-tender, about 3 minutes. Drain and set aside.
  • Melt the remaining 2 tablespoons of butter in the same skillet. Sprinkle the white whole wheat flour over the top, then whisk constantly for 1 minute, until the butter smells fragrant and the flour turns slightly golden. Very slowly pour in the milk, whisking constantly, adding a little at a time so that you break up the clumps of flour as you go. Continue whisking until the sauce thickens, about 3 minutes, allowing the mixture to bubble. Stir in the garlic powder, salt, mustard, black pepper, and cayenne (if using). Remove the skillet from the heat, then stir in the cheddar until smooth.
  • Add the reserved broccoli, stir to coat, then pat the broccoli into an even layer in the skillet. (Alternatively, if you feel your skillet is not large enough to easily stir in the broccoli without it spilling out, you can combine the two in a separate bowl, then transfer the mixture back into the skillet.)
  • Sprinkle the Panko mixture evenly over the top of the broccoli. Bake until hot and the topping is crisp and light golden brown, about 20-25 minutes. (Tip: For an even crisper topping, place the skillet under your broiler for a few minutes at the end, watching carefully so that it doesn't burn.) Let stand 5 minutes, then serve.

4 cups chopped broccoli
1 (10 ounce) can of cream of chicken soup
1 cup mayonnaise or miracle whip (we prefer mayo) Could also substitute Greek yogurt or sour cream.
1/4 cup of butter melted (1/2 stick)
2 large eggs, slightly beaten
1/2 medium onion finely chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups extra sharp cheddar cheese
1/2 sleeve of Ritz crackers, crushed

Steps:

  • Preheat oven to 350*F
  • Place broccoli in a steaming basket on stove and steam for 5 minutes or until broccoli is tender to a fork.
  • Remove broccoli from stove and chop into bite sized pieces. Place into a medium size mixing bowl.
  • Add to broccoli, soup, mayonnaise, butter, eggs, onion, salt and pepper. Mix well.
  • Add 3/4 cup of cheese to broccoli mixture and mix well.
  • Pour entire contents into an 8x8" square baking dish.
  • Top with remaining 3/4 cup of cheese and Ritz crackers.
  • Bake for 30 minutes or until cheese is melted and top is golden.

My mom used to make this easy recipe every Thanksgiving when I was little. We kids could never get enough! It was our very favorite Thanksgiving vegetable. If you have children, or have some coming to visit you as guests this Thanksgiving, I guarantee that they will eat (and enjoy) this veggie dish! Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It's fabulous with a Christmas ham and potatoes au gratin too. Mmmmmmm!

1 (10.75 ounce) can condensed cream of mushroom soup
1 cup mayonnaise
1 egg, beaten
¼ cup onions, chopped
3 (10 ounce) packages frozen chopped broccoli
8 ounces shredded sharp Cheddar cheese
salt and pepper to taste
1 dash paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
  • In a medium mixing bowl, whisk together condensed soup, mayonnaise, egg and onions.
  • Place frozen broccoli into a very large mixing bowl. (I like to use my large stainless steel bowl to mix this recipe thoroughly.) Break up the frozen broccoli. Using a rubber spatula, scrape soup-mayonnaise mixture on top of broccoli, and mix well. Sprinkle on cheese, and mix well. Spread mixture into prepared baking dish, and smooth top of casserole. Season with salt, pepper and paprika.
  • Bake for 45 minutes to 1 hour.

2 pound Velveeta Cheese
Fresh or Frozen Broccoli, Fresh 1 1/2 pounds [not much stalk]; Frozen 2 packages florets - I
do not use Frozen
2 Can Campbell's Cream of Celery Soup {original recipe - not the lite/fat free soup}
2 Can Rotel "Original" {I do not use the "mild" or "hot" rotel}
3 to 4 Cups Cooked Instant Rice, I use "Minute Rice"

Steps:

  • Instructions: 1. Prepare the Instant Rice in accordance with the instructions on the box. Set aside 2. Steam the Fresh Broccoli or cook the Frozen Broccoli according to instruction. Set aside. 3. Open the Can of Celery Soup and Rotel. 4. In a large pan, pour in the Celery Soup and Rotel. Cut the Velveeta Cheese into small hunks and with a wooden spoon, mix the cheese into the rotel and soup. 5. Turn the heat under the pan to Medium and stir sufficiently to keep the mixture from burning. You want to melt the cheese into the mixture and it will be hot when you have finished. As soon as this has been accomplished, Remove from the Heat. 6. Pour the Cooked/Steamed Broccoli on top of the mixture and Gently stir it into the mixture. 7. Add Cooked Rice - slowly and Gently stir into the mixture until your mixture is thickened sufficiently to serve. 8. Pour Mixture into a serving dish [I use pyrex casserole dishes or corning ware]. If you have extra broccoli, sometimes I place a few pieces on top for decor. Note. You will not be placing this in the oven. When you are ready to serve, Place desired amounts in the microwave and heat. 9. Storage for leftovers. 4 tablespoons unsalted butter, plus more for the dish
1/2 cup finely chopped yellow onion
Kosher salt
3 tablespoons all-purpose flour
1 1/2 cups hot milk
1 1/2 cups grated sharp Cheddar (about 6 ounces)
2 heads broccoli, cut into 2-inch pieces, quickly steamed (see Cook's Note)
1 1/2 cups crushed butter crackers (from about 1 sleeve)

Steps:

  • Preheat the oven to 350 degrees F. Butter a 2-quart baking dish or gratin dish.
  • Melt 2 tablespoons butter in a medium saucepan over medium-high heat. Add the onions and 1 teaspoon salt and cook, stirring frequently, until the onions are translucent, about 4 minutes. Stir in the flour and stir to coat the onions. Cook for 2 minutes. Remove from the heat and whisk in the hot milk. Return to the heat and bring to a simmer. Stir in the cheese by the handful. 1 (10 ounce) package yellow rice
1 (16 ounce) package frozen chopped broccoli
1 (16 ounce) jar process cheese sauce

Steps:

  • In a saucepan bring water to a boil. Add rice, reduce heat, cover and simmer for 20 minutes.
  • Preheat oven to 400 degrees F (200 degrees C).
  • While the rice is cooking, place frozen broccoli in large skillet. Heat stove to low-medium and defrost broccoli When the broccoli is 90% defrosted add processed cheese sauce to the broccoli and let melt. 1 large onion, chopped

1 can(s) ( reg. size ) ro-tel tomatoes, no juices, make sure it is drained really well
1 can(s) cream of mushroom soup
1/2 c milk
1/4 tsp garlic powder
1/2 tsp salt
1 c shredded cheddar cheese

Steps:

  • 1. Mix all ingredients except the grated cheese and put into a casserole dish.
