CHEESY CHICKEN, BROCCOLI AND PESTO PASTA BAKE
A superb and easy meal, for all the family including bacon, mushrooms, chicken and broccoli in a light cheesy sauce, a perfect mid week meal.

Steps:
- Boil a large pan of water with a sprinkle of salt, when bubbling, add pasta to water and leave for 10 - 12 minutes. Add broccoli and leave for further 5 minutes, once cooked, drain out and add pasta and broccoli back to pan.
- Add a tbsp of oil to a large frying pan and add to high heat. Add chicken breast to pan and fry until begins to brown, remove from the pan. Add bacon into pan and fry for around 3 - 5 minutes, then add mushroom, garlic and spring onions and leave for another 2 - 3 minutes.
- Once bacon has cooked, add chicken back to the pan and stir together gently for another 5 minutes. Remove from heat and stir into pasta.
- In a medium sized saucepan, melt the soft cheese and butter together on a low heat, stirring together constantly. Once melted together and the sauce is visibly thinner, stir in the milk and add the pesto and stir for roughly 5 minutes. When happy with the sauce, stir into the pasta pan and mix together well so all contents are coated.
- Now, add all the pasta mix to a deep oven dish and spread out around dish, then sprinkle over Parmesan cheese and put into the oven, for about 30-35 minutes on 200c (Fan Oven) or until Cheese is brown and golden.
CREAMY CHICKEN, PASTA AND BROCCOLI BAKE
A tasty one dish meal from Kraft. They kept it quite light, and it's still creamy and comforting. You can use any shaped pasta and try to go for the high fibre ones. Smart Pasta has the most fibre, but you can use whole wheat or whatever your favourite is. I listed whole wheat so the nutritional count would be better and Zaar doesn't accept Smart Pasta. Enjoy!

- Heat oven to 350°F Cook pasta as per package directions, adding broccoli for the last 3 minutes.
- Meanwhile, heat large nonstick frying pan on medium-high heat. Add chicken; cook 3 minutes or until no longer pink, stirring frequently. Stir in broth; simmer 3 minutes or until chicken is done. Add cream cheese; cook and stir on low heat 1 minute or until melted. Remove from heat and stir in 1/2 cup mozzarella.
- Drain pasta and broccoli. Add to chicken mixture; mix lightly. Spoon into 8 inch square baking dish; cover.
- Bake 15 minutes or until heated through. Sprinkle with remaining cheese. Bake, uncovered, 3 minutes or until melted. Let stand 5 minutes.

- Preheat oven to 180C.
- Cook pasta according to the directions on the packet. Drain and return to pan.
- Heat the oil in a frying pan over a medium heat. Add the bacon and onion and cook until soft and lightly browned.
- Break the broccoli into small florets. Cook the broccoli and peas in a steamer until tender.
- Gently mix together the broccoli, bacon, onion, peas and cheese sauce. Spread into a 2 litre ovenproof dish . Sprinkle with cheese. Bake until golden. About 15 - 20 minutes.
- Serve with mashed potatoes and a salad if desired.

- Preheat oven to 375 degrees. Lightly oil a 9-x-13-inch gratin or baking dish.
- In a separate pot, bring water to a boil and add 1/2 teaspoon of salt, broccoli and garlic. Simmer the broccoli and garlic for 5 minutes, until softened. With a slotted spoon remove the broccoli and garlic to a large bowl. Bring the water back to the boil, add the pasta, and cook the pasta for about 2 minutes less than the package directions suggest, about 11 minutes. The pasta should be al dente, a little firm.
- Meanwhile, in a large Dutch oven set over medium-high heat, heat the oil. Add sausage and the garlic cloves from the broccoli bowl, and cook, stirring frequently until meat is fully cooked and no longer pink, about 4 to 5 minutes, if using fresh sausage. (If using fully cooked sausage, cook until surface is golden, about 2 to 3 minutes.) With a slotted spoon, transfer sausage to the broccoli, and drain most of the oil from the pan, leaving about 2 tablespoons. Discard the garlic.
- Toss drained pasta with sausage mixture. Add beans, stock, 3/4 cup of grated mozzarella cheese and all of the ricotta. Add remaining salt and pepper. Gently toss. Transfer to prepared gratin or baking dish, top with breadcrumbs, remaining 1/4 cup of grated cheese and 1/4 cup mozzarella cheese, and drizzle with olive oil.
- If making this in advance, allow the mixture to come to room temperature, cover with plastic wrap and place in the refrigerator.
- Bake for 25 minutes, until heated through and crusty on top.

- Preheat oven to 180 degrees C.
- Lightly spray olive oil over baking dish.
- Place pasta in a pot of boiling water and cook as per packet instructions.
- Drain well.
- Combine pasta, broccoli, onion and chicken and place in the baking dish.
- Mix together sour cream, milk, soup mix and salt and pepper if desired and pour over the pasta.

- Note: drain broccoli and mushrooms very well.
- Steam broccoli until tender-firm.
- Slice mushrooms, set aside.
- Cook pasta until tender-firm, drain well.
- Meanwhile, in a large bowl, melt butter in microwave; mix in flour, stir in milk. Heat in microwave pausing to stir occasionally until mixture boils and thickens.
- Add parmesan cheese, salt, garlic, nutmeg, thyme and cheddar cheese; stir.

Steps:
- Preheat oven to 375*F.
- Cook the pasta in a large pan of boiling salted water for 6 minutes, then add the broccoli and cook for 5 to 6 minutes longer, until the pasta is just cooked.
- Drain well and return to pan.
- Heat the oil in a wide pan and add the chicken pieces.
- Fry until lightly browned.
- Tip in the mushrooms and stir fry for 1 minute, then stir in the tomato paste, cheese and cream.
- Gently simmer until the cheese has melted, stirring, until the sauce is thickened slightly.
- Season with salt and pepper.

- Preheat oven to 200C/400F/ gas mark 6.
- Cook the pasta in boiling water for 5 minutes, add the broccoli and cook for another 4-5 minutes until just tender. Drain.
- Flake tuna into an ovenproof dish.
- Blend margarine, flour and milk, bring to boil, stirring constantly until sauce thickens.
- Simmer for 2-3 minutes, remove from heat and add half the cheese, mustard powder, and pepper to taste.
- Spoon pasta and broccoli over the time and cover with the sauce.
- Mix breadcrumbs with the remaining cheese and sprinkle over the top.
