My mom used to make this easy recipe every Thanksgiving when I was little. We kids could never get enough! It was our very favorite Thanksgiving vegetable. If you have children, or have some coming to visit you as guests this Thanksgiving, I guarantee that they will eat (and enjoy) this veggie dish! Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It's fabulous with a Christmas ham and potatoes au gratin too. Mmmmmmm!

1 (10.75 ounce) can condensed cream of mushroom soup
1 cup mayonnaise
1 egg, beaten
¼ cup onions, chopped
3 (10 ounce) packages frozen chopped broccoli
8 ounces shredded sharp Cheddar cheese
salt and pepper to taste
1 dash paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
  • In a medium mixing bowl, whisk together condensed soup, mayonnaise, egg and onions.
  • Place frozen broccoli into a very large mixing bowl. (I like to use my large stainless steel bowl to mix this recipe thoroughly.) Break up the frozen broccoli. Using a rubber spatula, scrape soup-mayonnaise mixture on top of broccoli, and mix well. Sprinkle on cheese, and mix well. Spread mixture into prepared baking dish, and smooth top of casserole. Season with salt, pepper and paprika.
  • Bake for 45 minutes to 1 hour.

4 tablespoons unsalted butter, plus more for the dish
1/2 cup finely chopped yellow onion
Kosher salt
3 tablespoons all-purpose flour
1 1/2 cups hot milk
1 1/2 cups grated sharp Cheddar (about 6 ounces)
2 heads broccoli, cut into 2-inch pieces, quickly steamed (see Cook's Note)
1 1/2 cups crushed butter crackers (from about 1 sleeve)

Steps:

  • Preheat the oven to 350 degrees F. Butter a 2-quart baking dish or gratin dish.
  • Melt 2 tablespoons butter in a medium saucepan over medium-high heat. Add the onions and 1 teaspoon salt and cook, stirring frequently, until the onions are translucent, about 4 minutes. Stir in the flour and stir to coat the onions. Cook for 2 minutes. Remove from the heat and whisk in the hot milk. Return to the heat and bring to a simmer. Stir in the cheese by the handful. Add salt to taste. Add the broccoli to the cheese sauce and pour into the prepared dish.
  • Melt the remaining 2 tablespoons butter in a small skillet and stir in the cracker crumbs. Cover the broccoli casserole with the buttered cracker crumbs. Bake until bubbly and lightly browned, about 20 minutes.

2 pounds fresh broccoli, coarsely chopped
1 large onion, coarsely chopped
½ cup water
¼ cup all-purpose flour
1 (14 ounce) can evaporated milk, divided
salt to taste
1 cup cubed sharp Cheddar cheese
2 tablespoons dry bread crumbs, or to taste
1 tablespoon butter, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x12-inch baking dish.
  • Place broccoli and onion into a saucepan, pour in water, and bring to a boil. Reduce heat to low, cover, and cook until broccoli turns bright green and starts to become tender, 8 to 10 minutes.
  • Whisk flour and 1/4 cup evaporated milk together in a bowl until smooth. Stir remaining evaporated milk and salt into broccoli. Gently stir flour mixture into broccoli mixture and bring to a simmer; cook until thickened, 2 to 3 minutes. Remove from heat and stir in sharp Cheddar cheese, mixing until cheese has melted into the sauce.

1 (10 ounce) package yellow rice
1 (16 ounce) package frozen chopped broccoli
1 (16 ounce) jar process cheese sauce

Steps:

  • In a saucepan bring water to a boil. Add rice, reduce heat, cover and simmer for 20 minutes.
  • Preheat oven to 400 degrees F (200 degrees C).
  • While the rice is cooking, place frozen broccoli in large skillet. 4 cups fresh broccoli florets
24 large eggs
5 tablespoons butter, divided
1-3/4 cups sliced fresh mushrooms
1 cup cubed fully cooked ham
2 green onions, chopped
2 tablespoons all-purpose flour
2 cups 2% milk
1 cup shredded cheddar cheese
3/4 teaspoon salt
1/2 teaspoon pepper
TOPPING:
2-1/4 cups soft bread crumbs

Steps:

  • In a large saucepan, place steamer basket over 1 in. of water. Place broccoli in basket. Bring water to a boil. Reduce heat to maintain a simmer; steam, covered, 4-6 minutes or until crisp-tender., In a large bowl, whisk eggs until blended; set aside. In a large skillet, heat 3 tablespoons butter over medium heat. Add mushrooms, ham and green onions; cook and stir 4-6 minutes or until vegetables are tender. Pour in eggs; cook and stir until eggs are thickened and no liquid egg remains., Meanwhile, in a small saucepan, melt 2 tablespoons butter over medium heat. This chicken and broccoli casserole is my 13-year-old son's favorite dish and the one he requests for every one of his birthdays. It is very good and combines the creamy texture of the cheese sauce with the crunchy texture of the corn flakes. It is a standby meal and easy to make, freeze, and bake at a later date. You can freeze it up to 6 months. If frozen, bake uncovered for 1 hour.

1 bunch broccoli, cut into chunks - or more to taste

4 cups chopped broccoli
1 (10 ounce) can of cream of chicken soup
1 cup mayonnaise or miracle whip (we prefer mayo) Could also substitute Greek yogurt or sour cream.
1/4 cup of butter melted (1/2 stick)
2 large eggs, slightly beaten
1/2 medium onion finely chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups extra sharp cheddar cheese
1/2 sleeve of Ritz crackers, crushed

Steps:

  • Preheat oven to 350*F
  • Place broccoli in a steaming basket on stove and steam for 5 minutes or until broccoli is tender to a fork.
  • Remove broccoli from stove and chop into bite sized pieces. Place into a medium size mixing bowl.
  • Add to broccoli, soup, mayonnaise, butter, eggs, onion, salt and pepper. Mix well.
  • Add 3/4 cup of cheese to broccoli mixture and mix well.
  • Pour entire contents into an 8x8" square baking dish.
