1 small onion, sliced julienne
2 ounces olive or vegetable oil or bacon fat
1 diced fresh jalapeño
10 to 12 ounces chopped or pulled Smokehouse Brisket, recipe follows
1/4 cup Rube's BBQ sauce, recipe follows
2 slices smoked Gouda
1 toasted hoagie roll
1/2 cup mesquite powder
1/2 cup brown sugar
1/3 cup smoked paprika
1/3 cup kosher salt
1/4 cup au jus powder mix
1/4 cup granulated sugar
2 tablespoons chili powder
2 tablespoons ground cumin
2 tablespoons garlic powder
2 tablespoons mustard powder
2 tablespoons onion powder
2 tablespoons ground black pepper
One 8- to 12-pound brisket
1/2 cup liquid hickory smoke
20 ounces dark coffee
1 cup plus 2 tablespoons dark brown sugar
5 ounces molasses
1 tablespoon Worcestershire sauce
2 tablespoons apple cider vinegar
2 tablespoons honey
1 tablespoons hot sauce
2 quarts ketchup
1/4 cup liquid hickory smoke
2 tablespoons yellow mustard
2 tablespoons garlic powder
2 tablespoons onion powder
2 teaspoons cayenne pepper
1 teaspoon chili powder
2 teaspoons mustard flour
2 teaspoons ground black pepper

Steps:

  • Cook onions in hot oil until caramelized. Add jalapeño. Add brisket and BBQ sauce, stirring, until incorporated and warm. Gather onions, jalapeños and brisket into a mound, then place Gouda on top and cover until cheese melts. Toast hoagie roll on hot griddle until crisp. Place all of the filling on hoagie roll.
  • For the Smokehouse brisket rub: Combine the mesquite powder, brown sugar, smoked paprika, salt, au jus powder, granulated sugar, chili powder, cumin, garlic powder, mustard powder, onion powder and black pepper in a large bowl until thoroughly incorporated.
  • For the brisket: Preheat oven to 350 degrees F.
  • Trim excess fat from the brisket, leaving a good layer for flavor. Spread a thick layer of rub over entire brisket in a heavy-duty baking pan, and work rub into the layer of fat. Add liquid smoke and 1/2 cup water, then cover tightly with aluminum foil. Braise in oven until tender, about 4 hours.
  • To a large heavy-duty cooking pot over low heat, add, in order and whisking vigorously until incorporated, the coffee, brown sugar, molasses, Worcestershire, vinegar, honey, hot sauce, ketchup, liquid smoke, mustard, garlic powder, onion powder, cayenne, chili powder, mustard flour and black pepper. Continue to cook on low heat, stirring every 5 minutes, for 30 minutes.

1 whole untrimmed packer brisket (roughly 12 pounds)
1/2 cup kosher salt
1/4 cup coarse ground black pepper
1/4 cup granulated garlic
1/2 cup Cajun spice
1 pint light brown sugar
1 pint Dignowity BBQ Sauce, recipe follows, plus additional for serving
1 ciabatta roll
1 portion Sharp Cheddar Mac and Cheese, recipe follows
2 slices green pear
Freshly shredded Cheddar, for topping
1 quart light brown sugar
5 cups ketchup
1 cup pineapple juice
1 cup molasses
1/2 cup liquid hickory smoke
1/4 cup dry mustard
1/8 cup kosher salt
4 teaspoons freshly ground black pepper
2 teaspoons granulated garlic
2 teaspoons Cajun spice
2 sticks unsalted butter
1 cup all-purpose flour
2 quarts whole milk
2 quarts grated sharp Cheddar
2 tablespoons kosher salt
1 tablespoon ground black pepper
1 tablespoon Cajun spice
5 quarts precooked elbow noodles

Steps:

  • Preheat a smoker for cooking at 225 degrees F.
  • Trim any excess fat from brisket. Sprinkle the brisket liberally with kosher salt. Stir together the black pepper, granulated garlic and 1/4 cup Cajun spice, then sprinkle all over the brisket. Place brisket fat-side up on a smoking tray and place in smoker. Add soaked and drained hickory wood chips and smoke until an instant-read thermometer inserted in the center registers 195 degrees F, about 12 hours.
  • Let the brisket rest and cool completely, preferably overnight.
  • Preheat the smoker for cooking at 250 degrees F. Cut the brisket into 1/2-inch cubes. Spread these cubes in an even layer on a sheet tray. Sprinkle with brown sugar, the remaining 1/4 cup Cajun spice and the BBQ Sauce. Mix thoroughly with your hands to ensure every piece is coated. Spread them out in an even layer and put the tray back in the smoker with fresh soaked wood chips to smoke for 2 hours. Remove from smoker.
  • Hollow out the ciabatta. Add Mac and Cheese, some brisket burnt ends, green pear, some Cheddar and BBQ Sauce. Close the sandwich and place on a flattop panini press until cheese melts, about 1 minute. (Save the remaining meat for another use.)
  • Combine light brown sugar, ketchup, pineapple juice, molasses, liquid smoke, mustard, salt, black pepper, granulated garlic, Cajun spice and 1 cup water in a stainless steel saucepan. Heat on low heat, stirring constantly and scraping the bottom with a wooden spoon so the sugars do not burn on the bottom of the pan, until it comes to a simmer. Simmer until desired consistency has been achieved, for about 1 hour. Allow to cool completely, then transfer to a clean plastic container or mason jar and store in the fridge.
  • Melt butter in a saucepan over medium heat. Add flour to hot melted butter and whisk constantly for 3 minutes. Slowly add milk while continuing to whisk, then continue to cook, whisking, until sauce is thickened and bubbling. Remove from heat and stir in Cheddar, salt, pepper and Cajun spice. Stir until smooth and velvety, then fold in precooked noodles. Return to low heat and stir constantly until noodles are heated through. Serve.

3 yellow onions, julienne
3 tomatoes, sliced
2 ribs celery, cut in 1/2
3 jalapenos
1 red pepper, seeded and julienne
3 carrots, julienne
12 ounces oatmeal stout
1/4 cup cider vinegar
2 tablespoons Worcestershire sauce
Handful garlic, about 12 cloves
Whole-wheat buns
Sliced red onion and pickles, for serving
Brisket BBQ Sauce:
Olive oil
4 shallots, diced
1 (No.10) can diced tomatoes
64-ounce can sliced peaches
16 ounces dried figs, stems removed
1 stem rosemary, leaves picked
1/2 cup balsamic vinegar
1/4 cup stone-ground mustard
1 lemon, juiced
1/3 cup packed ground fresh ginger
4 cups fresh orange juice
2 cups white tequila (can use reposado but not anejo - unless you really like that flavor)
1 tablespoon dry mustard
8 ancho chiles
1 tablespoon sambal oelek
2 teaspoons salt
1 cup brown sugar
1 can anchovies, minced
10 cloves garlic, peeled

  • Mix all of the dry rub ingredients together in a small bowl. Dab the brisket dry with paper towels. Coat the brisket all over with the dry rub. Make a mesquite fire inside the oven of a smoker. A combination of charcoal and mesquite chips (wet) is fine. Put the brisket on the right side of the grates in the main oven of the smoker. Damp down the fire. Leave the brisket to smoke until the fire burns out. In the meantime, In a large skillet, saute the bacon and vegetables until they are moist. Put them into a 6-inch deep, full-sized, hotel pan. Add the brisket, beer, vinegar, Worcestershire and garlic. Cover the pan with a sheet of parchment paper and tightly cover with a sheet of heavy foil. Cook overnight in a 250 degree F oven. Cut the brisket into chunks and serve on a whole-wheat buns with the BBQ sauce, sliced red onion and pickles. SAUCE Heat some oil (about 1/4 cup or less) in a heavy-bottomed pan over medium heat. 3 cups sauerkraut
3 pounds cream cheese
2 pounds Swiss cheese, shredded or diced small
Vegetable oil, for deep-frying
Flour, for coating
Buttermilk, for dredging
Panko breadcrumbs, for coating
Chopped fresh parsley, for coating
Whole-Grain Honey Mustard Horseradish Dipping Sauce, recipe follows
4 cups mayonnaise
1 pound honey
8 ounces Dijon mustard
6 ounces horseradish (fresh if possible)
4 ounces whole-grain mustard with stout
4 ounces rice vinegar
1 1/2 ounces dry mustard
1 tablespoon granulated garlic

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the brisket in a large pan with the pickling seasoning and enough water to fill the pan halfway. Cover and cook for 3 hours. Let cool partially, and then refrigerate to cool completely (for at least 3 hours total if you cut the brisket into pieces, or overnight if cooling it whole).
  • Dice the brisket and puree in a food processor until a paste forms (some chunks are fine). Add the sauerkraut, cream cheese and Swiss cheese and mix well. Shape the mixture into little spheres the size of golf balls; set aside.
  • In a large heavy-bottomed saucepan fitted with a deep-frying thermometer, pour enough vegetable oil to fill the pan about a third of the way. Heat over medium heat until the oil reaches 350 degrees F.
  • In three separate containers put the flour, buttermilk, and breadcrumbs mixed with parsley. Take a sphere and coat in the flour, dredge in the buttermilk and then coat in the breadcrumbs. Repeat with the remaining spheres. Fry in batches--making sure all the fritters are submerged--until golden brown, 3 to 5 minutes.
  • Serve the fritters with the Whole-Grain Honey Mustard Horseradish Dipping Sauce on the side.
  • Mix together the mayonnaise, honey, Dijon mustard, horseradish, whole-grain mustard, rice vinegar, dry mustard and granulated garlic in a large bowl.
