BRIE AND MUSHROOM PHYLLO PUFFS



Brie and Mushroom Phyllo Puffs image

Warm melted brie and sauteed mushrooms are wrapped in a phyllo triangle. Great for parties! These are time consuming to make, but extremely elegant.

1 cup butter, divided
8 crimini mushrooms, sliced
6 shiitake mushrooms, sliced
3 cloves garlic, chopped
1 (8 ounce) wedge Brie cheese
1 (16 ounce) package frozen phyllo pastry, thawed

Steps:

  • Melt 2 1/2 tablespoons of butter in a skillet over medium heat. Saute crimini and shiitake mushrooms with garlic until tender. Remove from heat, and set aside. Melt remaining butter in a dish in the microwave.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Unroll the phyllo dough, and cut into three equal strips, about 3x12 inches. I like to use kitchen shears for this. Place two sheets of the phyllo onto a cutting board or other work surface, and cover the stack of remaining sheets with a damp paper towel to keep them from drying out.
  • Brush the top sheet of phyllo with melted butter, and place a raspberry sized dab of brie on one end. Top with a small amount of the mushroom mixture. Fold phyllo dough over the filling to make a triangle. Continue folding back and forth in a triangle shape, brushing the exposed side of the dough as you go. Seal the end closed with a little water or butter. Place on an ungreased baking sheet, and repeat with remaining dough and filling.
  • Bake the triangles for 20 to 25 minutes in the preheated oven, turning over once during baking, until golden brown.

1 ¾ ounces Brie cheese, rind removed
1 pinch paprika

Steps:

  • Line a microwave-safe plate with parchment paper.
  • Cut Brie cheese into 1/2-inch cubes. Working in batches if necessary, place a few cubes onto the prepared plate, spacing them about 1 1/2 inches apart.
  • Microwave on high until cheese cubes begin to puff up, 1 to 2 minutes, watching to be sure they do not burn. Cheese will appear to melt at first, but then it will puff up. Sprinkle paprika over cheese puffs and allow to cool before serving.

A tasty starter for May. When buying the brie, buy one that is not too ripe. If it is quite soft put in the freezer for about 30 minutes before making the making the puffs.

2 cups fresh spinach
8 slices brie cheese, thin slices
1 egg, beaten
1/4 teaspoon freshly grated nutmeg
1 puff pastry
1 tablespoon parmesan cheese

Steps:

  • Preheat the oven 220oC/425oF/gas mark7.
  • Put the spinach in a bowl; stir in half the beaten egg and the nutmeg.
  • Season to taste with salt and pepper.
  • Make the puff pastry.
  • Trim to a square, and then cut into four equal squares.
  • Divide the spinach equally between the squares, spreading it diagonally over one half.

  • Top the squares with Brie slices, dividing them equally between the 4 squares.
  • Brush the edges of the pastry with the remaining beaten egg, and then fold the pastry over to form a.

  • Sprinkle over the parmesan cheese.
  • Dampen a baking tray and carefully transfer the triangles on to it.
  • Bake in the oven for about 10 minutes, until the pastry is golden.
  • Serve the puffs hot or cold.

1 sheet puff pastry, thawed
1 can (15 oz) Bartlett pears, drained, coarsely chopped
8 oz wedge Brie, cut into small cubes
1/2 cup dried cranberries (approximately)

Steps:

  • Preheat oven to 400 degrees and thaw 1 sheet of puff pastry from a (17.3 oz) package for 30 minutes. Roll into a 14 inch square on a lightly floured board and cut into 36 equal squares. Press into 36 mini muffin cups. Drain 1 (15 oz) can Bartlett pears and coarsely chop. Cut an 8 oz wedge of Brie into small cubes and place equal amounts of pears and cheese in each cup; top each with 3-4 cranberries. Bake for 12-15 minutes or until very puffed and golden brown. Serve warm.
