BREAKFAST IN A BUN

BREAKFAST IN A BUN image

Another wholesome and hearty breakfast idea from incredibleegg.org. This can be eaten on the go or at the table with family members. And you can easily substitute ingredients if you prefer something different.

Time 40m

Number Of Ingredients 10

3 slice bacon
1 c sliced mushrooms
1/2 c chopped onion
1/2 c chopped green bell pepper
6 eggs
1/4 c milk
6 kaiser rolls, split
6 slice ham, thin
6 slice tomato, thin
6 slice swiss or muenster cheese, thin

Steps:

  • 1. Cook the bacon in a large skillet over medium heat until crisp; drain and crumble bacon. Pour off drippings. Add mushrooms, onion, and bell pepper to skillet; saute until tender, about 5 minutes. Add bacon.
  • 2. Beat eggs and milk in a medium bowl until blended. Pour over the mixture in skillet. As eggs begin to set, gently pull the eggs across the pan with an inverted turner, forming large soft curds. Continue cooking--pulling, lifting and folding eggs--until thickened and no visible liquid egg remains. Do not stir constantly.
  • 3. Spoon egg mixture onto bottoms of kaiser rolls, dividing evenly. Top each with a slide of ham, tomato and cheese. Broil 6 inches from heat until cheese is melted, about 3 minutes. Cover with roll tops and serve.
  • 4. NOTE: I dislike mushrooms intensely, so I would either eliminate them completely or I would try some sliced green olives or some sliced celery in their place.

There's no nicer way to wake up in the morning than to the aromas of biscuits baking and coffee perking! - Dorothy McGinnis, West Haven, Connecticut
