This super-easy breakfast casserole is actually good. You can make it the night before and keep the sausage/hash brown mixture separate from the egg mixture, then pour it over top right before it goes into the oven. You might need to cook it a little longer if its cold from the fridge. This is also great if you add a little onion.

1 pound hot pork sausage
½ (30 ounce) package frozen hash brown potatoes, thawed
1 cup shredded Cheddar cheese
1 ½ teaspoons salt, divided
½ teaspoon ground black pepper
1 cup milk
3 large eggs, beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a half-casserole baking dish or deep-dish pie plate.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Stir hash browns, cooked sausage, Cheddar cheese, 1/2 teaspoon salt, and black pepper together in a large bowl. Whisk milk, eggs, and remaining salt together in another bowl. Pour hash brown mixture into prepared baking dish; pour egg mixture evenly over hash brown mixture.
  • Bake in the preheated oven until bubbling and golden, about 45 minutes.

1/3 cup canola oil

  • In a large skillet, cook potatoes and pepper in oil over medium heat until potatoes are golden brown. Stir in sausage; heat through. Remove from heat; top with cheese. Cover and let stand for 5 minutes or until cheese is melted.

3 tablespoons clarified butter
salt and ground black pepper to taste
1 pinch cayenne pepper, or to taste
1 pinch paprika, or to taste

Steps:

  • Shred potatoes into a large bowl filled with cold water. Stir until water is cloudy, drain, and cover potatoes again with fresh cold water. Stir again to dissolve excess starch. Drain potatoes well, pat dry with paper towels, and squeeze out any excess moisture.
  • Heat clarified butter in a large non-stick pan over medium heat. Sprinkle shredded potatoes into the hot butter and season with salt, black pepper, cayenne pepper, and paprika.

1 lb bulk spicy pork sausage
1 small onion, chopped (1/4 cup)
2 1/2 cups frozen diced hash brown potatoes
5 eggs
1 3/4 cups milk
1 cup Original Bisquick™ mix
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups shredded sharp Cheddar cheese (8 oz)
Picante sauce or green hot sauce, if desired
Sour cream, if desired

Steps:

  • Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 10-inch skillet, cook sausage and onion over medium-high heat 5 minutes, stirring occasionally. Stir in potatoes. Cook 5 to 7 minutes, stirring occasionally, until sausage is no longer pink and potatoes are lightly browned. Drain mixture on paper towels; spoon into baking dish.

1/2 cup yellow onion, chopped
1/2 cup fresh mushrooms, sliced
4 tablespoons vegetable oil
3 cups fresh hash browns
6 eggs, beaten with a fork with a splash of milk
1 cup shredded extra-sharp cheddar cheese

Steps:

  • In a large skillet over medium-high heat, brown the sausage. If desired, drain fat.
  • Add onions and mushrooms and cook until tender, set aside in a separate bowl.
  • In the same skillet, add the oil and hash browns over medium-high heat and cook until golden brown on 1 side. Once golden brown add eggs, add the sausage and mushroom mixture. Scramble together until desired consistency and top with cheese.

I love making this when there is a large family gathering. Instead of many pots & pans it only takes 2. Possibly 3 if you want to smother it in peppered cream gravy! You can make this in a large skillet but I prefer a griddle, easier to turn when it's time. As far as meats or vegetables go its made with what you like & the amount is up to you! Hope you enjoy it as much as we do!

10 boiled grated potatoes
5 eggs, beaten
1 cup cooked meat
1/2 cup bell peppers or 1/2 cup mushroom, etc.combine
1 cup grated cheddar cheese (it's what you like) or 1 cup monterey jack cheese, etc. (it's what you like)
2 cups of peppered country cream gravy (optional)

Steps:

  • oil griddle & get hot,.
  • put enough hash browns down to cover griddle. As hash browns are getting golden crisp I then place on top of browns my cooked meat & vegetables then my beaten eggs, place a lid over it until egg is set.
  • cut into serving size squares and flip, place lid back on & cook until egg is cooked all the way through.
  • Top with cheese until melted. We enjoy this served up with peppered cream gravy.
  • variation= with vegetables add green chili's & when done serve it with your favorite salsa.
