Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Prepare a 13x9-inch baking dish with cooking spray.

8 ounces shredded cheddar cheese
6 -8 slices bread, torn in pieces or cubed
6 eggs, slightly beaten
2 cups milk

Steps:

  • Add milk to eggs.
  • Mix egg mixture, salt and pepper together.
  • Spray a 9x13 inch pan with cooking spray.

Steps:

  • Preheat the oven to 325 degrees F. Spray a 9-by-13-inch baking dish with cooking spray.
  • Heat a large skillet over medium-high heat. Add the sausage and cook, breaking it up and stirring with a wooden spoon, until the sausage is no longer pink and is crispy and brown in spots, about 5 minutes. Remove from the heat.

8 scallions, chopped, white\light green parts and dark green parts divided
1 red bell pepper, seeded and diced, divided
8 cups fresh spinach, packed
4 large eggs
1 teaspoon kosher salt
2 teaspoons garlic powder
2 cups whole milk
nonstick cooking spray, for greasing
8 cups day-old country white bread
2 cups shredded cheddar cheese, divided
½ cup chicken stock
½ cup heavy cream

Steps:

  • Add the breakfast sausage to a large nonstick skillet over medium heat. Cook, breaking up with a spatula until no longer pink, 7-8 minutes.
  • Add the white and light green scallions, ½ of the bell pepper, and ½ of the spinach. Sauté for 2 minutes, until the spinach is wilted, then add the rest of the spinach and continue cooking until wilted. Remove the pan from the heat and let cool.
  • In a medium bowl, whisk together the eggs, salt, and garlic powder. Add the milk and whisk to incorporate.
  • Grease a 9 (22 cm) x 13-inch (33 cm) glass baking dish with nonstick spray.
  • Add the cubed bread to the baking dish. If you don't have day-old bread, spread the cubed bread on a baking sheet and dry out in a 300˚F (150˚C) oven for 15-20 minutes.
  • Sprinkle 1 cup (100 G) of shredded cheese over the bread, then evenly spread the sausage mixture on top. Pour the egg mixture over the sausage mixture. Cover the baking dish with plastic wrap and refrigerate for at least 1 hour, or overnight.
  • Preheat the oven to 375˚F (190˚C).
  • In a liquid measuring cup or small bowl, combine the chicken stock and heavy cream.
  • Pour over the chilled bake. Sprinkle the remaining cup of cheese and remaining bell pepper over the top.
  • Cover with foil and bake for 45 minutes, then uncover and bake for another 15-20 minutes, until the custard is set and the cheese is golden brown. Remove from oven and let cool for 15 minutes.

3 tablespoons butter, softened
18 slices swiss cheese
12 slices ham
4 cups spinach
6 eggs

2 tablespoons butter
3 tablespoons flour
2 cups milk
1 teaspoon salt
½ teaspoon pepper
1 pinch ground nutmeg
2 cups gruyère cheese, grated
2 cups grated parmesan cheese

Steps:

  • Preheat the oven broiler to high. Line a baking sheet with parchment paper.
  • On a cutting board, butter all the sandwich bread and transfer to the prepared baking sheet.
  • Using a glass, cut out the centers of 6 slices of bread.
  • Toast the bread under the broiler for 5 minutes, or until toasted. Keep a close eye on it so it doesn't burn.
  • Reduce the oven temperature to 350˚F (180˚C).

1 cup Sliced ham cut in one inch strips about 2-3 inches long
4 cup Diced raw potatoes
3 sheets Flour tortillas white or wheat, taco size, about 9 inch size cut in to quarters
1 tablespoon Butter
1/4 cup Diced onion
1/4 cup Sweet Red Pepper diced
6 Eggs
1/4 teaspoon Sea Salt or regular salt
1 dash Black Pepper
3/4 cup Buttermilk
5 tablespoon Cooking oil
1 cup Monterey Jack Cheese shredded
3/4 cup Sbarp Cheddar Cheese shredded
2 tablespoons Fresh Parsley to garnish

Steps:

  • Cooking the potatoes Add diced potatoes and 2 Tablespoons cooking oil to a baking dish with cover and microwave 8 minutes. In large frying pan heat up on medium heat and cook ham for 3-4 minutes to slightly brown, remove and set aside. Add 2 T oil to large frying pan and add microwaved potatoes and cook at medium heat until browned, about 10-15 minutes.
  • Cooking the onions and peppers In small frying pan add 1 Tablespoon cooking oil and add onion and cook over medium low heat for 3-4 minutes, being careful not to burn the onions, add diced red pepper and cook an additional 3 minutes. Set aside cooked onions and red pepper in small mixing bowl.
  • Making the Egg Mixture In medium size bowl add eggs, buttermilk, cheeses, cooked onions, and cooked red peppers, salt, and dash of black pepper, mix well.
  • Putting it all together Cut flour taco shells in quarters and place three pieces of cut taco shell in each miniature pie pan, with pointed end down, and overlap each so the egg mixture will not leak through, this will make the crust for each miniature breakfast pie. Brush flour tortillas with butter and place in 350 degree preheated oven for 4 minutes. Remove flour taco crusts from oven and add about ¼ cup egg mixture to each of 4 miniature pie pans, add all of the potatoes dividing between the 4 pie pans, top each with remaining egg mixture, and top each with ¼ of the ham. Bake 350 degrees for 35- 45 minutes until done, test with toothpick for doneness. Garnish with parsley and serve warm.

This is a delicious breakfast that can be put together in just a few minutes, and put in the refrigerator for a couple of hours, and then pop it in the oven, and relax, it's a great dish for company. What I did with it was make it up the night before, and bake it the next morning, all I had to do was make the coffee, and pour the juice, so simple, and so nice with the room full of company.
