Sunrise Breakfast Casserole (Prepared Night Before) image

A Johnsonville recipe that we served this at my sister's wedding brunch, this is a great breakfast prepared the night before. Especially good for morning entertaining. Prep time does not include overnight refrigeration. Cooking time includes sausage cooking.

2 (12 ounce) packages johnsonville original breakfast sausage links
9 eggs
3 cups milk
1 1/2 teaspoons ground mustard
1 teaspoon salt
1/2 teaspoon pepper
2 (20 ounce) packages refrigerated shredded hash browns
2 cups shredded cheddar cheese (8 oz)
1/2 cup sweet red pepper, diced
1/3 cup green onion, thinly sliced
2 cups salsa (optional, we did not use this) (optional) or 2 cups picante sauce (optional, we did not use this) (optional)

Steps:

  • Put sausage on a 15x10x1 inch baking pan. Bake at 375 degrees for 15-20 minutes or until the sausage is no longer pink (turning once). Drain, then slice into 1/4 inch coins.
  • In a large bowl, combine the eggs, milk, mustard, salt and pepper. Add the hash browns, sausage, cheese, sweet red pepper and green onions. Mix well.
  • Pour into a greased 13x9x2 inch baking dish, cover and refrigerate overnight.
  • Remove from refrigerator 30 minutes prior to baking. Bake uncovered at 350 degrees for 65-70 minutes or until set and golden brown. Let stand 10 minutes before serving. Serve with salsa or picante sauce, if you like.

A recipe my mother-in-law gave me. Whole family loves it! My MIL used beef sausage because she can't eat pork, and I used to use hot & spicy sausage, but my husband can't handle that anymore so I use a milder version. For mustard I use spicy brown or dijon. Sometimes we make this for supper instead of breakfast.

1 lb spicy pork sausage
6 eggs
2 cups milk
1 teaspoon salt
1 teaspoon mustard
4 slices bread, cubed
1 cup grated sharp cheddar cheese

Steps:

  • Saute sausage; drain.
  • Beat together eggs, milk, salt, and mustard.
  • In a 9 X 13 baking dish, layer bread cubes, sausage, and cheese. Pour egg mixture on top.
  • Refrigerate overnight, or at least 8 hours.
  • Bake at 350 degrees for 45 minutes, or until center is set.

1 tsp salt
2 tsp mustard
2 slices cubed bread
1 cup cheddar cheese, grated

  • saute and drain sausage beat eggs with milk, salt, and mustard layer bread, sausage and cheese pour eggs over refrigerate overnight cook at 350 for 45 minutes

So handy to make this the night before, so in the morning when your groggy, all you have to do is put it in the oven to bake!

8 slice(s) white bread, crusts removed
2 package(s) 4oz. each, shredded mild cheddar cheese
1 pound(s) bacon, fried, crumbled
1 - dozen eggs
2 cup(s) milk

Steps:

  • Butter both sides of the bread, and place in the bottom of a lightly greased 9x13 inch pan.
  • Sprinkle the cheese over the bread, then the bacon;
  • In a blender mix the 12 eggs, with the 2 cups milk, add salt and pepper if you wish...
  • Pour the egg mixture over the cheese, bacon and bread; Cover the pan with foil and refrigerate overnight. Bake at 350* for 1 hour... Enjoy!
