These thin, crisp breadsticks created in our Test Kitchen add a bit of elegance to a holiday dinner. Each bite is perfectly seasoned with thyme and coarse salt.

Steps:
- In a food processor, combine the flour, baking powder, salt and shortening; cover and process until mixture resembles coarse crumbs. While processing, gradually add water until dough forms a ball., Transfer to a floured surface. Roll dough into a 10x8-in. rectangle. Cut into sixteen 10x1/2-in. strips. Twist each strip 4 times and place on baking sheets. Brush with oil. Combine coarse salt and thyme; sprinkle over breadsticks. , Bake at 350° until golden brown and crisp, 18-20 minutes. Cool on a wire rack.

CHEESY ONION BREADSTICKS

- In a large bowl, combine the biscuit mix, milk, cheese, onions and garlic powder. Turn onto a lightly floured surface; knead 8-10 times. , Roll into an 8-in. x 6-in. rectangle. Cut lengthwise into eight strips. Place on a greased baking sheet. Bake at 375° for 12-15 minutes or until golden brown. Brush with butter.

CRISPY SEEDY BREADSTICKS RECIPE | BREAD BAKING
Not only are these breadsticks crisp, they're filled with seeds that add even more texture. And since these are dry crispy breadsticks, you can make them ahead of time and they'll last for a long time.

- Combine the water, yeast, and roughly 1/3 of the flour in the bowl of your stand mixer. Stir to combine, and set aside until it is bubbly, about 10 minutes. Add the remaining flour and the instant potatoes, and knead with the dough hook until the dough is smooth and elastic. Add the salt, oil, and seeds, and continue kneading until the seeds are well distributed. Form the dough into a ball and drizzle with a bit of olive oil. Return it to the bowl, cover the bowl with plastic wrap, and set aside until it has doubled in size, about an hour. Flour your work surface and have 3 baking sheets ready. Preheat the oven to 275 degrees.
- Turn the dough out onto your work surface and knead by hand very briefly, then form it into a rough square. Roll it to approximately 11 x 20 inches. With a pastry cutter or pizza cutter (or a knife, but a rolling cutter is easier) trim the edges so they're straight. You'll use those scraps as well. After trimming, my rectangle of dough was about 9 x 18 inches. Cut the dough into 9-inch long strips, about the thickness of a pencil, and place them on baking sheets, leaving a little room between each so they can expand a little during baking. You will need about 3 baking sheets to fit them all. You can twist the breadsticks, or leave them straight. When you're done with all of the uniformly-shaped breadsticks, cut the scraps as well, combining smaller pieces if needed.
- Bake at 275 degrees for one hour, rotating the pans and moving them to different racks as needed for even cooking. After an hour, they should be dry and crisp; a sample should snap in half and be completely dry in the center. If they haven't browned to your liking, raise the heat to 325 and bake for another 4-7 minutes, watching carefully to make sure they don't over-brown.
- Let the breadsticks cool completely on racks, then leave them out for several hours or overnight before you store them in any sort of closed container-any residual moisture can make them soft. Alternatively, store cooled breadsticks in bakery bags that "breathe," so there's no chance of dampness.
BREADSTICKS (GRISSINI) RECIPE
Classic crispy Italian bread sticks, great as a snack or for dipping. These are simple to make and taste just like they came from a restaurant!

- Using a mixer fitted with the dough hook, mix all ingredient on low speed until well combined, 2-3 minutes. Increase mixer speed to medium-low and mix for another 5 minutes. Cover bowl with plastic wrap and let sit for one hour at room temperature.
- Preheat oven to 375F/190C. Line two baking sheets with parchment paper.
- Divide dough into 24 pieces, each weighing about 25g. Roll each piece into a log that is roughly 25cm long (or 30cm if you like them extra thin) and ½-1 cm wide, depending on how thick you want them. Keep in mind that they will expand during baking. Place on prepared baking sheets, allowing sufficient space between each stick. If you like, brush them with oil or water and sprinkle with Parmesan cheese or sesame seeds.
- Bake for 20-25 minutes or until light golden and crisp. While the first batch is baking, cover the other baking sheet with plastic wrap until it's ready to go into the oven.
- Allow breadsticks to completely cool on a wire rack. They will keep in an airtight container for up to 5 days.
CRISPY BREADSTICKS

- Mix 2 tablespoons olive oil, 1 teaspoon each fennel seeds, poppy seeds and sesame seeds, and 1/2 teaspoon each salt and pepper. Roll out an 11-ounce package refrigerated breadstick dough into a 16-by-8-inch rectangle. Cut into twelve 16-inch strips and twist into breadsticks. Brush with the oil mixture. - Dissolve sugar and yeast in 1 cup plus 1 tablespoon warm water in a bowl. Let stand until yeast softens and begins to form a creamy foam, about 5 minutes.
- Combine flour and salt in the bowl of a stand mixer fitted with the paddle attachment. Mix 2 tablespoons butter into flour mixture until incorporated. Pour yeast mixture into flour mixture and knead dough using the dough hook attachment until smooth and elastic, about 10 minutes.

Steps:
- 1. Remove rolls from package and cut in half. Make a rope out of each piece - approx. 6-7 inches long. Twist ropes and pinch ends together.
- 2. Combine eggs, flour, garlic salt, parsley, rosemary & cheese together in a shallow dish. Crush french fried onion rings and place in another dish.
- 3. Dip each breadstick in egg and then roll in onion mixture.
- 4. On a baking sheet with parchment paper and sprayed lightly with cooking spray, place breadsticks approximately 2 inches apart.
- 5. Cover sheet pan with plastic wraps and let them rise until doubled - then remove wrap.
- 6. Bake at 350 degrees for 15-20 minutes.
