I found this on a low carb site... very easy and tasty too! You won't miss the bread (much anyway lol!) I buy Boar's Head corned beef sliced thin. Yummy!

1 lb sliced deli corned beef
4 -6 ounces swiss cheese
16 ounces sauerkraut
4 tablespoons low-carb thousand island dressing (I buy low-carb brands)
4 tablespoons sugar-free mayonnaise
1 tablespoon dill relish (or 1 tablespoon splenda sweetened relish)

Steps:

  • In a large casserole dish sprayed with PAM, layer slices of corned beef (the thin sliced - not chipped - works best). Kind of scrunch them up with an "uneven approach" so it's not a slab of corned beef.
  • Drain saurkraut of 1/2 its juice and lay atop corned beef (if you like the sweeter variety of kraut, thoroughly rinse off canned/jarred juice and replace with a bit of cool water -- toss 1/2 tsp Brown Sugar Twin or Splenda into it before adding to the casserole dish.) Top with swiss cheese layer and bake at 350?F for 15 minutes or until cheese is melty but not liquidy.
  • While dish is baking, in separate bowl mix Thousand Island Dressing, Mayonnaise, and Relish.
  • Remove casserole dish from oven, slice in 4 serving-size squares and top with dollops of dressing mixture.

Steps:

  • Bring chicken broth to a boil, then add hash browns. Boil for 10 minutes, then add soup and cheese. Stir until dissolved. Add bacon pieces to each bowl.

The garlic mashed potatoes enhance the "dough" flavor. I enjoy developing recipes, including gluten-free. I enjoy eating gluten-free at times and have many friends who are totally gluten-free. This is a quick pizza recipe to put together on those occasions. Even non-gluten free eaters love it! This is a recipe so simple and quick, unlike many complicated gluten-free pizza dough recipes. I used brown rice flour in my recipe, but white rice flour can be used also. This pizza crust does not crumble.

12 ounces Simply Potatoes Garlic Mashed Potatoes
1 1/4 cups rice flour
4 -5 ounces pizza sauce
8 ounces mozzarella-provolone cheese blend, shredded
1/2 cup baby spinach leaves, finely chopped

Steps:

  • Preheat oven to 400 degrees.
  • Mix the Simply Potatoes Garlic Mashed Potatoes with the rice flour. Let stand 5 minutes while gathering the other ingredients.
  • Spread potato/rice flour mix evenly on each 12" round greased pizza pan. Place in fully pre-heated oven for 5 minutes to pre-bake.
  • Remove from oven. Then, spread 4 - 5 ounces of sauce on pizza "dough". Sprinkle most of the finely chopped spinach over sauce saving a little for garnish. Sprinkle shredded cheese evenly. Bake in 400 degree oven for approximately 15 minutes more until crust is browned and crisp and cheese is bubbling. Sprinkle chopped spinach reserve for garnish. Let set about 5 minutes and slice it up and enjoy!

1 lb potato
1/2 cup finely chopped onion
2 garlic cloves, smashed
1 large egg, lightly beaten
1 tablespoon flour (optional) or 1 tablespoon matzo meal (optional)
1/2 teaspoon salt
fresh ground pepper
grapeseed olives or peanut oil
lox or smoked salmon
sour cream
chives or green onion, chopped
chopped lettuce (optional)

Steps:

  • Preheat oven to 250°F.
  • Peel potatoes and coarsely grate, directly into a large bowl of cold water.
  • Soak potatoes 1 to 2 minutes after last batch is added to water, then drain well in a colander.
  • Spread grated potatoes, garlic and onion on a kitchen towel, roll up and wring out as much liquid as possible.
  • Transfer potato mixture to a bowl and stir in egg and salt. If it's too runny add a little flour or matzo meal. Too dry add a little bit more egg.
  • Heat a large skillet. Add enough oil to cover the bottom plus a bit more. Get the oil hot but not smoking. Use a spoon to potato mixture into skillet, spreading with the back of the spoon into 3 or 4-inch rounds.
  • Reduce heat to moderate and cook until undersides are very well browned, about 5 minutes. Turn latkes over and cook until undersides are very well browned, about 5 minutes more. You want walnut brown, not beige.
  • Transfer to paper towels to drain and season with salt. Add more oil to skillet as needed.
  • Keep latkes warm on a wire rack set in a shallow baking pan in oven.
  • To make the Double Down, spread crème fraiche on one side of a latke, pile on lox and onions, spread some crème fraiche on another latke, then make into a sandwich.

1 package (2 to 3 pounds) corned beef brisket
1 cup Thousand Island dressing
16 slices pumpernickel rye bread, toasted
8 slices (1 ounce each) Swiss cheese

Steps:

  • Place sauerkraut in 3- to 4-quart slow cooker. Place beef brisket on sauerkraut. (If brisket includes packet of spices, sprinkle spices over brisket.)
  • Cover and cook on Low heat setting 9 to 11 hours.
  • Remove beef from cooker; place on cutting board. Cut beef into slices. To serve, spread 1 tablespoon dressing on each toast slice. 8 slices swiss cheese
12 ounces pastrami, from a deli
1/2 cup sauerkraut
1/4 cup vegetable oil

Steps:

  • Heat large electric griddle to med. high.
  • Spread about 2 tablespoons oil on griddle.
  • Spread bag of hash browns on griddle. Make a large rectangle and smash potatoes flat and thin. Cook about 8 minute till golden brown. Cut hash browns in 8 equal squares and cook the other side with rest of oil until crisp and golden brown.
  • When hash browns are done, add one slice swiss to each square.
  • grill sauerkraut until hot and spread on top of 4 squares.
