BREADFRUIT AU GRATIN

1 large green and firm breadfruit
¼ pound salted cod filets
2 tablespoons olive oil
1 large onion finely chopped
2 garlic cloves (finely chopped)
1 tablespoon fresh parsley (finely chopped)
¼ teaspoon thyme (leaves only an chopped)
Freshly ground black pepper to taste
Salt to taste
1 egg (beaten)
3/4 cup milk
2 cups Parmesan (freshly grated)
1 tablespoon unsalted butter

Steps:

  • The day before rinse codfish filets to remove most of the salt. Soak in 6 quarts of water for a about 4 - 6 hours, drain and replace with fresh water, repeat process about 2 - 3 times. After last soaking, rinse filets under running water, pat dry and flake and set aside.
  • Peel breadfruit and remove core. Cut in medium pieces and place to boil in large pot with enough water to cover. Once thoroughly cooked, removed breadfruit pieces, place in a large bowl and mash with a potato ricer or potato masher or a large fork. Set aside.
  • Preheat oven to 375 degrees Fahrenheit. Grease baking dish.
  • In a frying pan, add oil and then codfish. Let cook for about 2 - 3 minutes, add onion, parsley, thyme and black pepper. Cook for about 3 - 4 minutes while stirring. Remove pan and let cook.
  • Mix mashed breadfruit with codfish mixture; season to taste. Add milk, beaten egg and cheese and mix thoroughly. Add mixture in prepared baking dish. Dot with butter and bake golden in oven for about 30 - 45 minutes. Allow Breadfruit au Gratin at room temperature for about 15 minutes before serving.

My old friend FBC has turned his nose up at this cookbook, even though he has never seen a copy, probably because it has not been approved by the food gurus of NYCity. Of course he lives in that culinary mecca, W. Lafayette, IN, so who am I to question his taste? He is missing out on recipes like this. You can also add a layer of cooked bacon slices if you wish.

1/2 breadfruit, peeled, cored, and sliced into 6 chunks
1/4 cup butter
2 onions, thinly sliced
2 cups milk
2 tablespoons flour
1 cup cheddar cheese, grated
nutmeg, grated, to taste
salt & pepper, to taste

Steps:

  • Preheat your oven to 375 degrees F.
  • Boil the breadfruit in lots of salted water until tender; this takes about 20 minutes.
  • Heat the butter in a saucepan. Add the onions & cook until golden. Remove the onions and set aside.
  • Add flour to same saucepan and cook,stirring for 1-2 minutes. Slowly add the milk, whisking until the mixture begins to thicken. Remove from the heat.
  • Add the grated cheese, nutmeg, salt, & pepper.
  • In a buttered casserole dish layer the breadfruit, onions, and cheese sauce, ending with the cheese sauce.
  • Bake for 25 minutes.

1 Large breadfruit (about 2.5 lbs.)
5 Tablespoons butter
3 Garlic cloves, minced
1/2 Cup heavy cream
1/2 Cup grated Mozzarella cheese
1/2 Cup chicken stock
1 Teaspoon Kosher salt
1 Teaspoon Freshly ground black pepper

Steps:

  • Peel and core the breadfruit, then slice ¼-inch thick. Bring to boil in water, then simmer for five minutes. Drain and discard water. Place breadfruit slices in a buttered casserole dish, then dot with butter and pour on mixture of cream, garlic and stock. Sprinkle with salt & pepper to taste and top with cheese. Cover and bake for 15 minutes in 375° oven, then uncover and bake fro an additional 15 minutes or until breadfruit is done and cheese is golden brown and slighlty crisp.

2 teaspoons pumpkin pie spice
2 teaspoons baking powder
