nonstick cooking spray
6 (4 ounce) fillets pollock fillets
1 tablespoon chopped fresh herbs, or to taste
salt and ground black pepper to taste
⅓ cup sour cream
¼ cup grated Parmesan cheese
2 tablespoons melted butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Cover a baking sheet with aluminum foil and spray it with cooking spray.
  • Season fish fillets with herbs, salt, and pepper. Place on the prepared baking sheet.
  • Mix sour cream, Parmesan cheese, and melted butter together in a small bowl. Apply sour cream mixture to each fillet.
  • Bake in preheated oven until fish flakes easily with a fork, 15 to 25 minutes.

Nonstick cooking spray
1/2 cup crushed seasoned croutons
1/4 cup grated Parmesan cheese
2 teaspoons dried parsley flakes
1/4 teaspoon paprika
1 egg
1 tablespoon lemon juice
1 tablespoon water
1 lb. fish fillets (1/4 to 1/2 inch thick)

Steps:

  • Heat oven to 350°F. Spray shallow baking pan with nonstick cooking spray. In shallow dish or pie pan, combine croutons, cheese, parsley flakes and paprika; mix well. In another shallow dish, combine egg, lemon juice and water; beat well.
  • Cut fish fillets into serving-sized pieces. Dip in egg mixture, tucking thin ends of fish under to form pieces of uniform thickness. Dip fish in crouton mixture, patting gently to coat; place in sprayed pan. Spray fish with cooking spray for about 5 seconds.
  • Bake at 350°F. for 10 to 15 minutes or until fish flakes easily with fork.

This is a nice baked fish. I enjoy making this with garlic mashed potatoes :-) (prep time does not include time to thaw frozen fillets)

2 pollock fillets, fresh or frozen
1/2 cup plain breadcrumbs
2/3 teaspoon salt
3/4 teaspoon black pepper
1 teaspoon garlic powder
3/4 teaspoon rubbed sage
1 teaspoon unsalted butter, divided

Steps:

  • If your fillets are frozen, thaw in advance.
  • When your fillets are ready to prepare, preheat your oven to 350F degrees and lightly grease a shallow pan.
  • Melt your butter, and set aside.
  • Take a large plate (NOT PAPER) and pour breadcrumbs on to plate.
  • Add spices to breadcrumbs and mix through with your fingers.
  • Add butter to breadcrumbs and mix through with fingers again.
  • Melt the other 1/2 teaspoon butter.
  • Take melted butter (allow to cool a little so you do not burn your fingers!!!) and lightly spread over the fillet and then roll fillet in breadcrumbs.
  • Pat breadcrumbs into both sides of the fillet over and over again until nicely coated.
  • Put fillets on pan and bake for 20 minutes, or until fish flakes nicely.
  • Enjoy alone or with your favorite sauces!

Steps:

  • (For best results prepare using frozen fillets) Heat a dry nonstick skillet over medium high heat. Add panko bread crumbs; toast, stirring until crumbs are lightly browned. Transfer toasted bread crumbs to a medium size bowl. Add parmesan, parsley, salt, black pepper and cayenne pepper. Stir in 1 tablespoon of olive oil. Set aside. Wipe out skillet. Heat skillet to medium high heat and add remaining olive oil. Add Alaskan Pollock fillets and cook 5 minutes. Turn over fillets and heap with crumb mixture. Cover and cook another 3-5 minutes. Garnish with lemon wedges and serve.
