Traditional Beef Stroganoff with Brandy image

We are sharing our recipe for a Traditional Beef Stroganoff With Brandy. Tender flash-fried sirloin in a silky smooth, creamy and rich sauce flavoured with brandy, paprika and a hint of cinnamon is just perfect! The traditional Russian beef dish tastes luxurious but isn't difficult to make. Believe it or not, you can make it in just 20 minutes!

200 g sirloin steak (cut against the grain into thin strips)
1 tbsp plain flour
20 g butter
100 g button mushrooms (halved)
1 small brown onion (thinly sliced)
2 tbsp brandy
½ tsp paprika
½ tsp cinnamon
½ stock cube (+ 4 tbsp of water)
70 g creme fraiche
1 tbsp lemon juice
fries, mashed potato, rice or vegetables (to serve)

Steps:

  • Place your beef strips in a bowl and season with salt and pepper. Add 1 tbsp of plain flour and mix to coat.
  • In a large frying pan, melt the butter. Add onions and fry for 2 minutes on medium heat. Then add mushrooms and carry on cooking for another 3 minutes, until both the onions and mushrooms have softened.
  • Gather the mushrooms and onions to one side of the pan. Increase the heat to high and tip in the beef to the other side of the frying pan. Stirring, flash-fry the beef for 1-2 minutes until just browned all over.
  • Add the brandy and let most of it evaporate, stirring the beef, mushrooms and onions together (this shouldn't take longer than 20 seconds). Crumble in half a stock cube. Add paprika and cinnamon. Then pour 4 tbsp of water in. Add creme fraiche and mix together. Only cook until it's warmed through, then take off the heat before the beef has time to overcook.
  • Just before serving, stir in a tbsp of lemon juice.

3 cups beef stock
1 carrot, chopped
6 sprigs fresh thyme
1 bay leaf
2 pounds chuck roast, cut into 2-inch cubes
Kosher salt and freshly ground black pepper
6 tablespoons extra-virgin olive oil
1 medium onion, chopped
2 tablespoons cognac
5 tablespoons unsalted butter
1 pound mushrooms, sliced
3 cloves garlic, chopped
2 tablespoons sour cream, plus more for garnish
1 tablespoon Dijon mustard
2 tablespoons chopped fresh parsley leaves, plus more for garnish
1 (1-pound) package wide egg noodles

Steps:

  • Heat the beef stock with the carrot, 3 thyme sprigs, and bay leaf. Pat the beef dry and season it with salt and pepper. Heat 3 tablespoons oil in a large heavy bottomed skillet over high heat. Fry the meat in batches so that it is browned on all sides. Lower the heat to medium and return all the meat to the pot. Add the onions and cook until they are soft, about 5 minutes. Pour in the cognac and cook until the alcohol has burned off, about 5 minutes. Add the beef stock, discarding the carrot, thyme sprigs, and bay leaf. Cook, partially covered, over a very low flame for 1 1/2 to 2 hours.
  • In a large skillet over medium heat, melt 3 tablespoons butter in the remaining 3 tablespoons olive oil. Add the mushrooms, garlic, and remaining 3 thyme sprigs and cook until the mushrooms are browned and cooked through. Remove from heat and set aside.
  • When the meat is done, remove it from the heat and fold in the mushrooms, sour cream, mustard, and parsley. Taste and adjust the seasoning with salt and pepper.
  • Meanwhile, cook the noodles in a large pot of boiling, salted water until tender. Drain the noodles well, toss with the remaining 2 tablespoons butter, and season with salt and pepper. Serve the stroganoff over the noodles; garnish with more sour cream and chopped parsley.

BRANDY'S CREAMY NOODLES "STROGANOFF"

Was tired of plain old ramen noodles so I came up with this recipe.

1 pkg beef flavored top ramen noodles
1 Tbsp margarine
2 1/2 Tbsp sour cream
1/2 tsp hot sauce, your choice

Steps:

  • 1. Prepare top ramen noodles as instructions on package says. When noodles are done cooking, drain all of the water except for 2 tablespoons.
  • 2. Mix the seasoning packet, margarine, sour cream and hot sauce in. Mix well and Enjoy!!!!

12 ounces egg noodles
2 tablespoons salted butter
2 tablespoons olive oil
1 pound sirloin steak, cut into small cubes
Salt and freshly ground black pepper
8 ounces cremini mushroom caps, halved
2 carrots, finely chopped
1/2 onion, finely chopped
1/2 cup brandy
2 1/4 cups beef stock
2 tablespoons cornstarch
1/4 cup sour cream
1 heaping teaspoon Dijon mustard
Chopped fresh parsley, for serving

Steps:

  • For the buttered egg noodles: Bring a large pot of water to a boil. Add the egg noodles and cook according to the package instructions. Drain and set aside.
  • For the beef stroganoff: Heat 1 tablespoon olive oil in a skillet over medium-high heat. Season the meat with salt and pepper. Add half the meat to the pan and brown it quickly. Remove the first batch and cook the rest of the meat. Remove and set aside with the first batch.
  • Add the remaining 1 tablespoon olive oil to the skillet and cook the mushrooms, carrots and onions until lightly browned. Turn off the heat and add the brandy and 2 cups of the stock. Turn the heat back on and reduce the liquid for 2 to 3 minutes. Mix the cornstarch with the remaining 1/4 cup stock, getting out all the lumps. Pour the slurry into the skillet and cook until the sauce thickens.
  • Turn off the heat. Stir in the sour cream, mustard and beef. Taste and adjust the seasoning with salt and pepper.
  • To finish the noodles, melt the butter in a skillet over medium heat. Add the cooked egg noodles and toss to heat through and coat with the butter.
  • Serve the stroganoff with the noodles, and sprinkle with the parsley.

This recipe is our family favorite. The sauce is very rich and creamy and is great served over egg noodles. It does take a little longer to make, but it is well worth it!

2 tablespoons vegetable oil
1 ½ pounds beef stew meat, cut into 1/2 inch pieces
½ pound bacon, cut into 1/4 inch pieces
½ onion, diced
3 strips celery, diced
2 tablespoons seasoning salt
¼ cup Worcestershire sauce
3 (14 ounce) cans beef broth
1 (8 ounce) package dry egg noodles
1 teaspoon butter
2 (4 ounce) cans sliced mushrooms
¼ cup cornstarch
⅓ cup cold water
1 (8 ounce) container sour cream

Steps:

  • In a large Dutch oven heat the oil over high heat and brown the cubed stew meat. Remove from pan. In the same pan, saute the bacon, onion and celery until onions are translucent and bacon is fully cooked. Return the browned stew meat to the pan.
  • Stir in seasoning salt, Worcestershire sauce and beef broth. Bring to a boil, then cover and reduce the heat to medium. Simmer for 1 to 1 1/2 hours or until meat is fork tender.
  • Bring a large pot of lightly salted water to a boil. Add the egg noodles and cook for 8 to 10 minutes or until al dente; drain.
  • In a skillet, melt the butter over medium heat and saute the mushrooms for 3 to 4 minutes. Add the mushrooms to the meat mixture.
  • Bring the meat mixture to a boil. Mix together the cornstarch and the water, and stir into the meat mixture; stirring constantly. Stir in sour cream until creamy serve over the egg noodles.
