Steps:
- Preheat oven to 400 degrees F; spray a 8 x 8 inch baking dish or 2 1/2 quart baking dish with nonstick cooking spray.
- In a small skillet, warm water, sour cream, sugar and vinegar; whisk to make smooth.
- Mix flour, salt, pepper and garlic powder; dredge all sides of pork in flour mixture.
- In a large skillet, heat oil over medium high heat; brown both sides of pork chops.
- Arrange browned pork chops in prepared baking dish; pour warmed sauce over top.
- Cover tightly with foil; bake for 1 hour.

- Season pork chops with salt, pepper, and garlic powder, and then dredge in 1/2 cup flour. In a skillet over medium heat, lightly brown chops in a small amount of oil.
- Place chops in slow cooker, and top with onion slices. Dissolve bouillon cubes in boiling water and pour over chops. Cover, and cook on Low 7 to 8 hours.
- Preheat oven to 200 degrees F (95 degrees C).
- After the chops have cooked, transfer chops to the oven to keep warm. Be careful, the chops are so tender they will fall apart. In a small bowl, blend 2 tablespoons flour with the sour cream; mix into meat juices. Turn slow cooker to High for 15 to 30 minutes, or until sauce is slightly thickened. Serve sauce over pork chops.

- In a large skillet, brown pork chops in oil on both sides. Combine the water, brown sugar, onion, ketchup, bouillon and garlic; add to skillet. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until meat juices run clear. , Remove chops and keep warm. Combine flour and cold water until smooth; stir into skillet. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Remove from the heat; stir in sour cream. Serve with pork chops.

Steps:
- Sprinkle chops with salt and pepper.
- Spray non-stick skillet with cooking spray.
- Heat; add chops; cover and cook for 5 minutes.
- Turn chops; cover and cook for another 5 minutes.
- In small bowl, mix 1/2 cup broth with barbecue sauce; pour over chops.
- Cover tightly; simmer for 10 minutes.
- Remove chops; keep warm.
- In same bowl, mix remaining broth, milk, sour cream and flour.
- Beat until smooth.
- Pour into skillet, cook and stir on med heat for 2 minutes.
- Serve sauce over chops.

BRAISED PORK FILLETS WITH PRUNES AND CREAM SAUCE
Steps:
- Simmer the prunes in the wine over moderate heat, covered, until plump and tender, about 10 minutes. Strain and reserve the red wine.
- Bone and tie the pork fillets. Saute the fillets in the oil until they are a rich golden brown on all sides, 3 to 4 minutes. Transfer fillets to a plate. Add the mirepoix and the bones to the pan and saute to brown lightly, 8 to 10 minutes. (Additional oil may have to be added to keep the mirepoix from burning.)
- Add the wine from the prunes and deglaze the pan. Place the pork fillets on top of the mirepoix (the liquid should come part way up the pork chops), cover, and simmer gently over very low heat or until the fillets are tender when pierced with the tip of a sharp knife, 5 to 8 minutes.
- Place the fillets in an oven pre-heated to 325 and immediately turn off the heat. The meat should be cooked within 10 and 15 minutes. Take care not to overcook the pork. Use tongs to transfer the meat to a heated platter and remove the strings. Arrange three prunes on each fillet, then cover the fillets with foil.
- Pour the rest of the contents of the pan through a fine-mesh strainer, pressing down on the vegetables to extract all the juices. Return the juices to the pan and reduce by half rapidly, stirring and scraping any brown bits that cling to the pan. Add the cream and continue to boil down rapidly until the color becomes a light beige and the mixture is thick enough to coat the back of a spoon.
- Whisk in the jelly and continue to cook, whisking, until the jelly is dissolved. Taste and correct seasoning of the sauce. Spoon the sauce over the fillets, sprinkle with minced parsley, and serve.
PORK CHOPS WITH MUSTARD & SOUR CREAM SAUCE
Recipe comes from Food & Wine. This is a different take on the traditional pork chop. Its simple and quick to make. A nice sauce is made to cover the pork chops and the sauce can double as a gravy to be served over mashed potatoes. Menu Suggestion: mashed potatoes and sauteed mushrooms.

- In a blender process chicken broth, sour cream, both mustards and the cornstarch until mixture is smooth and not lumpy. Transfer the mixture to a saucepan and simmer over medium heat until it becomes thickened. Stir in the parsley and keep sauce warm.

BRAISED PORK CHOPS WITH SOUR CREAM SAUCE
Steps:
- 1. Heat the oil in a large skillet large enough to hold the chops in one layer.
- 2. Add the chops and cook until golden brown on both sides, about 5 minutes.
- 3. Scatter the carrots, celery, onion, garlic, thyme, bay leaf and parsley around the chops.
- 4. Cover and cook 10 minutes.
- 5. Blend the wine, chicken broth and tomato paste and add to the skillet.
- 6. Cover closely and cook about 25 minutes longer, turning the chops once.
- 7. Remove the chops and keep hot. Add the mustard and sour cream to the skillet and stir.
- 8. Bring just to a boil, but do not boil or the sour cream will curdle.
- 9. Put the sauce through a fine sieve, pressing down with a wooden spoon to extract the liquid flavorings from the vegetables.
- 10. Pour the sauce into a saucepan and add the capers.
- 11. Reheat gently without boiling.
- 12. Spoon the sauce over the chops.

- Melt butter in a large skillet over medium heat. Season pork chops with salt and pepper, and arrange in a single layer in pan. Pan-fry for 2 minutes on each side to brown. Pour in wine, and continue cooking for 6 minutes. Remove chops from pan.
- Pour cream into the skillet, and then add mushrooms. Increase heat to high; cook for 5 minutes, stirring frequently, until sauce reduces and thickens. Return chops to pan to warm before serving.
