3 pounds bone-in country-style pork ribs
Kosher salt and freshly ground black pepper
3 tablespoons vegetable oil
1 carrot, chopped
1 stalk celery, chopped
1 onion, chopped
4 cloves garlic, minced
2 tablespoons tomato paste
1/4 cup apple cider vinegar
1 teaspoon crushed red pepper flakes
2 bay leaves
2 1/2 cups chicken stock
Creamy Polenta, recipe follows
2 tablespoons chopped fresh parsley, for garnish
Vegetable cooking spray
1 1/3 cups half-and-half
1 cup milk
2 tablespoons butter
1/3 cup coarse polenta, or corn grits
Kosher salt
1/2 cup grated Parmesan
Freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Pat the ribs dry and sprinkle with salt and pepper. Heat 2
  • tablespoons of the oil in a Dutch oven over medium-high heat and brown the ribs
  • on all sides, working in batches if needed. Remove the ribs and set aside. Add
  • the remaining 1 tablespoon of oil to the Dutch oven and reduce the heat to medium.
  • Add the carrots, celery, onions and some salt and pepper and cook until soft,
  • about 5 minutes. Add the garlic and cook until fragrant, about 1 minute. Add
  • the tomato paste and cook, stirring, to remove the raw flavor, about 3 minutes.
  • Deglaze the pan with the vinegar, and then add the red pepper flakes and bay
  • leaves.
  • Add the ribs back to the pan and add enough stock to reach
  • halfway up the sides of the ribs. Bring the pan to a simmer, cover and place in
  • the oven. Braise until the meat is tender, about 1 1/2 hours. During the last
  • half hour, uncover to allow the liquid to reduce and the pork to brown.
  • Serve the ribs with Creamy Polenta, spooning the sauce on
  • top, and garnishing with parsley.
  • Spray the insert of a slow cooker with cooking spray (for easier clean up) and preheat on high.
  • In a medium saucepan, add 1 cup of the half-and-half, the milk, 1 tablespoon of the butter and the polenta. Season with salt and bring to a boil over medium-high heat, whisking constantly to keep the mixture lump-free. Boil for 2 to 3 minutes. Pour the mixture into the slow cooker and cook on high for 2 hours, stirring once or twice per hour.
  • Once you are ready to serve, open the slow cooker and whisk in the remaining 1 tablespoon butter, the remaining 1/3 cup half-and-half and the Parmesan. Salt and pepper conservatively since the polenta will be served with a robustly salted dish.

4 pounds bone-in country-style pork ribs
Kosher salt
1 1/2 teaspoons hot paprika
3 tablespoons extra-virgin olive oil
3 medium onions, peeled and cut into wedges
1 12-ounce bottle amber ale
1 1/2 cups low-sodium chicken broth
2 bay leaves
6 sprigs thyme
2/3 cup apple cider vinegar
3 tablespoons honey

Steps:

  • Preheat the oven to 425 degrees F. Pat the ribs dry, season with salt and sprinkle with 1/2 teaspoon paprika. Heat the olive oil in a large Dutch oven over medium heat. Add the ribs in batches and cook until browned, about 8 minutes per side. Remove to a plate. Add the onions and cook until browned, about 10 minutes. Add the remaining 1 teaspoon paprika and season with salt.
  • Add the beer; bring to a boil and cook until the liquid is reduced by half, about 8 minutes, scraping up the bottom of the pot with a wooden spoon. Add the chicken broth, bay leaves and thyme; when the liquid begins to simmer, return the ribs to the pot and transfer to the oven. Cook, uncovered, turning the ribs once or twice, until the meat is almost tender, about 1 hour.
  • Mix the vinegar and honey in a measuring cup. Remove the pot from the oven and place on the stovetop; bring to a simmer over medium heat. Add the vinegar mixture and bring to a boil, then return the pot to the oven. Continue to braise, uncovered, until the ribs are tender, 15 to 20 more minutes. Return the pot to the stovetop and transfer the ribs to a plate. Bring the sauce to a boil over medium heat; skim off the fat and cook until thickened, 10 to 15 minutes. This recipe comes originally from the "Meat lovers Cookbook" - It is easy to put together and wait til you taste them.they are awesome - I served them with noodles and a green salad I sometimes add 3 cloves of garlic with the BBQ Sauce - Play with it to suit your taste.-

3 lbs country-style boneless pork ribs
2 medium onions, sliced
1 (12 ounce) can beer
2 cups of your favorite barbecue sauce (I like "Diana Original" for this recipe)

Steps:

  • Brown the pork in a lightly sprayed skillet on all sides (apprx 7 minutes).
  • Place the ribs in an oven proof pan and scatter the onions all around them.
  • Pour in the beer and seal with a lid or tin foil.
  • Bake at 375F until the pork is tender 1 1/2- 2 hours.
  • Pour out the beer.
  • Slather the pork with the BBQ sauce and bake uncovered for 1 more hour or until the meat is brown and the sauce is thick.
  • Enjoy.

Country-style ribs have enough rich porkiness to stand up to the strong flavors of Latin America, so, here, they are coated with an aromatic spice rub that gets some smoky heat from chipotle peppers, then braised in a combination of citrus juices and beer. To avoid burning the spices, the ribs are coated with spice rub only on the side that doesn't get browned. Though the pomegranate seeds are not essential, they do add a nice hit of tartness and texture.

3 pounds bone-in or 2 1/2 pounds boneless country-style pork ribs
2 teaspoons kosher salt
1 tablespoon ground cumin
1 tablespoon ground coriander
2 teaspoons dried ground chipotle pepper
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
1/2 teaspoon cinnamon
2 tablespoons vegetable oil
2 red onions, halved and thinly sliced
2 tablespoons minced garlic
3/4 cup orange juice
1/4 cup fresh lime juice
1/4 cup to 1 cup beer of your choice
1/2 cup roughly chopped cilantro, for garnish
1/2 cup pomegranate seeds, for garnish (optional)

Steps:

  • Dry the ribs well, sprinkle all over with salt and allow to sit, refrigerated, for 1 to 2 1/2 hours.
  • In a small bowl, combine cumin, coriander, chipotle pepper, black pepper, cayenne and cinnamon, and mix well. Dry the ribs well again and rub this mixture onto one side and the edges of the ribs, pressing to make sure it adheres. Heat oil over medium-high heat in a Dutch oven or other large, heavy pot until shimmering. In 2 batches, place the ribs in the pot, with the spice-rubbed side up, and brown the opposite side well, about 5 to 8 minutes. Remove to a platter as browned.
  • Add onions and cook, stirring frequently, until they just start to brown, about 10 minutes. Add garlic and cook, stirring constantly, for 1 minute more.
  • Move oven rack to middle position and heat oven to 325 degrees. Return ribs to the pot and add the orange juice, lime juice and enough beer so that the liquid comes halfway up the sides of the ribs. Bring to a simmer, then cover, put in the oven, and cook until the ribs are very tender, about 1 hour and 15 minutes. Remove the ribs from the pan, cover loosely with foil, and set aside. Continue to reduce the liquid if it is too thin, then adjust seasoning.
  • Top each rib with a several tablespoons of sauce, sprinkle with cilantro and pomegranate seeds, if using, and serve.

The best BBQ Country Ribs I have ever ate much less made!! I love this recipe and hope that you do too! It is another family favorite!! It is a little time consuming but u could always just put them in the crock pot and forget about 'em! And baked beans is a perfect side dish for them!

3 lb country style pork ribs
2 medium yellow onions sliced
1 can(s) 12 oz can of beer
2 c sweet baby ray's bbq sauce
2 Tbsp seasoning salt
1 Tbsp garlic powder
1 Tbsp roasted garlic and herb seasoning
1 Tbsp smoked paprika
1 Tbsp ground black pepper
1/2 Tbsp table salt

Steps:

  • 1. Prepare pork by rinsing off and patting dry with paper towels!Mix seasonings together to make a dry rub for the the ribs making sure all sides are coated!! Set aside! Clean and cut onions in half them slicing them setting to the side!
  • 2. Pre-heat oven 375 degrees F! Heat a large skillet spraying lightly with cooking spray! Braise pork on all sides browning them till golden brown(app. 7 mins). Place the ribs in a oven proof pan, scattering onions all around and on top of ribs.
  • 3. Pour 12 oz. can of beer all over the top of onions and ribs and then sealing with a lid of tin foil! Bake until pork is tender app. 1 1/2-2 hrs, pour beer off ribs, leaving onions!
  • 4. Slather the ribs with BBQ sauce and bake another hour uncovered or until meat is brown and sauce is thicken!! Remove from oven and enjoy!!!

Country-style pork ribs are about the cheapest meat available on a regular basis in the store. Due to this, my family eats them fairly regularly. Although we like barbecued country-style pork ribs, we needed a change. This recipe is a compilation of what I liked best from different recipes and put them together to make my own. My 10-year old son deemed "the best ever!" Hope you like this change from the ordinary.

1 teaspoon kosher salt
1 teaspoon fresh cracked black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 tablespoons oil
3 lbs country-style boneless pork ribs
3 medium onions, sliced (my family likes even more)
2 (12 ounce) cans beer
2 cups water (to make pork gravy)
2 (1 -2 ounce) envelopes knorr roasted pork gravy mix
1 (10 1/2 ounce) can cream of mushroom soup
1 (1 ounce) envelope Lipton Onion Soup Mix
8 ounces sliced fresh mushrooms

Steps:

  • Mix salt, pepper, garlic powder, and onion powder in small bowl or Ziploc bag and then sprinkle liberally over ribs. Allow the seasoned ribs to sit for about 20 minutes at room temperature.
  • Heat oil in large heavy-bottomed, oven-proof Dutch oven (love my enameled cast iron Dutch oven for this). Brown the ribs on all sides. Do NOT crowd them while browning, if it takes two batches, let it take two batches (otherwise they just steam and won't develop a nice sear).
  • Once ribs have browned well, remove them to a plate.
  • Preheat oven to 375°F.
  • There should be ample rendered fat, but if there is more than about 4 tablespoons, remove the excess. Place all sliced onions in the bottom of the pan and allow them to start to take on just a bit of color.
  • Pour in about 1/4 can of beer to deglaze the bottom of the pan while the onions continue to cook.
  • Once the bottom of the pan is deglazed, return ribs to the pan (with any of juices on the plate). Pour in the rest of the beer. This should just barely cover all of the ribs and onions.
  • Cover and bake at 375°F for 1 1/2 to 2 hours.
  • When you remove the Dutch oven from the oven, be prepared for the onions to have cooked down into gooey lusciousness, and the sides of the pan to look like a disaster. Don't worry - it will taste great.
  • Remove the ribs (which will be falling apart tender) and the onions from the pan.
  • Turn oven down to 325°F.
  • Use the water that you will be using to make the pork gravy mix with to "deglaze" the bottom on the pan, then add the mix according to the instructions on the packet. (I originally did try using canned gravy but it tasted "canned.") Once the gravy has thickened, mix in cream of mushroom soup, the dry onion soup mix and the mushrooms.
  • Place ribs and onions back in the Dutch oven and stir so that the gravy is covering the ribs.
  • Cover the Dutch oven again, and return to the oven heated to 325°F.
  • Cook for about 1 hour.
  • Serve with mashed potatoes, noodles or rice.

6-1/2 lb. bone-in country-style pork ribs, cut into individual ribs (12 to 16 large, meaty ribs)
2 12-oz. bottles lager, such as Budweiser
2 Tbs. canola oil
1 medium yellow onion, chopped
1 medium carrot, chopped
1 medium celery rib, chopped
4 medium cloves garlic, crushed
1-1/2 cups lower-salt chicken broth
2 Tbs. soy sauce
1/2 tsp. crushed red pepper flakes
For the sauce:
1/3 cup packed light brown sugar
3 Tbs. whole-grain mustard
3 Tbs. balsamic vinegar

Steps:

  • Braise the ribs: Position an oven rack about 6 inches from the broiler element and heat the broiler on high. Arrange half of the ribs in a single layer in a broiler pan (without the top rack). Broil, turning occasionally, until browned on all sides, about 15 minutes. Transfer to a platter and discard the fat in the pan. Put the pan over high heat. Add 1 bottle of the beer and bring to a boil, scraping up the browned bits from the bottom of the pan with a wooden spatula. Transfer the mixture to a large roasting pan. Repeat with the remaining ribs and beer. Clean the broiler pan. Reposition the rack to the center of the oven and lower the oven temperature to 350°F. Heat the oil in a 12-inch skillet over medium heat. Add the onion, carrot, celery, and garlic and cook, stirring occasionally, until the onion softens, about 5 minutes. Transfer to the roasting pan holding the beer mixture; stir in the broth, soy sauce, and red pepper flakes. Spread the vegetables in an even layer and arrange the ribs on top (it's OK if they're crowded). Cover the roasting pan with heavy-duty aluminum foil, crimping the edges to create a tight seal. Braise in the oven for 30 minutes. Turn the ribs, re-cover the pan, and braise until the ribs are tender when pierced with a small knife, 60 to 80 minutes more. ANCHO CHILE BRAISED COUNTRY STYLE PORK RIBS



Ancho Chile Braised Country Style Pork Ribs image

Country style pork ribs braised in a sweet, piquant and smoky ancho chile sauce to irresistible sticky tenderness.

2½ pounds bone in country style pork ribs
3½ tablespoons ghee or other high heat cooking fat
2 cups water
3 dried ancho chiles
1 dried guajillo chile
½ cup diced tomatoes pulsed in a food processor to get a smoother consistency (not too smooth but not too chunky)
2 tablespoons apple cider vinegar
1 red bell pepper
½ tablespoon of tomato paste
1 medium onion chopped
4 cloves of garlic sliced thinly
1 bay leaf
salt and pepper to taste
1 teaspoon coriander seeds
1 teaspoon of ground cumin
1 teaspoon of salt
½ teaspoon ground cinnamon
¼ teaspoon ground cloves
½ teaspoon black pepper
½ tablespoon dried oregano
salt and pepper to taste

Steps:

  • In a medium sized pan dry pan, toast the coriander seeds over medium heat shaking the pan often to prevent burning for 2-3 minutes or until fragrant. Pour the toasted coriander seeds in a mortar and pestle or spice grinder and grind until you get a powder like consistency. In a pinch bowl mix together the toasted ground coriander with the rest of the spice mix ingredients.
  • Carefully snip the ends of the chilies off with kitchen shears over a trash can and shake out and many of the seeds as you can. The more seeds the spicier it will be, and if you get most of the seeds out then it will not be spicy at all. With the same pan you toasted the coriander seeds, toast the chiles tossing the pan to prevent burning for about 2 minutes or until the chiles have slightly softened and become fragrant. Place the chiles in a heat proof bowl and heat the water until boiling. Pour the water over the chiles, cover the bowl with foil, and allow to sit and soak for 25 minutes.
  • While the chiles are soaking place your red bell pepper over a gas stove so it's right above a burner and turn the heat to medium heat so that the flame is touching the bare pepper. This will blacken and char the skin, so you'll want to rotate it and char the whole thing, Once it's charred place the whole thing in a medium bowl and cover it with foil to rest for the remainder of the soaking time for the chiles.
  • Once the chiles have soaked pour the soaking liquid along with the soaked chiles into a blender. Remove the red bell pepper and peel the blackened skin off and cut the core, stem and seeds out of it leaving just the flesh and place the roasted pepper flesh into the blender along with the spice mix and apple cider vinegar. Turn the blender on and puree starting at low and then gradually rising to a higher speed until completely smooth.
  • Preheat the oven to 300 degrees and rinse and pat dry the ribs. Heat 2½ tablespoons of the ghee in a large dutch oven over medium high heat. Season the ribs with salt and pepper and brown them in batches to avoid over crowding the dutch oven; 2-3 minutes each side. As you finish browning each piece place them on a large dish tented with foil. Once your finished browning reduce the heat to low and pour out the ghee from the bottom of the dutch oven and dab lightly with a paper towel then place the pot back on the burner and add remaining tablespoon of ghee. Add onions and garlic and sauté for 3-4 minutes or until the onions begin to soften then add the tomato paste and stir. Let the tomato paste caramelize in the dutch oven for about 1 minute then pour in the diced tomatoes, ancho chile and roasted pepper puree, while scraping the bottom of the dutch oven. Season lightly with salt and pepper and stir then nestle the ribs in the braising liquid and pour in any accumulated juices from the bottom of the tray they were placed in.
  • Bring to a simmer and reduce the heat to low, add the bay leaf and cover the dutch oven with it's lid and place it in the oven for 1 hour and 15 minutes. (I recommend checking the ribs at the 20 minute mark to see if they're simmering too hard or not, if they are then cover it back up and reduce the heat to 280)
  • Once the ribs are done remove the lid from the dutch oven and flip the each of the ribs over with tongs being careful not to tear the meat. Spoon some of the sauce on the tops of the ribs and increase the heat of the oven to 375 and allow to cook for 15-20 more minutes or until the sauce caramelizes on top of the ribs. (optionally you could broil on high for 3-4 minutes instead which should achieve the same effect, but this is only if you don't have the extra time)
  • Serve each rib with a second slathering of sauce if you wish.

1 ONION CHOPPED
3T MINCED GARLIC
3T TOMATO PASTE
1/4 C APPLE CIDER VINEGAR
1/2 tsp red pepper flakes
2 bay leaves
2.5 C chicken broth

Steps:

  • pre-heat over to 350* pat ribs dry and sprinkle with salt and pepper heat 2T vegetable oil in dutch oven and brown ribs on all sides over medium high heat remove meat add remaining 1 T oil to dutch oven and reduce heat to medium add carrots, celery, and onion, salt and pepper cook about 5 min until veggies are soft. Add garlic cook till fragrent about 1 min, add tomatoe paste to remove raw taste stirring about 3min, then add apple cider vinegar to deglaze, finally adding red pepper flakes and bay leaves . Add meat back to dutch oven and add 2.5c of chicken broth, bring pan to a simmer the cover and place in oven Cook for about 1.5 hours, however remove lid during last 30 minutes of cooking
