BRAISED LAMB

Number Of Ingredients 12

4 3/4-inch-thick shoulder lamb chops (3 to 4 lbs)
5 large garlic cloves, smashed
2 Tbsps mixed chopped fresh herbs (such as oregano, marjoram and thyme) plus 4 whole sprigs thyme
Salt and pepper
1/4 cup flour, for dusting
3 Tbsps olive oil
4 large onions, sliced thick
4 large tomatoes, sliced thick
1 cup dry white wine
2 bay leaves
1 bunch parsley, stems removed and reserved separately, leaves finely chopped
3 large boiling potatoes, peeled and sliced thick

Steps:

  • Preheat oven to 275F.
  • Rub both sides of lamb shoulder chops with 1 to 2 garlic cloves, as needed. Rub with chopped herbs and season with salt and pepper. Dust both sides of chops with flour. In a large (10-inch) cast iron skillet, heat oil over high heat. When nearly smoking, add 2 lamb chops and sear, 4 minutes each side, until well-browned. Remove and repeat with remaining chops. Discard fat that has accumulated in pan.
  • In skillet layer onions, half of tomato slices and lamb chops. Top with remaining tomato slices and pour wine and 1/2 cup water over. Bring to a boil over medium-high heat. Add remaining 4 garlic cloves, bay leaves, thyme sprigs and parsley stems. Cover pan loosely with aluminum foil and roast for 3 hours.
  • Cover top with potato slices, pushing them into liquid so they are completely submerged. Cover pan, return to oven and cook 30 minutes or until potatoes are tender. Using a large spoon, remove excess liquid and any fat from stew to a small saucepan. Bring liquid to a boil over high heat and boil rapidly until thickened, 10 to 15 minutes. Before serving, broil lamb under a preheated broiler, 5 minutes or until potatoes are well-browned. Sprinkle with chopped parsley and serve with sauce.

1 whole breast of lamb, also called Denver cut or lamb riblets, with most of the fat still on see note

Steps:

  • Heat the oven to 225 degrees. Sprinkle the meat with salt and pepper and place fat-side up in the roasting pan. Bake 3 to 4 hours, until the fat has rendered and browned and the meat is well done. Slice into ribs.

GLAZED LAMB RIBS

This is a recipe loosely based on one for a snack that used to be served at DBGB, Daniel Boulud's giddy sausage-and-beer restaurant on the Bowery in Manhattan: crunchy little nuggets of small-boned lamb breast served with a pale yogurt sauce with a mild pepper kick under a zing of lemon zest. You can divide the cooking in two if you like, roasting the meat on one day, then finishing it on a grill or under a broiler a day or so later. And you can bail on the sprinkle if it's too much work. But not the glaze and not the yogurt! (Here's the recipe.)

2 racks lamb ribs
2 tablespoons Kosher salt
6 cloves garlic, peeled and finely diced
6 sprigs thyme
3 sprigs rosemary
2 bay leaves
1 cup sherry vinegar
1 cup honey
1 tablespoon fennel seeds, cracked
1 tablespoon coriander seeds, cracked
1 tablespoon ground freshly ground black pepper
1 tablespoon ground Aleppo chili
2 tablespoons unsalted butter, cold
2 tablespoons coriander seeds, toasted and cracked, or 1 tablespoon ground coriander
2 teaspoons Aleppo chili
2 teaspoons Kosher salt, or to taste
Zest of 1 lemon
1 tablespoon parsley, finely chopped

Steps:

  • Preheat oven to 275. Trim most of fat from the surface of the lamb racks and place them in a large roasting pan. Combine salt, garlic and herbs and rub over lamb. Place in oven and roast for 2 hours. Remove pan from oven and turn ribs, then return to oven for 30 to 60 minutes longer, or until the lamb is just tender and starting to pull away from the bone. Remove pan from oven and set aside.
  • Meanwhile, make the glaze. Combine vinegar and honey in a small sauce pan placed over moderate heat. Add fennel, coriander, black pepper and Aleppo chili and bring to a slight simmer. Lower heat and allow the mixture to reduce by half. Remove from heat and whisk in the cold butter.
  • Light a fire in grill or preheat broiler in oven. Combine coriander, chili, salt, lemon and parsley in a small bowl and set aside. Slice ribs into individual pieces, cutting between each bone. When coals are covered with gray ash and fire is hot, put chops on grill directly over coals or on a pan in the broiler. Using a pastry brush, coat lamb lightly with glaze and continue to cook, turning occasionally, until the meat begins to turn golden and crisp, approximately 5 to 7 minutes. Remove to a platter and sprinkle with the topping.

4 to 5 pounds lamb breast, cut into ribs
Salt and freshly ground black pepper to taste
1/4 cup honey, orange marmalade or maple syrup
1/4 cup Dijon mustard
1 small onion, peeled

Steps:

  • Start a charcoal or wood fire, or preheat a gas grill or broiler; the fire should be only moderately hot, and the rack should be at least 4 inches from the heat source. Bring a large pot of water to a boil; salt it. Add the lamb, and simmer for 10 minutes.
  • Drain ribs. Grill or broil them for about 10 minutes, turning once or twice and sprinkling them with a little salt and pepper. Meanwhile, process the honey, mustard and onion in a blender until smooth.
  • When ribs begin to brown, brush them with sauce, and continue to cook, watching so they do not catch fire. When they are brown and crisp all over - in about 10 to 15 minutes - remove from grill, and serve.

4 pounds lamb breast
1 tablespoon salt
1 tablespoon black pepper
1 tablespoon granulated garlic
Slow Cooker Vegetables and prep
1 large onion, rough chopped
12 sprigs fresh rosemary, whole, do not strip
4 sprigs sage
4 carrots, chopped
6 medium potatos, rough chopped
1 1/2 cups red wine
1 1/2 cups water

Steps:

  • Season ribs with salt, pepper and garlic. Brown on medium high temp in skillet. Put onion on bottom of slow cooker with sage and 1/2 the rosemary. Then put on the lamb and the balance of the ingredients. I sprinkle on a bit more garlic at this point to. Cook 5 hours or until done. Lamb will be tender but still a bit fatty.

This is a great way to get the most out of a cheaper cut of meat that many have forgotten how to cook. Breast of lamb is a less expensive cut, but excellent if you know what to do with it. There is excess fat on lamb breast, so trim away all you can prior to cooking. From the Fanny Farmer Cookbook.

3 lbs lamb breast
1 tablespoon thyme, crumbled
2 cups water, boiling
1 carrot, peeled and chopped
1/2 onion, peeled and studded with
3 whole cloves
1/2 cup turnip, peeled and cubed
1/2 teaspoon black pepper
salt, to taste

Steps:

  • Melt the fat in a heavy pot.
  • Add the breast and brown lightly on both sides.
  • Sprinkle with thyme and add water.
  • Add carrot, clove-studded onion, turnip, and pepper.
  • Lower heat, cover and simmer for 1 1/2 hours.
  • Remove as much fat as possible with a spoon and salt to taste.
  • Cut ribs into serving pieces.

2 tablespoons olive oil
2 teaspoons salt
2 teaspoons ground cumin
1 teaspoon freshly ground black pepper
1 teaspoon dried Italian herb seasoning
1 teaspoon ground cinnamon
1 teaspoon ground coriander
1 teaspoon paprika
4 pounds lamb breast, separated in two pieces
½ cup chopped Italian flat leaf parsley
⅓ cup white wine vinegar, more as needed
1 lemon, juiced
2 cloves garlic, crushed
1 teaspoon honey
½ teaspoon red pepper flakes
1 pinch salt

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Combine chopped parsley, vinegar, fresh lemon juice, garlic, honey, red pepper flakes, and salt in a large bowl. Mix well and set aside.
  • Whisk olive oil, salt, cumin, black pepper, dried Italian herbs, cinnamon, coriander, and paprika in a large bowl until combined.
  • Coat each lamb breasts in the olive oil and spice mixture and transfer to a roasting pan, fat side up.
  • Tightly cover roasting pan with aluminum foil and bake in the preheated oven until the meat is tender when pierced with a fork, about 2 hours.
  • Remove lamb from oven and cut into four pieces.
  • Increase oven temperature to 450 degrees F (230 degrees C).
  • Line a baking sheet with aluminum foil and place lamb pieces on it. Brush the tops of each piece with fat drippings from the roasting pan.
  • Bake lamb until meat is browned and edges are crispy, about 20 minutes.
  • Increase the oven's broiler to high and brown lamb for 4 minutes. Remove from oven.
  • Serve lamb topped with parsley and vinegar sauce.

4 lamb shanks, each about 1 pound
1 cup Port or red wine
8 cloves garlic (don't bother to peel them)
Salt and freshly ground black pepper to taste
1 teaspoon red wine vinegar or lemon juice, or to taste

Steps:

  • Combine lamb shanks, Port or wine, and garlic in a skillet just large enough to hold shanks. Turn heat to high and bring to a boil; cover and adjust heat so that the mixture simmers gently. Cook, turning about every 30 minutes, until shanks are tender and a lovely mahogany color, at least 2 hours and more likely longer.
  • Remove shanks and strain the sauce. If time allows, refrigerate both, separately; skim fat from top of sauce. Preheat a charcoal or gas grill or the broiler; the rack should be 4 to 6 inches from the heat source, and the fire hot.
  • Grill or broil shanks until nicely browned all over, sprinkling them with salt and pepper and turning as necessary; total cooking time will be about 15 minutes. Meanwhile, reheat the sauce gently; season it with salt and pepper, then add vinegar or lemon juice. Taste and add more seasoning if needed. Serve shanks with sauce.
