2/3 cup water
1 cup pineapple juice
1/4 cup teriyaki sauce
1 teaspoon soy sauce
1 1/3 cups dark brown sugar
3 teaspoons lemon juice
3 teaspoons minced white onions
1 teaspoon Bourbon
1 teaspoon crushed pineapple
1/4 teaspoon cayenne pepper
2 teaspoons roasted garlic

Steps:

  • Combine water, pineapple juice, teriyaki sauce, soy sauce and brown sugar in a saucepan over medium high heat.
  • Stir occasionally until mixture boils, then reduce heat to simmer.
  • Add remaining ingredients to pan and stir.
  • Let simmer for 35-45 minutes or until sauce has reduced by half and is thick and syrupy.

½ cup brown sugar
1 cup ketchup
2 teaspoons Worcestershire sauce
¼ cup white vinegar
1 tablespoon lemon juice
½ teaspoon minced garlic
1 pinch dry mustard
salt and pepper to taste

Steps:

  • In a medium bowl, combine bourbon, brown sugar, ketchup, Worcestershire sauce, vinegar, lemon juice, garlic, and mustard. Season with salt and pepper to taste.

Apricot-Bourbon Glazed Ham image

With its sweet, tart, and smoky glaze, this apricot-bourbon glazed ham will be the centerpiece of any sunny spring celebration.

1 bone-in fully cooked half ham (about 10 pounds), rind removed
1 1/2 cups apricot jam
1 1/2 cups bourbon
1/4 cup lemon juice (from 2 lemons)
1/2 teaspoon ground pepper

Steps:

  • Preheat oven to 375 degrees, with rack in lower third. Wrap ham in a large piece of parchment-lined foil and place, cut side down, on a foil-lined rimmed baking sheet; bake 1 hour. Meanwhile, in a medium saucepan, bring jam and bourbon to a rapid simmer over medium-high. Cook until reduced by half, about 40 minutes. Stir in lemon juice and pepper and cook 2 minutes. Reserve 1 cup glaze for serving.
  • Remove ham from oven and increase temperature to 425 degrees. Unwrap ham, carefully flattening parchment-lined foil against baking sheet. With a sharp knife, score fat with long cuts, 1/2 inch apart. Bake 15 minutes.
  • Remove ham from oven and brush all over with some glaze. Bake until ham is deep golden brown and an instant-read thermometer inserted in thickest part registers 145 degrees, 45 to 60 minutes, brushing ham with glaze every 15 minutes (wrap tip of bone in foil if it begins to overbrown). Transfer ham to a carving board, tent with foil, and let rest 30 minutes before carving. Serve warm or at room temperature with reserved glaze.

1 head garlic
1 tablespoon olive oil
1 ⅓ cups dark brown sugar
1 cup pineapple juice
⅔ cup water
¼ cup teriyaki sauce
1 tablespoon soy sauce
3 tablespoons lemon juice
3 tablespoons minced white onion
1 tablespoon bourbon whiskey
1 tablespoon crushed pineapple
¼ teaspoon cayenne pepper

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Cut about 1/2-inch from the top of the garlic head. Trim the roots so the garlic sits flat. Remove some of the outer layers of papery skin from the garlic, leaving enough so that the cloves stay together. Put garlic into a small casserole dish or baking dish, drizzle olive oil over it, and cover with a lid or aluminum foil.
  • Roast garlic in preheated oven until the cloves are soft, about 1 hour.
  • Stir brown sugar, pineapple juice, water, teriyaki sauce, and soy sauce together in a saucepan and bring to a boil; reduce heat to low and keep at simmer.
  • Squeeze sides of the garlic until the pasty roasted garlic emerges. Measure 2 teaspoons roasted garlic into the saucepan and incorporate into the sauce with a whisk. Reserve remaining roasted garlic for another use.
  • Stir lemon juice, white onion, bourbon whiskey, pineapple, and cayenne pepper into the sauce; bring to a simmer and cook until the volume of the liquid reduces by half and is thick and syrup-like, 40 to 50 minutes.

1/2 tablespoon Worcestershire sauce
1/2 tablespoon butter
1 tablespoon maple syrup
1 tablespoon peppercorn
2 tablespoons Bourbon

Steps:

  • Put peppercorns in sandwich bag, crack with hammer or shoe, whatever is on hand.
  • Place peppercorns in a bowl with butter, bourbon, maple syrup and worcestershire.
  • Microwave for 30 seconds, stir. Microwave again for 30 seconds, stir it again and repeat one more time. Cooking time will need to be increased with amount of servings. To cook on stovetop, bring to boil quickly, simmer on low for 5 minutes and turn off the heat. Store in fridge for next day use, reheat in microwave or simmer on low.
