BOURBON OLD FASHIONED GLAZED PECANS

1/4 cup bourbon whiskey
1/4 cup dried cherries
2 tablespoons brown sugar
1 teaspoon kosher salt
1/ 4 teaspoon freshly ground black pepper
1/8 to 1/4 teaspoon cayenne pepper
2 cups raw pecan halves
2 tablespoons unsalted butter
1 tablespoon zest from 1 small orange

Steps:

  • Combine the bourbon and the dried cherries in a small bowl and set aside to soak for 30 minutes. In another small bowl, combine the brown sugar, salt, black pepper, and cayenne pepper and stir until well-combined. Set aside.
  • Place the pecans in a large non-stick skillet over medium heat. Cook, stirring frequently, until they just start to brown and smell toasted, 3 to 4 minutes. Add the butter to the pan and stir until the butter is completely melted and the pecans are coated.
  • Add the sugar and spice mixture to the pan and stir to combine. Turn off the heat and immediately pour in the cherries and bourbon. Stir for 1-2 minutes more, off heat, until everything is well incorporated.
  • Return the pan to medium heat and continue to stir everything in the pan until the liquid thickens and a glaze forms on the pecans, 1 to 2 minutes longer. Transfer the pecans to a parchment-lined rimmed baking sheet.
  • Using a spatula or wooden spoon, separate the pecans and spread them into an even layer on the parchment paper. Allow the pecans to cool completely. Once the pecans have cooled, zest the orange over the pecans. Transfer the pecans to a large bowl and serve

4 to 5 cups tart cherries, pitted and halved
1/2 cup raw sugar
Juice of 1 lemon
2 tablespoons quick cooking tapioca
1 tablespoon bourbon
1 teaspoon pure almond extract
1 teaspoon orange bitters
1 store-bought pie dough (about 1 pound)
All-purpose flour, for dusting
2 tablespoons cream
Raw sugar
Softly whipped cream or vanilla ice cream, for serving

Steps:

  • For the cherry filling: Combine the cherries, sugar and lemon juice in a saucepan, combine the cherries with sugar and lemon juice. Sprinkle with the tapioca and simmer for 5 minutes. Pour into a large bowl and stir in the bourbon, almond extract and orange bitters. Let cool and refrigerate for about 1 hour. Preheat the oven to 350 degrees F and place the oven rack in the lower third of the oven. Divide the dough into 2 equal pieces. Roll each dough piece on a lightly-floured surface into a 12-inch disk. Gently place one disk into a 9-inch pie pan, bringing it up the sides. Make a few incisions in the middle of the remaining crust. Pour the cherry filling into the prepared pie shell. Lightly brush the border of the pie shell with water, and top with the second piecrust. Tightly seal the dough by pressing the edge with a fork or your fingers. Create some decorative touches with the scrap dough if desired to decorate the pie. Lightly brush the pastry shell with the cream and sprinkle with a little sugar. Place the pie on a larger baking sheet lined with parchment paper to catch any spills. Bake the pie until the crust is a deep golden brown color and the cherry juices are starting to bubble, 35 to 45 minutes. Let cool, and then serve with softly whipped cream or vanilla ice cream.

1 c or two sticks butter, do not substitute
3 c sugar
8-9 large eggs, separated
3 c self rising flour
2 tsp vanilla extract
2 tsp almond extract
3 oz bourbon or orange juice
1 c pecans, chopped
2-3 Tbsp apricot brandy, or orange juice or good bourbon

Steps:

  • 1. Preheat the oven to 300*F grease and flour a 10 inch bundt or tube pan. Then sprinkle the bottom of the pan with 1/2 cup of chopped Pecans. Set Aside.
  • 2. Cream butter and sugar well, then add egg yolks one at a time mixing completely after each addition.
  • 3. Add flour, extracts and bourbon, then combine and set aside.
  • 4. Whip the egg whites till stiff peaks form. Fold the egg whites into the batter until well combined.
  • 5. Pour batter into the prepared pan. Sprinkle the remaining pecans over the top of the batter.
  • 6. Bake at 300*F for 1-1/2 hours or until a tooth pick inserted comes out clean.
  • 7. You may feed this cake 2-3 tablespoons of Apricot brandy every two weeks or until The holidays. Lovely old fashioned bourbon pecan cake.

1 dash water
1 teaspoon sugar
1 maraschino cherry
1 orange wedge

Steps:

  • Mix sugar and angostura bitters in an old-fashioned glass. Mix the two, then add a splash of water. Drop in a cherry and an orange wedge, and muddle into a paste using a muddler (or the back end of a spoon.) Pour in bourbon, fill with ice cubes, and stir.
