Quick and easy potatoes, simple to make with just a few ingredients. You'll love the taste of these potatoes with a hint of garlic and dill. It's a great side dish for just about any meal. You can even prepare them a day or two ahead and heat and serve when needed.

Number Of Ingredients 7

1 to 2 - pounds of New Red Potatoes
1/2 - Stick of Butter...the real stuff.
2 - cloves of Garlic
1/2 - teaspoon of Salt
1/2 - teaspoon of Black Pepper
1/2 - teaspoon of Celery Seed
4 to 5 sprigs of Fresh Dill (or about 1/2 teaspoon of Dried Dill)

Steps:

  • Wash and scrub your new potatoes until clean.
  • Place potatoes in a large sauce pot and cover with water.
  • Bring to a boil over medium-high heat.
  • Reduce heat to medium and cook until tender but not mushy.
  • When potatoes are done, pour into a colander to drain the liquid.
  • Cut the potatoes in half, then into wedges. Larger potatoes should be cut into about 6 wedges.
  • Finely chop the garlic cloves.
  • In a small saucepan, on medium heat, add the butter and let it slowly melt.
  • Add the minced garlic. You only want the garlic slightly toasted so don't let it burn.
  • Strip about 4-5 sprigs of the fresh dill and place leaves in the butter and garlic mixture.
  • Add the salt, black pepper and the celery seed. Stir until the garlic is lightly toasted and remove from heat.
  • Place potato wedges into a serving bowl and then pour the melted butter, garlic and seasonings on top.
  • Gently stir and toss the wedges until each potato section is coated with the butter mixture.
  • Serve immediately while still warm.

ROASTED NEW POTATOES WITH GARLIC

1 1/2 pounds medium red bliss or other waxy-style potatoes, skin-on and scrubbed
2 tablespoons unsalted butter, melted
1 teaspoon kosher salt, plus more
1 tablespoon finely minced garlic
1 tablespoon finely chopped flat-leaf parsley
Freshly ground black pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Half the potatoes lengthwise and cut them into 1-inch-wide wedges. In a medium bowl, toss the potatoes with the butter and 1 teaspoon of salt. Spread the potatoes out on a roasting pan large enough to hold them in a single layer. (Arrange the potatoes cut-side down, to ensure crisply browned edges.)
  • Roast the potatoes until golden brown, about 45 minute. Add the garlic and stir to coat the potatoes evenly. Continue to roast until the potatoes and garlic are evenly browned, about 15 minutes more. (Take care that the garlic doesn't burn.) Remove from the oven and mix with the parsley. Season with salt and pepper to taste. Serve.

1 1/2 pounds new red potatoes (washed and quartered)
2 teaspoons minced garlic
4 ounces butter
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon celery salt
2 teaspoons crushed dry dill

Steps:

  • Wash potatoes well and boil until soft, drain well on paper towels. Melt the butter, in large frying pan (use only real butter) saute garlic for a couple of moments, and then add potatoes and the rest of the seasonings. Pan-fry the potatoes until they are lightly brown.

I love this recipe. It is so simple, and yet, so delicious. I serve these potatoes with my Tarragon Cream Chicken. However, they are a delicious accompaniment to any meal. I took this recipe from Southern Living. It can be found in their Ultimate Quick and Easy cookbook. I generally do make a couple of changes- I add 1/4-1/2 tsp. salt to the garlic butter. I also often add minced fresh dill when I have it. Enjoy!

18 new potatoes, quartered (about 2 3/4 lbs.)
1/4-1/3 cup butter
2 -4 garlic cloves, minced (more or less to taste)
1 tablespoon chopped fresh parsley
1/4 teaspoon pepper
1/4-1/2 teaspoon salt (not in original recipe) (optional)
1/2-1 tablespoon chopped fresh dill (not in original recipe) (optional)

Steps:

  • Add potato to salted water in a large saucepan. Cook, covered, 10 minutes or until tender. Drain. (Do NOT overcook the potatoes- they will be mushy!).
  • Meanwhile, melt the butter in a small skillet over medium-high heat.
  • Add garlic and salt (optional). Cook, stirring constantly, for 3 minutes or until garlic is tender.
  • Add parsley, pepper, and dill (optional). Pour over potatoes, tossing gently to coat.
  • Enjoy!

10 -12 baby red potatoes
2 garlic cloves, minced
1/2 cup butter
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon celery salt
2 teaspoons crushed dill

Steps:

  • 1/2 or 1/4 the potatoes depending on size (make them bite size).
  • Place the potatoes in a sauce pot and cover with cold water. Salt water (as if you were preparing them for potato salad).
  • Boil potatoes for approximately 10 minutes and then drain.
  • In a sauce pan, melt the butter with the garlic. Do this on low heat to prevent the garlic from burning. Cook for a total of 3 minutes.
  • After the butter has stopped foaming, add the potatoes and the rest of the ingredients.
  • Cook and stir until coated and mingled together (approximately 3-4 minutes).
