2 pounds ground beef
1 envelope taco seasoning
1-1/2 cups water
1 can (16 ounces) mild chili beans, undrained
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (15 ounces) pinto beans, rinsed and drained
1 can (14-1/2 ounces) stewed tomatoes
1 can (10 ounces) diced tomato with green chiles
1 can (4 ounces) chopped green chiles, optional
1 envelope ranch salad dressing mix

Steps:

  • In a Dutch oven, cook beef over medium heat until no longer pink, breaking it into crumbles; drain. Add taco seasoning and mix well. Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes or until heated through, stirring occasionally.

1 tablespoon olive oil
1 pound lean ground beef
1/2 large onion, chopped
1 tsp EACH chili powder, ground cumin
1/2 tsp EACH salt, dried oregano, smoked paprika
1/4 teaspoon pepper
1 red bell pepper, chopped
4 garlic cloves (minced)
1/4 cup flour
1 15 oz. can kidney beans (rinsed and drained)
1 15 oz. can black beans (rinsed and drained)
1 15 oz. can sweet corn (rinsed and drained)
1 4 oz. can mild diced green chilies
1 cup mild salsa
1 10 oz. can mild enchilada sauce
5 cups reduced sodium chicken broth
1 cup freshly grated sharp cheddar cheese
1 cup freshly grated Pepper Jack cheese
4 oz. cream cheese, cubed and softened
Tortilla chips or fritos
sour cream
Tomatoes
lettuce
Avocado/guacamole
Hot sauce to taste
fresh cilantro

Steps:

  • Heat 1 tablespoon olive oil over medium heat in a Dutch oven or soup pot. Brown the meat with onions until meat is cooked. Add all spices/seasonings, red bell pepper and garlic. Sprinkle in flour and cook, stirring constantly for 3 minutes.
  • Stir in kidney beans, black beans, corn, green chilies, salsa, enchilada sauce and chicken broth. Bring to boil then reduce to a gentle simmer, stirring occasionally, for 10-15 minutes or until slightly thickened.
  • Turn heat to low and stir in cream cheese until melted, followed by pepper jack and cheddar cheese until melted. Add milk to thin to desired consistency if desired. Season with additional salt/pepper/hot sauce to taste.
  • Serve with tortilla chips/fritos and additional garnishes as desired.

Steps:

  • Add the ground beef and onion to a large pot and stir until the beef is cooked through.
  • Drain excess liquid.
  • Add the kidney beans, black beans, corn, tomatoes, tomato sauce, and taco seasoning to the pot, and stir until combined.
  • Cook over medium heat for 10 minutes.
  • Serve with cheddar cheese, sour cream, pico de gallo, avocado, corn chips, lime wedges, and cilantro.

I have to admit that when a good friend gave me this recipe, I wasn't certain I'd like it. But, after one taste, I changed my mind! My husband loves it-especially when the weather's cold. I've also fixed Taco Soup for my parents and in-laws, and taken it to church suppers. We live in a small oil-field town, and have two children, 7 and 5. I grew up on a ranch in the panhandle of our state, though, and even today I find I sure miss the country at times!
