1/4 cup white wine vinegar
3 tablespoons dill weed for the sachet (or use 3 tablespoons minced fresh dill, plus 1/2 cup leaves an stems chopped coarse)
1 tablespoon dill weed for the herb vinegar
3 pounds yukon gold potatoes
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon dijon mustard
3 scallions, green parts only, sliced thin
salt and pepper to taste

Steps:

  • 1. MAKE THE HERB VINEGAR first: Add the 1/4 cup white wine vinegar and the 1 tablespoons of dill weed to a one-cup glass measuring cup and microwave one minute, remove and let cool and steep while you peel the potatoes and get them ready to boil. MAKE AN HERB SACHET: Take a coffee filter and place 3 tablespoons dill weed in it and tie it with a kitchen string. Peel and cut potatoes into 3/4 inch pieces and cover with water, and add one tablespoon of salt and the herb sachet. Bring the potatoes to a boil, cook until tender but not overcooked. Drain thoroughly. Discard the sachet. Place the potatoes in a large mixing bowl.
  • 2. MEASURE AND ADD HERB VINEGAR: Add 2 tablespoons of the herb vinegar and reserve the rest for later. Drizzle it evenly over the hot potatoes and stir gently until covered. Refrigerate until cool, about 30 minutes, stir once more during that time.
  • 3. MAKE THE DRESSING: In a small bowl, mix the mayonnaise, sour cream, the rest of the dill and vinegar mixture, mustard, salt, and pepper, and whisk until smooth. Refrigerate. Chop the scallions thin, set aside.
  • 4. ADD DRESSING TO POTATOES: When the potatoes have cooled, add the dressing, stir in the scallions and the reserved herb vinegar. Cover and refrigerate to let flavors blend, about 30 minutes. Season with the salt and pepper. This is how it looks when finished. Enjoy!

2 pounds red potatoes, unpeeled, large bite size pieces
5 green onions with whites, chopped
1/4 cup fresh dill, chopped fine
1 teaspoon regular table salt
1 teaspoon black pepper
1 cup plain, total greek strained yogurt, fage brand

Steps:

  • 1. I steam the red potatoes whole and unpeeled in a steamer until they are done. It takes about 45 to 55 minutes. I prefer the texture of the potatoes, they are firm and dry and don't fall apart. I usually steam my potatoes one day, chill them, and make the salad the next day. Boiled potatoes are not recommended. The salad is easy, and you can make it quickly.
  • 2. Or if you are running out of time, you can cut them up like this and steam them. If you do that, let them cool before you add the ingredients to the potatoes.
  • 3. Time saver tip: When I steam potatoes in my tier steamer, I steam a lot and use them during the week in my dishes. While the potatoes are steaming, I also steam 6 eggs. The steamer makes great "boiled" eggs. I may also steam some vegetables for another meal.
  • 4. In a medium size bowl, add the chilled potatoes and the fine chopped green onions with the white part and the dill. Mix the Fage Greek Yogurt and the salt and pepper in a small bowl. Pour the mixture over the potatoes, onions and dill. Gently mix well. You can eat the salad right away, but we prefer it chilled. I also like this salad with crumbled bacon on top, but that is just me! :)

2 pounds small Yukon gold potatoes
2 large eggs
Kosher salt
1/2 bunch sliced scallions, white and green parts
2 tablespoons drained capers
2 cups mayonnaise
1/4 cup Dijon mustard
1/4 cup finely chopped dill pickles with 1/4 cup juice, about 2 pickles
1/2 small red onion, chopped
2 tablespoons chopped fresh flat-leaf parsley
1/2 bunch dill, chopped
1/2 lemon, juiced
Freshly ground black pepper
Extra-virgin olive oil, for drizzling

Steps:

  • Put the potatoes and eggs into a big saucepan of cold salted water. Bring to a simmer. After 12 minutes remove the eggs with a slotted spoon and let cool. Continue cooking the potatoes until a paring knife poked into them goes in without resistance, about 3 minutes longer. Drain the potatoes in a colander and let them cool.
  • Reserve some scallion greens and capers for garnish. Meanwhile, stir together the mayonnaise, mustard, pickles and their juice, onion, remaining scallions and capers, parsley, and lemon juice in a bowl large enough to hold the potatoes. Peel the cool eggs and grate them into the bowl. Stick a fork into the potatoes and lift them 1 at a time out of the colander. Break up the potatoes by hand into rough chunks, add them to the bowl and toss to coat with the dressing. Season, to taste, with salt and pepper. Drizzle with a little olive oil before serving.

4 medium red potatoes (about 2 lb), peeled and diced
4 hard-cooked eggs, chopped
1/2 cup sliced green onions
3 tablespoons chopped fresh dill
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup mayonnaise
1/3 cup milk
1 teaspoon white wine vinegar
1/2 teaspoon yellow mustard

Steps:

  • Place potatoes in large saucepan. Add enough water to cover potatoes. Bring to a boil. Cook 5 to 8 minutes or just until potatoes are fork-tender. Drain; rinse with cold water until cool.
  • In large bowl, mix potatoes and remaining salad ingredients. In medium bowl, mix dressing ingredients. Pour dressing over salad; mix gently. Refrigerate 1 hour to blend flavors.

2 pounds new potatoes of uniform size, scrubbed
Salt and freshly ground black pepper
1/3 cup white wine vinegar
2/3 cup extra-virgin olive oil
1/2 tablespoon Dijon mustard
1/4 cup finely chopped scallions
2 tablespoons minced fresh dill

Steps:

  • Place the potatoes in a saucepan, cover with cold water, bring to a boil, cover and reduce the heat to low. Cook until the potatoes are just tender, about 20 minutes. Drain and quarter the potatoes, taking care to keep the skins on.
  • Place the potatoes in a bowl, season lightly with salt and pepper and gently toss with two tablespoons of the vinegar and one tablespoon of the oil. Set aside until cool.
  • Mix the remaining vinegar with the mustard until well blended. Beat in the oil. Pour over the cooled potatoes and gently mix. Add the scallions and dill, season to taste with salt and pepper and serve.

My mother made this potato salad for me as a boy growing up in Spanish Fort, Alabama (on the Gulf of Mexico). I have re-created it with a slight modern tangy twist. I know you will like it! Best taste is achieved when the salad is covered and placed in refrigerator overnight.

10 unpeeled red potatoes
5 hard boiled eggs, roughly chopped
¾ cup sour cream
¾ cup mayonnaise
1 tablespoon apple cider vinegar, or to taste
1 tablespoon Dijon mustard, or to taste
½ white onion, finely chopped
1 stalk celery, finely chopped
1 teaspoon celery salt
salt and black pepper to taste
1 tablespoon dried dill weed

Steps:

  • Place the potatoes in a large pot, cover them with water, and bring to a boil over high heat. Reduce the heat to medium-low, and simmer until the potatoes are cooked through but still firm, about 20 minutes. Remove from the water, let cool, and cut the potatoes into chunks. Set the potatoes aside.
  • In a bowl, stir together the sour cream, mayonnaise, apple cider vinegar, Dijon mustard, onion, celery, celery salt, and salt and pepper until well mixed.
  • Place the potatoes and eggs in a large salad bowl, and sprinkle with dried dill. Pour the dressing over the potatoes and eggs, and mix lightly. Cover and refrigerate the salad for at least 30 minutes. Serve cold.
