3 chicken breasts
flour (to toss)
cayenne pepper
salt
1/3 cup butter
1/2 cup Frank's red hot sauce
1 teaspoon garlic
oil (to fry)

Steps:

  • Cut chicken into 1" pieces.
  • Mix four, about a cup, with a little salt and cayenne pepper to season.
  • Dredge the chicken pieces in the flour mixture and shake off excess.
  • Fry in hot oil until golden.
  • For the sauce:Heat the butter, Franks and garlic in a small saucepan until hot, stir to combine.
  • Toss the chicken pieces in the sauce when they are done frying.
  • Serve with blue cheese dressing and celery sticks.

My family loves buffalo chicken and I make them for parties, holidays, and football game. It is easy and simple to make it. They are so delicious and spicy and tasty.

6 boneless skinless chicken breast halves, cut into chicken wings size pieces
4 heaping tablespoons of mayonnaise
2 c finely crushed cracker crumbs or 2 cups breadcrumbs
2 tsp garlic powder
1 tsp black pepper
6 Tbsp butter or margarine, melted
3/4 c frank's red hot sauce

Steps:

  • 1. Thoroughly mix chicken and mayonnaise covering the chicken in a thin layer of mayo. Mix cracker crumbs and seasonings in a shallow bowl. Dredge chicken in crumb mixture and place on a baking sheet sprayed with cooking spray. Bake at 375 degrees, for about 15 minutes, until crispy on outside and lightly browned. Combine melted butter and hot sauce. Gently toss cooked chicken in the hot sauce mixture, completely coating the chicken.

4-6 cups trans-fat free frying oil
1 large bag (4 ounces) regular pork rinds
1 ⁄2 teaspoon Italian seasoning
1 ⁄4 teaspoon black pepper
1 ⁄8 teaspoon garlic powder
11 ⁄2 pounds boneless, skinless chicken breasts, cut in 1 inch cubes
2 large eggs, beaten in a bowl
1 ⁄4 cup Louisiana hot sauce
1 ⁄4 cup butter, melted

Steps:

  • 1. Place a pot over medium-high heat and fill with at least 2 inches of vegetable oil. Heat oil 3-4 minutes, until about 350 degrees. (or preheat an electric deep fryer) 2. Add the pork rinds, Italian seasoning, pepper, and garlic powder to a large food storage bag and use a heavy can or similar to crush the rinds until smooth. 3. Dip chicken cubes into the beaten eggs and then place into the bag of seasoned pork rinds, shaking to coat. 4. Fry the coated chicken pieces in small batches of 5 or 6 for about 3 minutes each batch, or until a deep golden brown. Let rest on paper towels to drain excess oil. 5. In a medium bowl, combine hot sauce and melted butter to make the sauce. Toss fried and drained chicken in the sauce before serving hot. Serve garnished with celery sticks and blue cheese dressing, if desired. George's Tips | You can lower the fat by baking them instead of frying. Simply place the coated chicken pieces on a greased sheet pan and bake at 400 degrees for about 15 minutes, or until cutting into one reveals no pink. Variation | These are also good without a sauce at all, but if hot wing sauce isn't your thing, try topping with marinara sauce and mozzarella cheese and then broiling for just 1 minute to melt the cheese and you will have Chicken Parmesan Bites! 4 boneless chicken breast
1 12oz bottle franks hot sauce
2 c house autry chicken breader
1/2 c buttermilk (optional for milder flavor)
2 clove grated garlic (or a little garlic powder)
1 bottle veggie or peanut oil (for frying)

Steps:

  • 1. Cut chicken into bite size pieces
  • 2. Add hot sauce and garlic to chicken, making sure all pieces are coated.
  • 3. Cover and refrigerate to marinate for a couple of hours (*can be cooked immediately but tastes much better and are more tender and juicy if marinated for a few hours)
