This quick and easy recipe for bok choy stir fry goes nicely with any meat. I like to add 1/4 teaspoon chicken soup base (such as Penzey's®) to the hot bok choy. You can substitute 1/4 teaspoon ground ginger for the fresh ginger, if desired.

1/3 cup barbecue sauce
1 tablespoon Asian chili-garlic sauce (such as sambal oelek)
3 tablespoons vegetable oil
1 1/4 pounds peeled and deveined large shrimp
Kosher salt
1 1/2 pounds baby bok choy, trimmed and halved lengthwise
4 cups frozen white rice
Lime wedges, for serving

Steps:

  • Whisk the barbecue sauce, chili-garlic sauce and 1/3 cup water in a small bowl; set aside. Heat 2 tablespoons vegetable oil in a large nonstick skillet over high heat. Season the shrimp with salt and add to the skillet. Cook, undisturbed, until lightly browned and starting to curl at the edges, 2 to 3 minutes. Flip and continue cooking until just opaque, 1 to 2 more minutes. Remove to a plate.
  • Add the remaining 1 tablespoon vegetable oil to the skillet. Add the bok choy, season with salt and cook, stirring occasionally, until bright green and crisp-tender, about 3 minutes. Add the barbecue sauce mixture and the shrimp. Toss until evenly coated and heated through, 30 seconds to 1 minute.
  • Heat the rice as the label directs. Top with the stir-fry and serve with lime wedges.

1 1/2 teaspoons sugar
1/4 cup white wine
3 tablespoons light soy sauce

Steps:

1 lb asparagus
3/4 lb baby bok choy, shredded

Steps:

  • Combine the first eight ingredients in a glass bowl, add the chicken, mix.
  • Cover and refrigerate for several hours or overnight.
  • Snap off the tough ends of the asparagus, discard, cut asparagus in approx 1 ½ inch pieces.
  • Cook, steam or microwave the asparagus until just tender, rinse under cold water, drain.
  • Now drain the chicken from the marinade, reserve the marinade.
  • Heat one tablespoon of oil in the wok and stir-fry the onions until going soft, remove.
  • Heat the rest of the oil, stir-fry the chicken until just browned, add marinade, simmer for approx 10 minutes, until tender, probably less when you use chicken breast, stir now and then.
  • Add the onion, asparagus and bok choy, cook until heated through and the bok choy starts to wilt (this won’t be long).
  • Transfer to a serving dish and sprinkle on the green onions….

1 1/2 tablespoons low-sodium soy sauce
1 tablespoon dry Sherry
1 teaspoon oriental sesame oil
1 teaspoon cornstarch
2 teaspoons vegetable oil
3 large garlic cloves, minced
1 tablespoon minced peeled fresh ginger
1/8 teaspoon dried crushed red pepper
3 1/2 cups thinly sliced trimmed bok choy
1 5-ounce can sliced water chestnuts, drained
3 green onions, cut into 1-inch pieces
10 1/2 ounces extra-firm tofu, drained, cut into 3/4-inch pieces

Steps:

  • Combine first 4 ingredients in small bowl; mix well. Heat vegetable oil until very hot in heavy large wok or skillet over high heat. Add garlic, ginger and crushed red pepper. Stir-fry until aromatic, about 30 seconds. Add bok choy and stir-fry until just wilted, about 2 minutes. Mix in water chestnuts and green onions and stir-fry until onions are tender, about 1 minute. Add tofu and lightly stir-fry until tofu is just heated through, about 2 minutes. Pour over soy mixture. Stir-fry until liquid boils and thickens, about 1 minute.

2 tablespoons lard
2 tablespoons coconut oil
3 cloves garlic, minced, or more to taste
1 medium head bok choy, stems and greens chopped and separated
2 (8 ounce) packages sliced fresh mushrooms
1 cup chopped fresh parsley
1 teaspoon ground cumin, or more to taste
1 teaspoon pink Himalayan salt, or to taste

Steps:

  • Heat lard and coconut oil in a large skillet over medium heat. Add garlic and cook until browned and fragrant, 1 to 3 minutes. Add bok choy stems and cook until they are slightly soft on the edges, about 5 minutes. Add bok choy greens and mushrooms. Cook and stir until greens are wilted and mushrooms are soft, about 5 minutes.
  • Stir in parsley and season with cumin and salt. Lower heat and simmer for 2 more minutes.

1 tablespoon tamari
1 tablespoon gluten-free oyster sauce or 1 tablespoon tamari
2 tablespoons sake (optional) or 2 tablespoons chinese rice wine (optional)
1 tablespoon olive oil
1 garlic clove, chopped
1 teaspoon ginger, chopped
1/2 carrot, peeled and cut into matchsticks
4 cups baby bok choy, bottom stems removed
5 cups assortment mushrooms, sliced
salt
pepper
2 teaspoons potato starch
crushed red pepper flakes (optional)

Steps:

  • In a bowl, mix 2/3 cup (150 ml) water, tamari, oyster sauce and sake or Chinese rice wine.
  • Heat oil in a pan. Sauté garlic and ginger. Add carrots and bok choy and cook a few more minutes.
  • Add the sauce mixture. Cover and cook until vegetables are almost cooked. Add mushrooms and cook a few more minutes. Season with salt and pepper.
  • Dissolve potato starch in 2 Tbsp of water. Reduce heat and add it to the pan. Mix well. Remove from heat. Add crushed red pepper if desired.
  • Infuse love into the food and serve!

8 ounces boneless, skinless chicken breast, cut across the grain into 1/4-inch-thick by 1/2-inch-wide pieces
1 tablespoon egg white, lightly beaten
2 teaspoons cornstarch
1 1/2 teaspoons plus 1 tablespoon rice wine or dry sherry
Salt to taste
1/4 cup chicken stock or vegetable stock
1 tablespoon low-sodium soy sauce
1 bunch kale, stemmed and washed well in 2 rinses of water
2 tablespoons peanut oil, rice bran oil or canola oil
1 tablespoon minced ginger
2 fat garlic cloves, minced
1/2 teaspoon red pepper flakes
4 to 6 scallions (1/2 bunch), cut on the diagonal in 1/2-inch lengths, dark green part separated
6 to 8 brussels sprouts, quartered (about 1/2 pound)
1 small or 1/2 large red bell pepper, cut in thin 2-inch strips
1/2 pound baby bok choy, cut in 1-inch slices
Freshly ground pepper
Rice, whole grains or noodles for serving

Steps:

  • 1. In a large bowl, stir together the egg white, cornstarch, 1 1/2 teaspoons of the rice wine or sherry, salt to taste and 1 1/2 teaspoons water. When you can no longer see any cornstarch, add the chicken and stir together until coated. Cover the bowl and place in the refrigerator for 30 minutes. 2. Bring 2 to 3 quarts of water to a rolling boil in a large saucepan and add the kale. Boil 1 minute, until just tender, and transfer to a bowl of cold water. Do not drain the water from the pot. Drain the kale, squeeze out excess water and chop coarsely. 3. Combine the remaining rice wine, the stock and the soy sauce in a small bowl and set near your wok. 4. Bring the water in the pot back to a boil, add 1 tablespoon of the oil and turn the heat down so that the water is at a bare simmer. Carefully add the chicken to the water, stirring so that the pieces don't clump. Cook until the chicken turns opaque on the surface but is not cooked through, about 1 minute. Drain well in a colander. 5. Heat a 14-inch flat-bottomed wok or 12-inch steel skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the remaining oil by adding it to the sides of the pan and swirling the pan, then add the garlic, ginger and red pepper flakes and stir-fry for no more than 10 seconds. Add the white and light green pieces of scallions, the brussels sprouts and the red pepper and stir-fry for 2 minutes. Add the bok choy and stir-fry for another minute. Add the chicken, the kale and the broth mixture. Sprinkle with salt and pepper to taste and stir-fry until the chicken is cooked through, 1 to 2 minutes. Sprinkle on the green scallion ends. Remove from the heat and serve with grains or noodles.
