This recipe is a culmination of my grandmothers and my moms recipes and a little of my own.

Number Of Ingredients 6

2 lb ground beef
1/2 tsp white pepper
1/2 tsp mustard seed or ground mustard
1/2 tsp garlic powder
3 Tbsp morton tender quick salt
3 Tbsp liquid smoke flavoring

Steps:

  • 1. Combine all ingredients together making sure it is mixed well.
  • 2. Shape into two rolls and wrap in foil.
  • 3. Refrigerate for 24 hours.
  • 4. Take rolls out of refrigerator and place in pan, cover with water and boil for 60 minutes. Place a lid or something on top to keep the rolls submerged as they boil.
  • 5. Drain and poke holes in the foil to allow them to drain and cool. Remove foil and put in ziplocs or bowls and refrigerate to cool. Slice and enjoy with some cheese and crackers.

A very tasty sausage that is nice to give away in gift baskets. Add or omit spices to suit your taste.

5 pounds ground beef
5 teaspoons sugar-based curing mixture (such as Morton® Tender Quick®)
¼ cup mustard seed
3 tablespoons garlic powder
1 teaspoon cayenne pepper
1 tablespoon red pepper flakes
1 tablespoon salt
½ teaspoon hickory-flavored liquid smoke

Steps:

  • In a large bowl, mix beef, curing mixture, mustard seed, garlic powder, cayenne, red pepper flakes, salt, and liquid smoke. Cover with plastic, and refrigerate for three days, mixing well once a day.
  • On the fourth day, preheat oven to 200 degrees F (100 degrees C).
  • Shape the mixture into five logs, and place on a wire rack over a large drip pan. Bake for eight hours, then remove to cool on paper towels. Let cool, then wrap logs individually in plastic wrap. Chill completely before slicing. They also freeze well.

This is so easy with amazing results. A mildly spiced summer sausage made with mustard seed and black pepper. It's great for snacks with chunks of cheese on the side.

2 pounds ground beef
2 tablespoons mustard seed
1 tablespoon garlic powder
2 tablespoons liquid smoke flavoring
2 tablespoons sugar-based curing mixture (such as Morton® Tender Quick®)
1 teaspoon coarse ground black pepper

Steps:

  • In a large bowl, mix together the ground beef, mustard seed, garlic powder, liquid smoke, curing salt, and pepper using your hands. Form into two equal logs, and wrap each one in aluminum foil with the shiny side facing the meat. Refrigerate for 24 hours.
  • Preheat the oven to 325 degrees F (165 degrees C). Poke small holes through the aluminum foil in the bottom of the meat rolls using a toothpick. Place on a broiler rack and fill the broiler pan with 1/2 inch of water.
  • Bake for 90 minutes in the preheated oven. Cool slightly, then refrigerate for 12 hours before unwrapping and serving.

BOILED KIELBASA

1 10-12 oz package kielbasa

Steps:

  • Fill a large saucepan with 3"+ of water (or low sodium broth). Turn the pan on high to bring the water to a boil.
  • Turn the burner down to medium-low once the water is boiling and add the whole kielbasa link.
  • Simmer the kielbasa sausage for XYZ minutes until the Polish sausage is heated through. Remove the sausage from the water and let it rest 5+ minutes to slightly cool.
  • Slice the sausage into 1-2" sections and serve with other side dishes like cooked cabbage, sauerkraut, sauteed bell peppers and onions, roasted potato wedges, piorgies, or pasta.

I have made this off and on for several years. We moved to this small country town in mid Iowa and are members of the local American Legion. They wanted to serve meat,cheese and crackers at their bar a couple nights a week. Well I made 8 rolls of this and it went over great. I now have a new job. Try it it is great.

1/2 teaspoon(s) garlic salt
1/2 teaspoon(s) onion salt
1 cup(s) water
1 teaspoon(s) whole mustard seed
1 teaspoon(s) ground allspice
7-8 dash(es) liquid smoke flavoring

Steps:

  • Mix all ingredients. Shape into firm rolls. Wrap about 6 times in plactic wrap. Tie ends with twist ties, not rubber bands. Set in refrigerator overnight. Place in boiling warer: do not let water boil down. Addmore water if needed. Boil 1 1/2 hours without covering. Cool unwrap, slice and serve with your favorite chesse and crackers. Will keep in frig. for about 2 weeks if it last that long.

2 pounds smoked sausage, halved and cut into 3/4-inch slices
1 large onion, cut into eighths
1 medium head cabbage, chopped
1/2 cup water
1 pound carrots, cut into 1/2-inch slices
5 medium potatoes, peeled and cut into 3/4-inch cubes

Steps:

  • In a Dutch oven or soup kettle, cook sausage and onion over medium heat until sausage is lightly browned and onion is tender; drain. Add the cabbage and water. Cover and cook on low for 10 minutes. Stir in the carrots and potatoes. Cover and cook for 25-30 minutes or until the vegetables are tender.
