Boiled red potatoes take very little time to boil, yet this side dish looks stunning and will please everyone at the table.

1 1/2 pounds small baby potatoes (preferably an assortment of red, blue, and yellow)
2 tablespoons butter, plus more as needed
Kosher salt
1/4 teaspoon ground black pepper, plus more to taste
1/2 teaspoon garlic powder, plus more to taste
1 tablespoon minced fresh parsley, or 1/2 teaspoon dried parsley flakes
Optional: 1/4 cup grated Parmesan cheese

Steps:

  • If your potatoes are not bite-sized, then cut them in half.
  • In a large pot, add enough water to cover your baby potatoes by at least 1 inch of water. Bring to a boil over high heat (put on the lid to help it boil faster). Then, salt the water liberally once it's boiling.
  • Boil the baby (or small) potatoes until they are fork tender, about 10 minutes depending on the size of your potatoes.
  • Drain the potatoes in a colander over the sink and then return them to the pot.
  • Gently toss the potatoes with the butter, 1 teaspoon Kosher salt, the pepper, the garlic powder, and the parsley. Taste and add more salt, pepper, or garlic powder, as desired. Stir in Parmesan, if desired.
  • Serve warm or at room temperature.

This is a wonderful, elegant potato side dish that's not too rich so it's ideal to serve with rich mains like roasts, and light enough to serve with more delicate foods such as seafood (fish, prawns/shrimp, lobster, crab, mixed seafood platter!).It's a classic side dish you will see offered at fine dining restaurants as a less heavy potato side compared to things like Paris Mash (the world's richest mashed potatoes!).

1kg/ 2 lb baby potatoes / new potatoes (, about 3cm/1.2" round ideal (look for same size ones))
1 tbsp salt (, for cooking (Note 1))
30g/ 2 tbsp unsalted butter ((no need to melt))
1/2 tsp each salt and pepper
2 tbsp fresh dill (, finely chopped)
1 tbsp chives (, finely chopped)
1 tbsp parsley (, finely chopped)

Steps:

  • Boil potatoes: Place potatoes in a large pot of cold tap water with 1 tbsp salt. Bring to a boil over high heat, then lower heat to medium so they're simmering gently (this stops skin splitting). Cook for 10 - 15 minutes until there's no resistance when pierced with a knife. Alternatively, steam the potatoes.
  • Steam dry: Drain in colander then leave for a minute to let the potatoes steam dry (if wet, butter won't stick).
  • Toss with butter: Transfer to a bowl, add salt, pepper and butter. Toss to melt and coat.
  • Add herbs just before serving. Stir through, transfer to serving bowl and serve warm!

2 to 4 tablespoons unsalted butter

Steps:

  • Put the potatoes, garlic, bay leaf, and peppercorns in a large saucepan, add cold water to cover by about an inch and season generously with salt,. Bring to a boil, lower the heat, and simmer until potatoes are fork tender, about 5 to 8 minutes depending on their size.

While I was shopping the other day, I came across a small bag of potatoes in the produce section, called Baby Confetti Potatoes. Inside was a mix of white, red and blue/purple baby potatoes. Fascinated, I had to bring them home, even though I had no idea at the time what to do with them. This is what I came up with, simple and tasty. Cooking time may vary depending on your definition of "medium" heat. An equal amount/weight of baby potatoes, could easily be substituted should you not be able to find the pre-packaged ones.

1 (28 ounce) package confetti baby potatoes (mixed colors)
4 tablespoons olive oil
3 minced garlic cloves
1 tablespoon italian seasoning

Steps:

  • Wash potatoes.
  • Do not remove skins.
  • Cut each potato in half and put in large pot.
  • Fill pot with water and bring to boil over medium heat.
  • Boil potatoes until tender.
  • Drain water and put potatoes in bowl.
  • Mix in olive oil, Italian seasoning and minced garlic.

1/2 cup butter, cubed
1 package (16 ounces) frozen shredded hash brown potatoes
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1-1/3 cups milk
1 cup shredded cheddar cheese
1 small green pepper, cut into strips
2 tablespoons diced pimientos
Dash pepper
1 cup cheese cracker crumbs, divided

Steps:

  • In a large skillet, saute the onion in butter until tender. Stir in the potatoes, soup and milk. 1 package frozen organic O'Brien potatoes
1/2 package organic mixed baby peas and carrots
1/4 package organic corn
0.25 (16 ounce) package green beans, 16 oz. (you may need to chop these smaller for younger kids before you cook)
1/8 teaspoon turmeric or 1/8 teaspoon favorite curry powder
olive oil, to coat

  • 1. Combine oil and spice in large (I mean LARGE) mixing bowl.
  • 2. Add all ingredients into the bowl, stirring to coat all veggies with oil and spices.
  • 3. You now have a choice in cooking methods:.
  • a. You can dump all into a large skillet and fry on stove top until crispy and cooked through, or.
  • b. You can pour the mixture into a baking pan (or I like to use my big cast iron skillet) and bake at 350 degrees for about 30-45 minutes, stirring once after 10 minutes, then leaving alone so a crunchy top will form.
  • Tip: shivasgirl's kids think this is Indian food, so she usually serves with pooris (a deep fried bread), but they have devoured this dish all by itself.
  • Tip: You can add any veggies you want, but stick with the carrots, peas and potatoes as a base -- these even taste great if that is all you use!
