Bob's Little Known, Less Cared About Chili image

Savory, smoky, easy-to-make chili. Sometimes I add a can of corn, too. Maybe have some sweet corn bread muffins with honey on the side. You could use black beans, pinto beans, pink beans, or small red beans in place of the kidney beans.

½ pound thick-cut bacon, chopped
1 large yellow onion, chopped
1 ½ pounds ground beef
3 cloves garlic, chopped
1 tablespoon ground cumin
3 (15.5 ounce) cans kidney beans, rinsed and drained
1 (14.5 ounce) can fire-roasted diced tomatoes
2 cups water
¼ cup chili powder
1 teaspoon liquid smoke flavoring
salt and ground black pepper to taste
1 dash hot pepper sauce (such as Tabasco®), or to taste

Steps:

  • Cook bacon and onion together in a large pot over medium heat until the onion is translucent, about 5 minutes. Add ground beef, garlic and cumin to the pot; cook and stir until the beef is completely browned, 7 to 10 minutes.
  • Stir kidney beans, diced tomatoes, water, chili powder, liquid smoke, salt, black pepper, and hot pepper sauce into the beef mixture; bring to a simmer and cook until thick, about 1 hour. Skim excess grease if desired.

Chunky and full of texture, this chili isn't for the faint of heart. It has some kick behind it. I love the mixture of pork and ground beef - it adds something a little different. The robust flavor from the chili powder and cumin really makes this yummy. Cheese and sour cream mellow this a little and are the perfect topping.

1 lb lean ground beef
1 lb good sausage or lean ground pork
2 15 oz. cans hot chili beans, undrained
1 28 oz. can diced tomatoes, undrained
2 large onions chopped
1 bell pepper chopped
3 clove garlic minced (may use in jar)
3 Tbsp chili powder
2 Tbsp sugar
1 Tbsp red pepper, crushed
3 Tbsp wine vinegar
1 Tbsp cumin
grated cheddar cheese
sour cream

Steps:

  • 1. Brown beef and pork in a large pot.
  • 2. Drain and stir in undrained beans, tomatoes, onions, pepper, garlic, chili powder, sugar, red pepper, vinegar and cumin.
  • 3. Add some water if you like more juice in your chili. (The only liquid is in beans and tomatoes).
  • 4. Cover and simmer for about 1 hour. Stir frequently to keep from sticking and burning. When ready to serve top with cheese and sour cream.
  • 5. The red pepper flakes and chili powder makes it spicy. Use less if you want. We like it just the way it is. This gets better the longer is lasts. HAPPY FALL

1 cup chopped onion
1 canned green hatch chile, chopped
1 tablespoon minced garlic
1/2 cup tomato sauce (recommended: El Pato brand)
1 tablespoon tomato paste
Two 14-ounce cans chicken broth, divided
8 tablespoons California chili powder, divided (recommended: Sespe Creek Chili Potters)
2 teaspoons salt
1 1/2 teaspoons adobo seasoning blend, divided (recommended: Accent)
1 teaspoon hot pepper sauce
2 1/2 pounds beef tri tip, cubed
4 ounces pork sausage
2 tablespoons mild New Mexico chili powder (recommended: Sespe Creek Chili Potters)
3 tablespoons cumin, divided
1 tablespoon hot New Mexico chili powder (recommended: Sespe Creek Chili Potters)
2 teaspoons lime juice

Steps:

  • In a chili pot, combine onion, green chile, garlic, tomato sauce, tomato paste, chicken broth, 6 tablespoons California chili powder, salt, 1 teaspoon adobo seasoning blend, and hot pepper sauce. Bring to a simmer over medium heat and cook for 1 hour. After chili has simmered for 1 hour, add the remaining 2 tablespoons California chili powder.
  • In a large skillet, brown beef and sausage together over medium-high heat. Add beef and sausage to chili and simmer for 30 minutes, adding more chicken broth as needed. Add the mild New Mexico chili powder and 2 tablespoons cumin and simmer another 45 minutes. Add the remaining 1/2 teaspoon adobo seasoning blend, 1 tablespoon cumin, 1 tablespoon hot New Mexico chili powder, and the lime juice. Cook for another 30 minutes, adding more chicken broth as needed. Season with additional salt, to taste.

I found this recipe on another site and fixed it and absolutely loved it. This rich, spicy chili has a kick to it though. I don't add quite as much brown sugar as it calls for.

2 tablespoons vegetable oil
2 onions, chopped
3 garlic cloves, minced
1 lb ground beef
3/4 lb beef sirloin, cubed
1 (14 1/2 ounce) diced tomatoes with juice
1 (12 fluid ounce) dark beer
1 cup strong brewed coffee
2 (6 ounce) cans tomato paste
1 (14 ounce) can beef broth
1/2 cup brown sugar, packed
3 1/2 tablespoons chili powder
1 tablespoon cumin seed
1 tablespoon unsweetened cocoa powder
1 teaspoon dried oregano
1 teaspoon ground cayenne pepper
1 teaspoon ground coriander
1 teaspoon salt
4 (15 ounce) cans kidney beans, drained
4 fresh hot chili peppers, seeded and chopped

Steps:

  • Heat oil in a large saucepan over medium heat. Cook onions, garlic, ground beef and cubed sirloin in oil for 10 minutes, or until the meat is well browned and the onions are tender.
  • Mix in the diced tomatoes with juice, dark beer, coffee, tomato paste and beef broth. Season with brown sugar, chili powder, cumin, cocoa powder, oregano, cayenne pepper, coriander and salt.
  • Stir in 2 cans of the beans and hot chile peppers. Reduce heat to low, and simmer for 1 1/2 hours.
  • Stir in the 2 remaining cans of beans, and simmer for another 30 minutes.

1 can tomato soup
1 large can tomato puree
2 cans diced tomatoes with green chilis
2 cans whole peeled tomatoes (roughly chopped)
2 cans stewed tomatoes
2 cans dark red kidney beans
2 cans black beans
1 Tbs. Lowry's seasoned salt
large onion
pepper to taste
Texas Pete Hot Sauce
cumin to taste
Carol Shelby's Chili Seasoning (comes in small brown bag in seasonings section)

Steps:

  • In a pan, brown beef with 1 Tbs. Lowrey's seasoned salt and chopped onion; drain fat. Place in crock pot. Add tomato soup, tomatoes (all of them), 1 Tbs. black pepper, Carol Shelby's Chili Seasoning (don't add the flour or salt packet), and 2 Tbs. cumin, mix all ingredients. Set the crock pot on low and simmer for 4-6 hours. An hour before serving, mix in the kidney and black beans. Add Texas Pete to taste. ENJOY!

2 lbs ground chuck (cubed if preferred)
1 lb. hot pork sausage (again, cubed if you like it that way.)
3 10 oz cans tomatoes w/jalepenos
1 40 oz can of redskin beans
5 tbs Mexican chili power
1 tbs ground cumin
1 tsp ground oregano
2 tps salt
1 green bell pepper chopped
1 red bell pepper chopped
3 red onions chopped
1 tps sugar
3 cloves of garlic chopped
12 oz Porter or dark beer
shredded cheese for garnish

Steps:

  • brown chuck and pork; put meat in slow cooker; add vegs and stir; add spices and beans and stir; add tomatoes and garlic and beer stir some more. Cook on high for three hours, cook on low for four hours. Refrigerate overnight and warm up on low heat until ready. Serve in bowls with cheese as garnish.
