BBQ MEATLOAF

Number Of Ingredients 14

4 ounces thick-cut bacon (about 3 slices), cut into 1/2-inch-thick pieces
1 medium yellow onion, finely chopped (about 1 1/2 cups)
3 cloves garlic, minced
1 pound prepared BBQ ribs, bones removed, meat finely chopped (about 2 cups)
1 cup prepared pulled pork in BBQ sauce
1 pound 80/20 ground beef
2 large eggs
1/2 cup plain breadcrumbs
2 teaspoons mustard powder
1 1/2 teaspoons smoked paprika
1 teaspoon dried basil
1 teaspoon dried thyme
Kosher salt and freshly ground black pepper
1/2 cup prepared BBQ sauce, plus more for serving

Steps:

  • Position a rack in the center of the oven and preheat to 325 degrees F. Line a large baking sheet with parchment paper.
  • Put the bacon in a large saute pan and cook over medium heat until most of the fat has rendered and the bacon is crispy, about 10 minutes, stirring occasionally. Use a slotted spoon to remove the bacon to a large bowl. Increase the heat slightly (between medium and medium-high) and add the onions to the bacon fat in the pan and cook until tender, about 5 minutes, stirring occasionally. Add the garlic and cook until tender, about 1 minute, stirring constantly. Transfer to the bowl with the bacon. Stir in the chopped ribs and pulled pork. Cool completely.
  • Add the beef, eggs, breadcrumbs, mustard powder, smoked paprika, basil, thyme, 1 to 1 1/2 teaspoons salt (depending on how salty the ribs and pulled pork are) and several heavy grinds of pepper. Use your hands to mix until well combined. Form into a 9-by-3 1/2-inch loaf that is about 2 inches tall on the prepared baking sheet. Spread 1/4 cup of the BBQ sauce evenly over the top of the meatloaf.
  • Bake for 30 minutes, and then spread the remaining 1/4 cup BBQ sauce on top of the partially cooked meatloaf. Continue to bake until a thermometer inserted into the center of the meatloaf registers 160 degrees F, about 45 more minutes.
  • Serve with additional warm BBQ sauce alongside.

BOB'S HAWAIIAN/KOREAN BBQ STYLE MEATLOAF

This is a play on an entree I used to eat in Hawaii called Meat Juhn, a typical Korean BBQ dish. It's a typical Meatloaf recipe with a bit of a twist.

2 lbs lean ground beef
2 teaspoons salt
1/4 teaspoon ground black pepper
2 eggs, lightly beaten
1/2 cup soft breadcrumbs
1/2 cup milk
1 teaspoon Worcestershire sauce
1/4 cup finely chopped onion
1/4 teaspoon dried leaf thyme, crumbled
1/4 teaspoon dried rosemary leaves, crumbled
1/2 cup all-purpose flour
2 eggs
3 tablespoons soy sauce
1 teaspoon sesame seeds
1 tablespoon sliced ginger
3 tablespoons oil

Steps:

  • Mix first 10 ingredients together (Meat with spices). Bake in loaf pan at 350 degrees for 90 minutes.
  • Remove loaf from pan and allow to cool. After it's cool, slice into narrow portions.
  • Place flour into bowl.
  • Mix in a seperate bowl the eggs, soy sauce, sesame seeds, and ginger.
  • Heat oil in pan to medium high - high heat.
  • Dip slices of meatloaf first into flour, then into egg mixture, and then onto pan with oil. Allow egg to cook, flip, and then set aside.
  • This is a great meal alone, or as a sandwich with Mayo. I hope you enjoy. :-).

GLAZED HAWAIIAN MEATLOAF

1 1/2 lbs lean ground beef
1/2 lb ground chicken
1 1/2 cups fresh breadcrumbs, toasted
1 (8 1/4 ounce) can crushed pineapple, well drained
1/2 cup chopped onion
1/2 cup chopped celery
2 eggs
1/4 cup milk
1/4 cup reduced sodium soy sauce
1 tablespoon minced fresh ginger
salt & fresh ground pepper
1 tablespoon cornstarch
2 tablespoons water
1/2 cup reduced sodium soy sauce
1/2 orange, juice of
1/4 cup mirin (Japanese sweet rice wine)
1/4 cup water
2 tablespoons brown sugar
3/4 teaspoon minced fresh garlic
3/4 teaspoon minced fresh ginger

Steps:

  • Meatloaf: Preheat oven to 350°F.
  • Combine all meat loaf ingredients.
  • Place mixture in a loaf pan and bake 55 minutes.
  • Pour off any grease, top with 1/4 cup glaze and bake 5 minutes.
  • Let sit 5-10 minutes before slicing and serve with remaining glaze.
  • Glaze: Combine cornstarch and water.
  • Add remaining ingredients to a small sauce pan and bring to a boil.
  • Add the cornstarch mixture and stir until thickened.

BOB'S BBQ SAUCE

This is a great basic BBQ sauce our family got from a fireman friend. It has a nice zing from some horseradish. We've used it on everything from chicken to meatloaf! This is also great to increase the servings, bottle it up and refrigerate for multiple uses.
