Time 40m

Number Of Ingredients 4

250g of fresh okra split in the middle.
1/4 cup semolina
1/8 teaspoon turmeric(a pinch)
1/2 teaspoon of red chilies powder(use as needed but not more than 1/2 teaspoon)

Steps:

  • In a bowl, mix semolina(1/4 cup), turmeric(1/8 teaspoon or a pinch), red chilli powder(1/2 teaspoon), salt. Combine well. Wash the ladies fingers and pat them dry. Slit them in two and place them in a large tray. You can also do this on your cutting board but be aware that wooden cutting boards may stain because of the turmeric powder. Add the seasoning mixture to the okra, toss until well combined. As you do this you can also stuff the mixture into the cavity of the okra. Don't overthink the process of stuffing the okra with the seasoning mixture, just use your fingers to add any leftover mixture into it. Once the ladies fingers are prepared and ready to fry. Place a deep frying pan over the stove and pour in the oil. Gently bring the oil to low medium heat. Add a little seasoning to check if the semolina pieces sizzle and float, if so, the oil is ready to fry. Maintain this heat by regulating the stove temp. Fry the okra chips in small batches. This should take about 3-5 minutes. You need to fry the okra until they are crispy. Once done, place them on some kitchen towels to drain excess oil. Serve with some lime wedges.

GRANNY'S FRIED OKRA

Granny's Fried Okra image

I've been meaning to post this one for a while. My husbands grandmother who everyone calls Granny makes the BEST fried okra. Couple of years ago I told her I wanted to watch her make some fried okra so I could learn. She of course didn't measure any ingredients so I've had a hard time trying to figure out how to post this. So the...

a bunch of fresh okra (not frozen)
2 parts self rising cornmeal ( not the yellow stuff)
1 part all purpose flour
a pinch of cayenne pepper
salt and pepper to taste
vegetable oil
NOTE: I USUALLY START OFF USING 1 CUP OF CORNMEAL AND 1/2 CUP OF FLOUR. I ADD MORE WHEN NEEDED.

Steps:

  • 1. Rinse the okra off in a strainer.
  • 2. Chop up okra into bite size pieces removing the head and the tip of the tail. Just throw those 2 pieces away.
  • 3. If you like a thicker breading like in the picture then place the okra in a bowl with water in it. This helps to bring out the slime and the breading sticks to it better. (yes I said slime, you will see what I'm talking about in a minute) After you soak the okra for about 2 minutes or so, drain them and set aside.
  • 4. Dredge the okra in the flour mixture and throw those bad boys in the fryer.
  • 5. *If you don't like your breading too thick then do not put your okra back into the water after it is cut. Just dredge into the flour mixture and throw them into the fryer without crowding too much.
  • 6. Fry the okra in oil at 375 degrees for 5-7 minutes or until golden brown. If you don't have a fryer then place them in oil in a deep frying pan and cook over med- medium high heat till golden brown, turning when necessary.
  • 7. Drain on a paper towel and sprinkle with salt.
  • 8. *TIP: you don't want your whole okras much more than 3 inches long. The bigger okras tend to be too hard and do not fry up very well. You can also squeeze them and see how hard they are.

OKRA FRIES

Okra Fries image

Growing up, I hated okra. As I kid, I thought it was slimy and terrible. My first taste of okra fries didn't do much to dispel my childhood aversion. But I kept thinking, "How can I make okra fries good? You never get crispy okra fries." The key here was using cornstarch and rice flour. Cutting the okra in half from top to bottom, the seeds cling to the rice flour and cornstarch so the batter isn't going anywhere. Mariah Carey sampled these okra fries and said they were the best she'd ever had. The secret to this dish is letting the halved okra pods soak in eggs. Whatever you do, don't skip that part.

Yield 6 to 8 servings

Number Of Ingredients 7

Vegetable oil, for deep-frying
1 pound okra, pods halved lengthwise
1 medium egg, beaten
3/4 cup rice flour
3/4 cup cornstarch
1 teaspoon smoked paprika
Kosher salt

Steps:

  • Pour a few inches of vegetable oil into a heavy-bottomed pot, preferably cast iron. Heat the oil to 350 degrees F.
  • Meanwhile, put the okra in a large bowl and toss with the beaten egg. Let the okra stand for 5 minutes to absorb the egg.
  • In a separate medium bowl, whisk the rice flour, cornstarch, paprika, and 1/4 teaspoon salt. Remove the okra from the large bowl, allowing excess egg to drip back into the bowl, then transfer the okra to the flour mixture. Toss the okra to dredge evenly. Lift from the flour and shake off the excess.
  • Cook the okra in batches in the hot oil until golden and crunchy, 3 to 5 minutes, depending on size.
  • Remove with a slotted spoon and place on a paper towel-lined plate. Season with salt immediately. Repeat with the remaining okra.
